When my daughter started a gluten-free diet, I experimented in the kitchen to create some new foods. My mild pork rolls were a hit with all of our friends and family who sampled them.

1-1/2 pounds ground pork
1 medium carrot, shredded
3 green onions, finely chopped
3 garlic cloves, minced
1 tablespoon grated fresh gingerroot
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon sesame oil
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons water
2 tablespoons reduced-sodium soy sauce
1 teaspoon sugar
1/2 package (8.8 ounces) vermicelli-style thin rice noodles
18 rice papers (8 inches)
Torn romaine
Sweet chili sauce

Steps:

  • In a large skillet, cook pork over medium heat until no longer pink; drain. Stir in the carrot, onions, garlic, ginger, coriander, cumin, oil, pepper flakes, salt and pepper until blended., Add the water, soy sauce and sugar. Bring to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until liquid is evaporated. Transfer to a bowl; cool. Cover and refrigerate for 1 hour or until chilled., Cook noodles according to package directions. Drain and rinse in cold water; drain well. Fill a shallow bowl with water. Soak a rice paper in the water just until pliable, about 30-45 seconds (depending on thickness of rice papers); remove, allowing excess water to drip off., Place on a flat surface. Layer meat mixture and noodles down the center; top with romaine. Fold both ends over filling; fold one long side over the filling, then roll up tightly. Place seam side down on a serving platter. Repeat with remaining ingredients., Cover with damp paper towels until serving. Cut rolls diagonally in half and serve with sweet chili sauce.

1 cup finely shredded cabbage
¼ cup finely shredded carrot
2 green onions, thinly sliced

½ teaspoon sesame oil
½ tablespoon oyster sauce
2 teaspoons grated fresh ginger root
1 ½ teaspoons minced garlic
1 teaspoon chile sauce
1 tablespoon cornstarch
1 tablespoon water
12 (7 inch square) spring roll wrappers
4 teaspoons vegetable oil

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place pork in a medium saucepan. Cook over medium high heat until evenly brown. Remove from heat and drain.
  • In a medium bowl, mix together pork, cabbage, carrot, green onions, cilantro, sesame oil, oyster sauce, ginger, garlic and chile sauce.
  • Mix cornstarch and water in a small bowl.
  • Place approximately 1 tablespoon of the pork mixture in the center of spring roll wrappers. Roll wrappers around the mixture, folding edges inward to close. Moisten fingers in the cornstarch and water mixture, and brush wrapper seams to seal.
  • Arrange spring rolls in a single layer on a medium baking sheet. Brush with vegetable oil. Bake in the preheated oven 20 minutes, until hot and lightly browned. For crispier spring rolls, turn after 10 minutes,

2 lb(s) ground pork
4 cloves garlic, minced
2 tsp grated fresh ginger
2 tsp salt
2 tsp granulated sugar
½ head cabbage, thinly sliced
4 carrots, thinly sliced
8 green onions
½ cup soy sauce
2 eggs
24 spring roll wrappers
Canola oil, for frying

Steps:

  • In a large skillet heat sesame oil over medium heat and cook pork, garlic, ginger, salt, and sugar for about 8 minutes or until no longer pink inside. Stir in cabbage, carrots, green onions, and soy sauce; cook for about 2 minutes or until softened. Remove from heat and place in large bowl; let cool slightly. Stir in eggs until combined.
  • Place about 1/3 cup of the filling in the centre of the spring roll wrapper. Brush edges of wrapper with water, fold in sides, and roll up to cover filling. Repeat with remaining filling and wrappers.
  • Heat canola oil in a heavy skillet and cook the spring rolls for about 4 minutes, turning once until golden brown on both sides. Remove to rack and repeat with remaining egg rolls.

Great finger food for a gathering. Serve with sweet chilli sauce, soy sauce. I have found that if you want to make them the day before, they will soften up, just pop them in a medium heat oven for about 20 minutes and they will be nice and crispy. To make this easy, chop all ingredients in a food processor.

Number Of Ingredients 10

500 g pork mince
1 1/2 cups Chinese cabbage, finely shredded
225 g water chestnuts, drained and finely chopped
1 onion, finely chopped
1/4 cup fresh coriander, chopped (cilantro)
1/2 teaspoon sambal oelek
2 garlic cloves, crushed
1 teaspoon fresh ginger, grated
20 (12 1/2 cm) spring roll wrappers (thawed)
deep frying oil

Steps:

  • Mix together, in a large bowl, pork mince, cabbage, onion, coriander, sambal oelek, garlic and ginger.
  • Using one spring roll sheet at a time, place approximately 2 tablespoons of mix just in from one corner.
  • Brush edges with water, fold over corner near mix, then 2 outside corners. Roll up fairly tightly to enclose filling.
  • Repeat with the rest of the spring roll sheets.
  • Heat oil in wok or deep fryer. (It will be hot enough when a cube of bread sizzles when added.).
  • Deep-fry spring rolls 4 or 5 at a time for 5-8 minutes or until lightly golden.
  • Remove with slotted spoon and drain on paper towel.
  • Serve immediately with your choice of dipping sauce.

2 cups thinly sliced romaine
1-1/2 cups cubed cooked pork
1 cup thinly sliced fresh spinach
3/4 cup julienned carrot
1/3 cup thinly sliced celery
1/3 cup dried cherries, coarsely chopped
1 tablespoon sesame oil
12 round rice paper wrappers (8 inches)
1/4 cup sliced almonds
1/4 cup wasabi-coated green peas
Sesame ginger salad dressing

Steps:

  • In a large bowl, combine the first 6 ingredients. Drizzle with oil; toss to coat., Fill a large shallow dish partway with water. Dip a rice paper wrapper into water just until pliable, about 45 seconds (do not soften completely); allow excess water to drip off., Place wrapper on a flat surface. Layer salad mixture, almonds and peas across bottom third of wrapper. Fold in both ends of wrapper; fold bottom side over filling, then roll up tightly. Place on a serving plate, seam side down. Repeat with remaining ingredients. Serve with dressing.

6 ounces ground lean pork or 6 ounces leftover pork
1/4 cup carrot, grated
2 tablespoons thinly sliced green onions
2 tablespoons hoisin sauce
2 teaspoons cornstarch
1 teaspoon sesame oil
1 garlic clove, crushed
1/2 teaspoon peeled gingerroot, finely grated or 1/8 teaspoon ground ginger
2 tablespoons water
2 tablespoons flour
18 (6 inch) spring roll wrappers
cooking oil, for deep-frying

Steps:

  • For Filling: Combine first 8 ingredients in medium bowl. Makes about 1 1/4 cups offilling.
  • Stir water into flour in small cup until smooth.
  • Work with spring roll wrappers 1 at a time. Keep remaining wrappers covered with damp tea towel to prevent drying. Place 1 wrapper diagonally on work surface. Spoon about 1 tablespoons filling onto wrapper near bottom corner. Dampen edges of wrapper with flour mixture. Fold bottom corner over filling. Fold side corners over filling. Roll up tightly toward top corner to seal. Cover with damp towel. Repeat with remaining wrappers.
  • Deep-fry spring rolls in 2 or 3 batches in hot cooking oil for about 2 minutes per batch until wrapper is golden. Remove with slotted spoon to paper towels to drain. Makes 18 spring rolls.
  • Serve with your favourite dipping sauce.
  • For OAMC: flash freeze on a cookie sheet for 2 hours and then transfer to ziploc bag, label and return to freezer. To serve: place on baking sheet and bake at 350 degrees for 10-15 minutes or until heated through.

These fork-tender cabbage rolls, filled with savory pork, rice and ginger, are the ultimate comfort food - perfect to serve as a cozy meal on a cold night. When assembling the rolls, you can simply fold the cabbage leaf onto itself as you would fold a burrito - and don't worry if the cabbage leaves tear. If there are any leftovers, reheat them with more chicken broth. They are good the day they are made, but even better the next day.

Kosher salt and black pepper
1 medium head savoy cabbage
1 1/2 pounds ground pork
1/3 cup uncooked short-grain white rice
1 large egg, lightly beaten
6 scallions, finely chopped (about 1 cup)
2 tablespoons finely chopped fresh ginger (from a 2-inch piece)
2 tablespoons soy sauce
2 cups chicken broth
Sesame oil, for serving

Steps:

  • Heat oven to 350 degrees. Bring a large pot of water to a boil and season with salt.
  • Prepare the cabbage: Remove about 12 large outer leaves, reserving the rest of the cabbage for another use. Once the water boils, lower the heat to medium so that the water reaches a gentle boil. Add the cabbage leaves, about 4 at a time, and cook until tender and flexible but leaves remain intact and maintain their crunch, about 2 minutes. Transfer to a towel-lined plate and set aside to cool slightly while you make the filling. Repeat with remaining cabbage leaves.
  • Prepare the filling: In a large bowl, combine pork, rice, egg, scallions, ginger and soy sauce with 2 teaspoons salt and 1 teaspoon pepper.
  • Assemble the cabbage rolls: Working with one cooked cabbage leaf at a time, place it on a cutting board or other flat surface with its stem end at the bottom. Spoon a heaping 1/4 cup of the pork mixture in the center and mold the mixture into a rough 2- to 3-inch log. Pull the stem end over the meat mixture, and fold the right and left sides of the leaf over and roll tightly to the very top. Place the cabbage rolls seam-side down in a large Dutch oven or ovenproof, straight-sided saucepan. Repeat with the remaining cabbage and pork filling.
  • Pour the chicken broth over the cabbage rolls and bring to a boil over medium. Cover the pan, transfer to the oven, and bake until cabbage rolls are fork tender and the meat mixture is cooked through, 40 to 45 minutes. Serve with ladles of broth over the rolls and a drizzle of sesame oil.
