BLUE CHEESE AND DRIED FRUIT TERRINE

Steps:
- Mash the blue cheese and mascarpone together with the honey, if using, and pepper. (You can do this in the food processor, too, but it will cream the blue cheese so much that you get a greenish terrine. Not the end of the world, but just warning you.) Stir in the apricots, currants, figs, pistachios and walnuts. Season with pepper. Wrap in plastic and shape into a terrine. Refrigerate for several hours until firm. Serve with an assortment of rustic country breads or crackers and decorate with some whole dried fruits and nuts, if you like.

- Boil the pasta according to pack instructions. In a saucepan, melt the butter, then gently fry the onion until golden. Add the garlic and sage, fry for a further 2 mins, then remove the pan from the heat. Drain the pasta and reserve some cooking water. Stir through the buttery onions, stilton and 2 tbsp cooking water, then sprinkle with the toasted walnuts to serve.

BLUE CHEESE TARTINE
A tartine is an open-faced sandwich in French. This one's even better than average as the bread is toasted and crunchy. I often crave blue cheese, but really don't need a lot to satisfy that craving - this is the perfect blue cheese snack. Recipe adapted from 'Harvest to Heat'.

- Brush both sides of the bread lightly with olive oil. (It's imperative that you brush the bread with olive oil, rather than just drizzle or glob the oil on the bread. This ensures an enticingly crisp surface rather than a sad, soggy one.) Place the bread on a baking sheet and broil until golden on one side, about 2 minutes. Turn bread over and repeat on second side. Sprinkle with the cheese and broil until slightly melted, about 1 minute.
- Arrange the clue cheese tartines on a serving platter. Place 2 warm slices of bacon over each toast and then drizzle with the honey and grind some fresh pepper over the top. Cut each tartine in half, if desired, and serve.

- Crumble the blue cheese on both pieces of bread, then place them in the toaster oven until the cheese is melted and the bread is crisp, about 5 minutes.
- While the bread toasts, make the salad. Combine the arugula, julienned apple and walnuts in a bowl and season with salt and pepper. Squeeze the lemon over top and drizzle with olive oil, then use clean hands to toss until combined. Taste for seasoning and adjust as needed.
- Remove the blue cheese toasts from the oven and drizzle each with about one tablespoon of honey (use more or less depending on taste). Divide the salad and arrange over top of the toasts, then cut into 3-4 pieces. Serve immediately.
