You'll want to use this incredible basil aioli on everything! It's quick and easy to make, featuring this fresh and peppery green herb. Variation: try Pesto Aioli!

12 large basil leaves or 2 tablespoons very finely chopped basil
1 small garlic clove
1/2 teaspoon white wine vinegar or lemon juice
1/2 teaspoon yellow mustard
1/3 cup high quality mayonnaise (vegan as desired)

Steps:

  • Mince the garlic as finely as possible. Then use the side of your knife blade to mash and grind it into a paste. (Alternate method: you can combine all ingredients in a food processor and blend until smooth.*)
  • Mince the basil as finely as possible.
  • Whisk together the garlic and basil with the white wine vinegar, yellow mustard, and mayonnaise. Keeps in the refrigerator for 2 weeks.

2 or 3 fresh garlic cloves, peeled and chopped. (If they've started to sprout, don't use them for aioli.)
Large pinch coarse sea or kosher salt
1 egg yolk, at room temperature
1/2 lemon, juiced
2/3 cup pure olive oil (not extra virgin)
1/3 cup extra-virgin olive oil
Freshly ground black pepper

Steps:

  • Place garlic and salt in a food processor fitted with a metal blade, or in a blender. Pulse for 2 seconds. Add the egg yolk and lemon juice, and pulse on and off until blended. Turn on and begin adding the olive oil (pure first, then extra-virgin) in a thin stream. If it becomes too thick, thin it out with some room-temperature water and continue adding oil until you've used it all. Finish with pepper and (if necessary) a bit more salt.
  • The reason for using 2/3 pure olive oil is to keep the flavor of the oil from becoming overpowering. This is a perfect example of how by using a fully-flavored extra virgin oil you can use much less, thereby saving money and getting better flavor.

2/3 cup lightly packed fresh basil leaf
1/3 cup extra virgin olive oil
1 garlic clove, minced
1 tablespoon lemon juice
1 dash hot pepper sauce
1 1/2 cups mayonnaise

Steps:

  • In a food processor pulse together basil, olive oil, garlic, lemon juice and hot pepper sauce until smooth.
  • Pulse in mayonnaise.
  • Put in refrigerator up to 24 hours.
  • Choose your vegetables, cut into strips.
  • Blanch in boiling water for 1 minute.
  • Drain and chill in ice water.
  • I used carrots, peppers and green beans.
  • I added radishes, tomatoes and cucumbers to the platter after.
  • Time does not include the chilling time.

1 ½ cups mayonnaise
⅔ cup chopped fresh basil
1 tablespoon chopped fresh garlic
1 tablespoon lemon juice
1 ½ teaspoons lemon zest

Steps:

  • Combine mayonnaise and basil in a food processor; blend until mixed and mayonnaise turns slightly green. Add garlic; process until well blended. Add lemon juice and zest; process until well mixed, 30 to 45 seconds.
  • Transfer to a bowl and cover. Chill until flavors combine, about 1 hour.

1 teaspoon minced garlic clove
2 coddled eggs
1 teaspoon Dijon mustard
2 tablespoons lemon juice
1 cup olive oil
1 teaspoon kosher salt
1/4 cup chopped fresh basil

Steps:

  • * to coddle the eggs, place whole egg (in the shell) into simmering water for 1 minute then remove and chill under cold running water. This is to make sure you have no salmonella in your yolk. You could use pasturized eggs, I suppose.
  • Place the garlic (finely chopped), egg yolks and dijon into a stainless steel bowl and whisk together.
  • whisk in the lemon juice.
  • in a slow stream, add in the olive oil, whisking constantly until it is fully incorporated. This will thicken as it is whisked, so add a bit of water along the way if it gets too thick.
  • Season with salt.
  • Stir in the basil (very finely chopped).

Like the name says, this is a basic, tasty aioli. You can season it up, or leave as is. I like to use the coarse salt, either kosher or sea salt, as it doesn't dissolve as quickly as regular salt. I also add coarse ground black peper, for the same reason.Just makes for a little tastier aioli. Amount is just a guess; mine came out to a little over a cup. Cooking time is the mellowing time.

3 garlic cloves
2 egg yolks
1 cup extra virgin olive oil
1 tablespoon fresh lemon juice
salt and pepper

Steps:

  • Mix the garlic in a food procesor.
  • Add the egg and process until well mixed. With the motor running, slowly pour in half of the olive oil. Stop the machines and add the lemon juice. Then, with the motor running, slowly pour in the rest of the olive oil and process until the mixture is thickened and the oil is emulsified.
  • Add salt and pepper to taste.
  • Refrigerate for at least 30 minutes, covered, and up to 12 hours before serving. This will allow the raw garlic flavor to mello.

1/2 cup mayonnaise
3/4 cup fresh basil leaf, roughly torn
3 fresh garlic cloves
2 tablespoons pine nuts
1 tablespoon fresh lemon juice
1 pinch sea salt
1/4 teaspoon harissa

Steps:

  • Combine basil leaves, garlic, pine nuts, lemon juice and salt in a small food processor. Pulse until roughly chopped. You might need to scrape down the sides and do this several times.
  • 2. Add mayonnaise and Harissa and blend until fairly smooth.
  • 3. Transfer to an airtight container and chill for 30 minutes before using.
