Elote (Mexican Street Corn) image

Learn how to make elote with this simple recipe! We'll top grilled corn on the cob with a tangy blend of mayonnaise, lime, chili powder, and finish it with a heavy sprinkle of Cotjia cheese and cilantro. Serve elote as a snack or appetizer, or as a side dish to any Mexican meal. Recipe yields 4 elotes; multiply as needed.

Provided by Cookie and Kate

Categories     Side dish

Time 30m

Yield 4

Number Of Ingredients 8

4 ears of grilled corn on the cob
1/4 cup mayonnaise
1 1/2 teaspoons lime juice
½ teaspoon chili powder, plus more for sprinkling
Pinch of cayenne pepper (optional, for extra heat)
¼ teaspoon kosher salt or a pinch of fine salt
2 ounces (about 1/2 cup) finely grated Cotija cheese*
2 tablespoons finely chopped cilantro

Steps:

  • While you're grilling your corn, prepare the chili-mayo sauce and Cotija-cilantro blend. In a small bowl, combine the mayonnaise, lime juice, chili powder, optional cayenne, and salt. Stir until combined. In a separate bowl, mix together the cheese and cilantro. Set both bowls aside.
  • When your corn is ready to go, brush the mayonnaise mixture all over one ear of corn. Over a plate, sprinkle the Cotjia mixture liberally all over, turning the corn as necessary (it's going to be a little messy, no way around it!). Place the finished cob on a separate serving plate. Repeat for the remaining corn, using the cheese in the bowl and the excess on the plate as needed.
  • Sprinkle a pinch or two of additional chili powder lightly over the corn. Serve warm.

ELOTE SALAD

Elote Salad image

This delicious elote salad turns Mexican street corn into a salad! It's creamy, smoky, salty, and absolutely irresistible.

Provided by Sonja Overhiser

Categories     Salad

Time 30m

Number Of Ingredients 8

6 ears corn or 5 cups corn kernels*
1 green onion
3 tablespoons cilantro, finely chopped
3 tablespoons mayonnaise
2 tablespoons lime juice
1/2 cup crumbled Cotija cheese, queso fresco, or feta cheese
1/2 teaspoon chili powder
1/4 teaspoon each garlic powder, cumin, and kosher salt (or more salt to taste)

Steps:

  • For grilled corn, heat a grill to medium high heat (375 to 450 degrees Fahrenheit). Shuck the corn. Use your hands to rub oil on each corn cob evenly. Place the corn directly on the grill grates and cook until it begins to blacken, then turn. Cook about 12 to 15 minutes total, until blackened on all sides.
  • Sautéed: Use 5 cups fresh or frozen corn kernels and sauté for a minute or two in butter in a medium skillet.
  • Find a bundt pan, or large rimmed baking sheet or pan. Place the corn into the hole in the bundt pan or hold the corn vertically inside the baking sheet, then use a chef's knife to slice down and remove the corn from the cob. The sides of the pan catch the kernels that fly when cutting. See How to Cut Corn off The Cob for more.
  • Thinly slice the green onion. Finely chop the cilantro.
  • In a medium bowl, mix together the mayonnaise, lime juice, chili powder, garlic powder, cumin, and kosher salt.
  • Mix together the grilled corn, vegetables, and dressing. If desired, top with a sprinkle more cheese crumbles.

MEXICAN STREET CORN RECIPE

Mexican Street Corn Recipe image

This Mexican Street Corn recipe is a common Mexican street food that is made by grilling corn on the cob and then coating it with a mixture made up of mayonnaise, sour cream, cotija cheese, chile powder, and lime. Also called elotes, this easy to make Mexican Corn On The Cob Recipe is a perfect appetizer or side dish for any outdoor gathering. In my version here, I made it two ways - (1) on the cob and (2) off the cob or in a skillet. They are both delicious and ready in less than half an hour.

Provided by Aysegul Sanford

Categories     Side Dish

Time 30m

Number Of Ingredients 8

6 medium-size ears of yellow corn on the cob
1 tablespoon vegetable oil or melted butter
¼ cup mayonnaise
¼ cup sour cream
½ teaspoon chile powder
1 tablespoon lime juice (plus wedges of a lime for serving)
½ cup crumbled cotija cheese
3 tablespoons fresh cilantro (chopped)

Steps:

  • To prep the corn: Fold the husk of each corn back leaf by leaf and tie them with kitchen twine. Lightly brush corn on the cub with oil.
  • Heat a grill pan or an outdoor grill. Grill corn, turning occasionally until it is browned in spots. Keep an eye on it as this happens rather quickly.
  • To make the sauce: Mix together mayonnaise, sour cream, chile powder, and lime juice in a bowl.
  • Brush each grilled corn the mayo mixture and sprinkle with cotija cheese. Garnish with cilantro and serve.
  • To prep the corn: Cut the corn off the cob. I used 6 ears to get about 4 1/2 cups. Alternatively, you can also use canned corn or frozen corn. If using frozen, you do not need to thaw it out.
  • Sauté corn: Heat oil in a skillet over medium-high heat. Stir in the corn, and stirring frequently, sauté for 5-7 minutes until it starts to char. If you are using frozen corn, you might need to cook a few minutes longer. Transfer to a bowl and set aside.
  • Make the sauce: Mix together mayonnaise, sour cream, chile powder, and lime juice in a bowl.
  • Assemble: Add in the mayo mixture into the sauteed corn. Give it a mix. Stir in the cotija cheese and sprinkle with cilantro. Serve in small bowls with wedges of lime on the side.

ELOTES CORN PUDDING

Elotes Corn Pudding image

Provided by Food Network

Categories     side-dish

Time 1h30m

Yield 8 to 12 servings

Number Of Ingredients 16

4 tablespoons unsalted butter, melted, plus an additional 1 tablespoon for greasing pan
One 2-pound bag frozen corn, thawed
4 large eggs
1 cup mayonnaise
Zest and juice of 3 limes
1 teaspoon chipotle pepper flakes or cayenne pepper
1/3 cup granulated sugar
1/3 cup dark brown sugar
1 1/2 cups Cojita (or Parmesan if not available)
1 cup all-purpose flour
1 tablespoon baking powder
1 1/2 teaspoons kosher salt
3/4 teaspoon ground pepper
2/3 cup chopped fresh cilantro
1 bag microwave buttered popcorn
1 tablespoon Tajin spice

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch casserole dish with softened butter or cooking spray and set aside.
  • Put corn, eggs, mayonnaise, butter, lime zest and juice, chipotle flakes, granulated sugar, brown sugar and 1 cup Cojita in the bowl of a food processor. Pulse in short bursts to break up the corn, about 1 minute, then process for 3 full minutes, stopping occasionally to scrape down the sides of the bowl with a silicone spatula. Add the flour, baking powder, salt, pepper and half the cilantro and again pulse in short bursts until just combined. Pour into the casserole dish, using the spatula to smooth, and bake uncovered until the pudding is barely set and a bit jiggly in the center, 40 to 45 minutes.
  • Just before the 40 minute mark, microwave the popcorn according to package directions, then empty the bag into a large bowl. Add the Tajin spice, remaining cilantro and 1/4 cup Cojita. Stir with a heavy wooden spoon or potato masher, roughly crushing the popcorn.
  • Top the pudding with the crushed popcorn, gently pressing it into the top with your hands (you may not use it all, depending on how thick of a popcorn crust you want). Sprinkle with the remaining 1/4 cup Cojita and return to the oven, 10 minutes more. Allow to rest for 10 to 15 minutes before serving.

ELOTES ASADOS

Elotes Asados image

Grilled street-style corn is a staple all over Mexico. You will often see the corn being grilled in its husks over fire--but you can achieve great results on a stovetop. This recipe offers options for each. In both versions, you cook the corn in its husks to develop that smoky and sweet flavor that goes so well with creamy mayo, sour cream and salty Cotija cheese, making it one of the most delicious street foods you can find.

Provided by Food Network Kitchen

Categories     side-dish

Time 40m

Yield 4 serving

Number Of Ingredients 6

4 ears corn, husks and silks intact
1/4 cup Mexican crema or crème fraîche
1/4 cup mayonnaise
1 tablespoon lime juice, plus lime wedges, for serving
2 ounces Cotija or Parmesan, grated
Kosher salt

Steps:

  • Prepare a grill for medium-high heat.
  • Put the corn in their husks on the grill grate over direct heat. Cover the grill and cook, uncovering the grill and rotating the corn every 5 minutes or so, until the husks are evenly charred, about 15 minutes total.
  • Alternatively, you can grill the corn on the stovetop. Heat a large cast-iron pan or grill over medium-high heat until very hot and smoking, about 5 minutes. Working in batches depending on the size of your pan or grill, put the corn in their husks on the hot pan. Cover the pan with a lid; you can also use a large skillet to cover it. Cook, uncovering the pan and rotating the corn every 5 minutes or so, until the husks are evenly charred, about 20 minutes total.
  • Meanwhile, combine the crema, mayonnaise and lime juice in a medium bowl until smooth. Thin with 1 tablespoon of water if needed. Cover and chill the crema mixture until ready to serve.
  • Pull back the corn husks and silks, leaving the husks attached to the base of the cobs. Using a pastry brush or a butter knife, spread the crema mixture on the corn. Transfer the corn to a platter, sprinkle generously with the Cotija on all sides and season with salt. Serve with reserved lime wedges for squeezing over the corn.
