EASY BEEF CHILAQUILES



Easy Beef Chilaquiles image

Number Of Ingredients 9

1-2 lbs beef
1-15 oz can Hunts Fire Roasted Diced Garlic Tomatoes (or your favorite)
1-15 oz can Hunts Diced Green Pepper, Celery & Onion Tomatoes (or your favorite)
1-10 oz can Ro-Tel
1- onion diced
1-2 packs Taco Seasoning (1 pack for each pound of beef)
6-6 inch Soft Corn Tortillas
2-cups spinach
2-cups Monterey Jack Shredded Cheese

Steps:

  • Put Beef in your foil-lined or PAM coated crock pot.
  • Sprinkle half of the Taco Seasoning on beef.
  • Add diced onion. A chopper can make quick and tear free work of this step
  • Add Hunts tomatoes and Ro-Tel. I love to use these because they make meal preparation so much quicker and easier. They are a real time saver!
  • Add the remaining Taco Seasoning..
  • Refrigerate overnight.
  • Prepare your spinach by removing the stems and putting it in a ziplock bag with a paper towel in it to keep it fresh. Leave in refrigerator until time to assemble the chilaquiles.
  • Plug crock pot into the timer that is set for 8 hours and set your crock pot to auto or low.
  • Shred the beef with two forks.
  • Cut the tortillas into fourths. A kitchen scissor makes this a snap.
  • Warm the tortillas in a pan with a little olive oil until starting to brown.
  • Cut avocado slices.
  • Spread two cups of the pulled beef over the tortilla slices.
  • Spread two cups of spinach over the pulled beef.
  • Spread 1 cup of Monterey Jack Cheese over the spinach.
  • Turn burner to low.
  • Spread 2 more cups of pulled beef and 1 cup of Monterey Jack Cheese over the spinach and cover. Simmer for 5 minutes.

Use any leftover beef brisket from Rachael's Mexican Brisket and Biscuits for this hearty brunch dish.

10 corn tortillas, cut into 1-inch strips
All-natural olive oil cooking spray
2 tablespoons Spice Blend, recipe follows
One 15-ounce can diced fire-roasted tomatoes or diced tomatoes with green chilies
One 15-ounce can black beans, rinsed and drained
1 1/2 pounds cooked chopped beef brisket
1 1/2 cups shredded pepper jack cheese
1 cup shredded sharp white Cheddar
4 to 6 large or jumbo organic eggs (1 per person)
Butter, for the skillet
Fresh cilantro leaves, for garnish
Thinly sliced fresh Fresno and jalapeno peppers, for garnish
Lime wedges, for garnish
1/4 cup kosher salt
1/4 cup packed light-brown sugar
3 tablespoons sweet or smoked sweet paprika
1 tablespoon garlic powder
1 tablespoon mustard seeds
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons ground ginger
2 teaspoons dried oregano
1 1/2 teaspoons cayenne pepper
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F. Arrange the tortilla strips on a wire rack set over a baking sheet. Spray the tortillas with cooking spray and sprinkle with the Spice Blend. Bake until crisp and golden, 7 to 8 minutes. Spread the tomatoes in the bottom of a 12-to-13-inch casserole dish and scatter the beans on top. Top with the tortillas, then the beef, and finally sprinkle with the cheeses. Bake until the filling is bubbling and the top is browned. Meanwhile, fry the eggs in butter in a skillet. Divide the casserole among plates and serve each portion with a fried egg. Garnish with cilantro, chile peppers and lime wedges.
  • Combine the salt, brown sugar, paprika, garlic powder, mustard seeds, coriander, cumin, ginger, oregano, cayenne and cinnamon.

1/2 pound lean ground beef (90% lean)
1/2 pound fresh chorizo or bulk spicy pork sausage
1 medium onion, finely chopped
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes with mild green chiles, undrained
1 can (10 ounces) diced tomatoes and green chiles, undrained
4 cups tortilla chips (about 6 ounces)
1 cup shredded Monterey Jack cheese
Chopped fresh cilantro
Optional toppings: Sour cream, diced avocado and sliced red onion

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef and chorizo with onion and garlic over medium heat until beef is no longer pink, 5-7 minutes, crumble meat; drain. Stir in both cans of tomatoes; bring to a boil. In a greased 1-1/2-qt. or 8-in.-square baking dish, layer 2 cups chips, half of the meat mixture and 1/2 cup cheese; repeat layers., Bake, uncovered, until cheese is melted, 12-15 minutes. Sprinkle with cilantro. If desired, serve with toppings.

8 (6 inch) corn tortillas, cut into 2-inch pieces
5 tablespoons vegetable oil
8 eggs, beaten
salt and ground black pepper to taste
½ cup green taco sauce
1 cup shredded Monterey Jack cheese

Steps:

  • Heat oil in a skillet over medium-high heat. Add tortilla pieces to oil and fry until crisp, about 5 minutes.
  • Pour beaten eggs over the tortilla pieces in the skillet. Season with salt and pepper. Cook, stirring occasionally, until eggs have set, about 4 minutes. Remove from heat. Top with taco sauce and Monterey Jack cheese.

Breakfast for dinner doesn't have to mean pancakes and scrambled eggs. This hearty, savory dish will make you want breakfast for every meal. A rich red chile sauce with guajillo peppers gives the chilaquiles their kick.

Number Of Ingredients 22

6 to 7 guajillo peppers or red New Mexican dried chilies
About 2 tablespoons safflower or vegetable oil
1 onion, chopped
1 jalapeno pepper, seeded and chopped
Ten 6-inch corn tortillas
Naturally flavored neutral cooking spray
About 1/2 teaspoon smoked sweet paprika, pimenton
1 scant teaspoon (1/3 palm full) oregano
4 large cloves garlic, chopped
1/2 cup water
1 cup chicken or vegetable stock
1 can (28 ounces) fire-roasted or diced tomatoes
About 2 teaspoons honey
1 teaspoon unsweetened cocoa powder, optional
1 small red onion
A handful cilantro
3 to 4 radishes
About 4 ounces cotija cheese or queso fresco
About 6 ounces Monterey Pepper Jack cheese
4 pats butter, about 1 teaspoon each
4 large eggs
Pickled sliced jalapeno peppers, mild or spicy

Steps:

  • Preheat oven to 425 degrees F.
  • Gather your ingredients.
  • Preheat a stainless 3-quart pot over high heat and a large cast-iron skillet, 10 to 12 inches, over medium-low heat; this will be your serving platter.
  • Remove the stems and seeds of your dried chilies and toast in the pot, 2 minutes. Remove, then add oil, onions and jalapeno pepper. Soften onions, 3 to 4 minutes.
  • Stack and cut the corn tortillas into 8 pieces, halved across, and then cut into 4 equal wide slices. Arrange on parchment lined baking sheet and spray with cooking spray. Bake to deeply golden and fragrant, 10 minutes.
  • To onions, add pimenton, oregano and garlic. Stir and add water. Let it absorb, 1 to 2 minutes. Add chilies back to pot with chicken or vegetable stock, tomatoes, honey and cocoa powder if using. Simmer 7 to 8 minutes to plump the peppers. Puree in high powered blender or food processor, and then transfer to large cast-iron skillet. Reserve any extra in an airtight container for enchiladas or more chilaquiles.
  • Chop red onion, cilantro and thinly slice radishes with truffle shaver, sharp knife or mandoline. Crumble the cotija or queso fresco. Shred the Pepper Jack cheese.
  • Add tortillas to sauce in cast-iron skillet and toss to coat. Top with cheeses and place back in the oven for 5 to 10 minutes, or until cheese is melted and bubbling.
  • Place 2 small nonstick skillets over medium heat (have some lids or foil on hand). Add a pat of butter to each pan, then crack an egg into each pan and cover. Cook until whites are solid and yolks still soft. Remove to a plate and repeat.
  • Remove skillet from the oven and top with red onions, cilantro, radishes, pickled peppers and eggs.
  • Serve the chilaquiles from the pan.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Place corn tortilla pieces on the prepared baking sheet and spray with cooking spray.
  • Bake in the preheated oven until crispy, 5 to 10 minutes.
  • Combine tortillas and tomatillo sauce in a skillet over medium heat and simmer until tortillas have softened, about 5 minutes. Spoon mixture into individual ramekins. Top with queso fresco, crema, and sliced onions. Garnish with cilantro.
