HUNGARIAN CUCUMBER SALAD
Great salad to make when you have a ton of cucumbers coming out of the garden. We make this year round but we are real cuke lovers in this family. Let it sit for a few days in the fridge and it's even better! Great make-ahead dish for BBQs and parties.

Steps:
- Lightly toss cucumber slices, onion slices, and chopped dill together in a large bowl.
- Pour vinegar over cucumber mixture; toss to coat.
- Pour oil over cucumber mixture; toss to coat.
- Season with salt and black pepper.

GERMAN CUCUMBER SALAD (GURKENSALAT)
Steps:
- Place the sliced cucumbers in a bowl and toss with a heaping teaspoon of salt. Let sit for about 30 minutes then drain thoroughly. In a small bowl, whisk together the remaining ingredients. Pour over the cucumbers and stir to combine. Cover and chill for at least 2 hours before serving, stirring it a couple of times. Add salt and pepper to taste. Serve cold or at room temperature.

COLETTE'S EUROPEAN SALAD
This salad is like no other. I "threw" it together one day, using what I had in the refrigerator/pantry. I didn't realizing how big of a hit it would become. I am constantly asked to make it, no matter what the occasion. This salad will go nicely with any sort of meal. I've experimented with other Poppy seed dressings, but Brianna's is the best tasting. I would not recommend using any other dressing for this salad! Enjoy!

Steps:
- In a non-stick frying pan, toast the walnuts on low heat, stirring occasionally (they will be toasted as soon as they give an arroma) Set aside.
- In a large bowl, rinse and drain salad mix and refrigerate.
- Just before serving, drain salad mix again to make sure it is completely dry.
- Toss all ingredients together and serve.
- note: use enough dressing to cover the ingredients, but not too much that the salad will become"mushy".

CUCUMBER, GRAPE TOMATO AND DILL SALAD

Steps:
- Put shallot, mustard, and vinegar in a blender, and blend. With the motor running, slowly drizzle in oil. Toss cucumber and dill in the vinaigrette with fennel seeds and chile. Fold in the tomatoes.
KHYAR BI LABAN (CUCUMBER YOGURT SALAD)
Steps:
- Peel and slice cucumbers into thin rounds.
- Place sliced cucumbers in a strainer and sprinkle with salt. Set aside.
- While salted cucumber slices sit, crush garlic and mash together with fresh mint leaves using a mortar and pestle or wooden spoon.
- Combine yogurt and garlic mint mixture together. Stir well.
- Fold in cucumber slices and serve cold.

EAST EUROPEAN CUCUMBER SALAD
This is the perfect side dish for grilled meat. My family eats it with grilled spicy meatballs. You can adjust the ingredients to make it as creamy or as sweet as you want.

Steps:
- Half the cucumber lengthwise and slice thin. Half the onion and slice really thin. (I always use the mandolin).
- To a small bowl add : garlic, yogurt, vinegar, oil, salt, pepper and sugar.
- Mix thoroughly with the cucumber and onion. Taste and adjust seasoning. You could eat it now or put in the fridge for a while.
- Before serving fold in the dill.

- 1. Peel the cucumbers and slice them very thin. Sprinkle with salt and let stand for 30-60 minutes with a plate and a 5-pound weight on top. Squeeze out the water on a paper towel.
- 2. Combine the sugar, vinegar, garlic powder, and water. Add the cucumbers and marinate for a few hours. To serve, sprinkle paprika on half of the salad and black pepper on the other half.
