ACORN SQUASH IN THE MICROWAVE

Acorn Squash in the Microwave image

Learning how to cook acorn squash in the microwave is a breeze, skip the time-consuming oven and cook microwave acorn squash in just 12 minutes. Top with the classic butter and brown sugar, or lighten it up with a savory acorn squash that has olive oil, salt, pepper and herbs. The acorn squash in microwave is gluten-free, paleo (without the sugar and switching to ghee or oil), vegetarian, and can be low carb without the brown sugar.

Provided by Jen

Categories     Side Dishes

Time 17m

Number Of Ingredients 4

1 acorn squash (1-1 1/3 lb)
2 Tbsp butter
4 tsp brown sugar
Dash of sea salt

Steps:

  • Remove any stickers and wash the acorn squash. You can use a vegetable brush if you have one.
  • Cut the squash in half lengthwise, cutting down through the stem piece also. Press down on the back of the knife to put your weight into cutting the squash in half.
  • Remove the seeds and membrane.
  • Place the 2 squash halves with the cut side face down in a microwave-safe dish. Cover with plastic wrap.
  • Microwave the acorn squash for 10-12 mins. If your squash is closer to 1 lb, acorn squash in the microwave might just take 10 minutes, if it's larger it will be closer to a 12 minute cook time.
  • You can test whether or not the acorn squash is done by piercing through the outer green shell. If the fork or knife can easily cut into the squash, then you know it's done. If it doesn't seem all the way cooked through, add 2 more minutes to the cooking time.
  • Add 1/2 Tbsp-1 Tbsp of butter to each acorn squash halve.
  • Sprinkle each half with 1-2 tsp brown sugar.
  • Sprinkle with a dash a sea salt.
  • Microwave for 60 more seconds, or until both the butter and brown sugar are melted.
  • Enjoy! Each acorn squash halve is one serving, you can double and cook 2 squash at the same time if desired.

Acorn squash is a tasty, versatile and fantastic fall vegetable. Once cooked, it can be pureed, chopped, sliced or stuffed and used in both sweet and savory dishes. Roasting is a popular method of preparing acorn squash, but it can take up to an hour. Microwaving, though, takes less than 15 minutes to prep and cook. Perfect for weeknight cooking. Add acorn squash to soups, pies, pasta, casseroles, stir-fry, or salad for a festive fall ingredient.

Provided by Kitchen Crew @JustaPinch

Categories     Vegetables

Number Of Ingredients 3

1 acorn squash
2 tablespoon(s) butter, melted
2 pinch(es) salt and pepper (or your favorite seasoning)

Steps:

  • Pierce the middle of the squash and cut through one of the polar ends.
  • Then turn the squash and cut through the other polar end.
  • Open the acorn squash and remove the seeds with a spoon. Discard the seeds.
  • Set on a microwave-safe dish. Pierce the squash with a fork.
  • Brush the inside of the squash, and all of the exposed flesh, with some of the melted butter.
  • Flip the squash over so they are face down. Then microwave for 6 to 8 minutes (depending on the strength of your microwave).
  • Flip the squash over. Brush with more butter. Sprinkle with a couple of pinches of salt and pepper (or your preferred seasonings depending on your prospective dish).
  • Flip back over so that it's face down. Microwave 2 to 3 minutes more. Take the acorn squash out of the microwave.
  • The acorn squash is ready to eat.
  • If pureeing the acorn squash, let it cool to touch. Then scoop the flesh out of the squash and puree it.
  • If chopping or slicing the squash, slice the skin from the outside of the flesh and chop or slice the squash.
