1 cup beef broth
1/2 cup heavy whipping cream

1/4 cup minced fresh parsley, optional

Steps:

  • Prepare meatballs according to package directions., Meanwhile, in a large saucepan, melt butter. Stir in flour until smooth; gradually add broth. Bring to a boil; cook and stir until thickened, 1-2 minutes. Stir in cream and dill; simmer for 1 minute. Stir in meatballs; heat through. Garnish with parsley if desired.

1-1/2 cups soft bread crumbs
1 cup half-and-half cream
1 egg, beaten
1/3 cup chopped onion
1/4 cup minced fresh parsley

3 tablespoons all-purpose flour

  • In a large bowl, combine bread crumbs and cream; let stand for 5 minutes. Stir in the egg, onion, parsley, salt, nutmeg and ginger. Crumble meat over mixture and mix well., Shape into 1-in. balls. Place meatballs on a greased rack in a shallow baking pan. Bake, at 350° for 20-25 minutes or until no longer pink. Yield approximately 30 meatballs, 4 to 6 servings

Number Of Ingredients 14

2 slices fresh white bread
1/4 cup milk
3 tablespoons clarified butter, divided
1/2 cup finely chopped onion
A pinch plus 1 teaspoon kosher salt
3/4 pound ground chuck
3/4 pound ground pork
2 large egg yolks
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/4 cup all-purpose flour
3 cups beef broth
1/4 cup heavy cream

Steps:

  • Preheat oven to 200 degrees F.
  • Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.
  • In a 12-inch straight sided saute pan over medium heat, melt 1 tablespoon of the butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.
  • In the bowl of a stand mixer, combine the bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.
  • Using a scale, weigh meatballs into 1-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds.
  • Heat the remaining butter in the saute pan over medium-low heat, or in an electric skillet set to 250 degrees F. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven.
  • Once all of the meatballs are cooked, decrease the heat to low and add the flour to the pan or skillet. Whisk until lightly browned, approximately 1 to 2 minutes. Gradually add the beef stock and whisk until sauce begins to thicken. Add the cream and continue to cook until the gravy reaches the desired consistency. Remove the meatballs from the oven, cover with the gravy and serve.

1 egg
1/4 cup ketchup
1/2 cup onion, finely minced

2 (8 ounce) cans cream of mushroom soup
1 cup sour cream

2 tbsp rapeseed oil
1 onion , finely chopped
1 small garlic clove , finely grated
375g lean pork mince
1 medium egg yolk
grating of nutmeg
50g fine fresh breadcrumbs
300ml hot low-salt beef stock
½ tbsp Dijon mustard
2 tbsp fat-free natural yogurt
400g spring greens , shredded
lingonberry or cranberry sauce , to serve

Steps:

  • Put 1 tbsp rapeseed oil in a frying pan over a medium heat. Add the onion and fry for 10 mins or until soft and translucent. Add the garlic and cook for 1 min. Leave to cool.
  • Mix the cooled onions, pork mince, egg yolk, a good grating of nutmeg and the breadcrumbs in a bowl with your hands until well combined. Form into 12 balls and chill for 15 mins.
  • Heat the remaining oil in a frying pan and fry the meatballs for 5 mins over a medium heat, turning often until golden. Pour over the stock and bubble for 8-10 mins or until it has reduced a little. Stir through the mustard and yogurt.
  • Steam the greens for 5 mins or until tender. Serve the meatballs with the greens and a dollop of the sauce.

My aunt gave me this recipe once when I was trying to think of something to take to a picnic. This is so easy and delicious; every time I have made it I never bring home leftovers! They disappear and everyone begs for the recipe! You can use your own homemade meatballs, but I just use a bag of prepared frozen Swedish meatballs! Sometimes I add potatoes and make it a meal over rice or egg noodles!

1 bag frozen swedish meatballs (64 Count)
1 (10 3/4 ounce) can 98% fat-free condensed cream of celery soup
1 (10 1/2 ounce) can French onion soup
1 cup water

Steps:

  • Turn your crock pot on and get it warmed up. You can put it on High to start. Add the Meatballs and then add the Cream of Celery Soup, French Onion Soup and water. Stir everything together. After about 30-45 minutes turn it down to low and let simmer until you are ready to serve.
  • *Variation - Cut up 4-5 large Yukon gold potatoes into large 2 inch pieces. Boil potatoes for about 8-10 minutes and add to the crock pot with the meatballs. Add a can of Cream of Mushroom soup for extra gravy.

1 egg, beaten
1 small onion, finely chopped or grated
85g fresh white breadcrumbs
1 tbsp finely chopped dill, plus extra to serve
1tbsp each olive oil and butter
2 tbsp plain flour
400ml hot beef stock (from a cube is fine)

Steps:

  • In a bowl, mix the mince with the egg, onion, breadcrumbs, dill and seasoning. Form into small meatballs about the size of walnuts - you should get about 20.
  • Heat the olive oil in a large non-stick frying pan and brown the meatballs. You may have to do this in 2 batches. Remove from pan, melt the butter, then sprinkle over the flour and stir well. Cook for 2 mins, then slowly whisk in the stock. Keep whisking until it is a thick gravy, then return the meatballs to the pan and heat through. Sprinkle with dill and serve with cranberry jelly, greens and mash.

1 (10 ounce) can cream of mushroom soup
1 (10 ounce) can water or 1 (10 ounce) can broth
18 ounces low-fat sour cream
1 (12 ounce) jar turkey gravy
1 tablespoon Kitchen Bouquet
3/4 teaspoon allspice

Steps:

  • Spread meatballs single layer on large cookie sheet or roasting pan. Bake in preheated oven at 350 for 30 minute (there will be drippings left in pan, save for later).
  • In a saucepan stir the rest of the ingredients until well mixed. Heat to boil then simmer until meatballs are done.
  • Move the meatballs to crockpot. Keep 1/4 cup of drippings from meatballs discarding the rest. With a wooden spoon loosen any crispies left from meatballs and add with 1/4 cup of drippings to gravy. Mixing until smooth.
  • Put all into crockpot or warmer and keep warm until ready to eat. Nice over noodles or rice with a bag salad, frozen bisquets and a glass of red wine. All of this can be done in about 35 minute.
