6 eggs
1 cup milk
½ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a 9x13 inch baking pan.
  • In a blender, combine eggs, milk, flour, salt and pepper; cover and process until smooth. Pour into prepared baking pan.
  • Bake in preheated oven until set, about 20 minutes. Sprinkle with cheese.
  • Carefully loosen edges of omelet from pan. Starting from the short edge of the pan, carefully roll up omelet. Place omelet seam side down on a serving plate and cut into 6 equal sized pieces.

  • Place eggs and milk in a blender. Add the flour, salt and pepper; cover and process until smooth. Pour into a greased 13x9-in. baking pan. 2 tbsp tomato salsa
about 1 tbsp fresh coriander

Steps:

  • Beat the egg with 1 tbsp water. Heat the oil in a medium non-stick pan. Add the egg and swirl round the base of the pan, as though you are making a pancake, and cook until set. There is no need to turn it.
  • Carefully tip the pancake onto a board, spread with the salsa, sprinkle with the coriander, then roll it up. It can be eaten warm or cold - you can keep it for 2 days in the fridge.

4 tablespoons prepared dashi stock
1 tablespoon white sugar
1 teaspoon mirin (Japanese sweet wine)
½ teaspoon soy sauce
½ tablespoon vegetable oil

Steps:

  • Whisk eggs, dashi stock, sugar, mirin, and soy sauce together in a bowl.
  • Heat 1/3 of the oil in a large nonstick skillet over medium-high heat. Add about 1/3 of the egg mixture and quickly swirl the pan to evenly cover the bottom. Start rolling up the omelette from one side to the other as soon as it is set.
  • Keep the roll to one side, then add another 1/3 of the oil to the skillet and another 1/3 of the egg. Swirl the pan, ensuring the entire bottom is covered, including around and underneath the first roll. Cook until set. Roll up from the side containing the first roll, so that is now at the center.
  • Repeat the process with the remaining oil and egg. Transfer rolled omelette to a bamboo rolling mat. Roll up tightly and allow to cool for a few minutes.
  • Unwrap the omelette and slice into 6 pieces. Serve warm or cold.

2 tablespoons unsalted butter, melted
12 large eggs, beaten to blend
2 cups heavy cream
12 ounces grated whole-milk mozzarella or other cheeses such as Cheddar, Monterey Jack or feta
1 teaspoon kosher salt
2 packed cups baby spinach
1 ounce thinly sliced prosciutto
One 10-ounce jar roasted peppers

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F.
  • Line a 15-by-18-inch sheet pan with parchment paper leaving a 2-inch overhang on each of the two narrow ends. Brush with melted butter. Whisk the eggs, cream, cheese and salt in a large bowl. Pour into the prepared pan and bake until the eggs are puffed on the edges and just set, 20 to 25 minutes.
  • Imagine the omelet is divided into three equal sections running lengthwise. Top one section with a layer of the spinach, another with the prosciutto and the last with the peppers; leave a little space between each section. Cover with foil and let sit 10 minutes to allow the spinach to wilt and the toppings to warm.
  • Remove the foil and, using the parchment for handles, carefully transfer the omelet to a cutting board. Starting at one of the short ends, lift the parchment up and use it to help tightly roll up the omelet, pulling the parchment back as you go so it does not get caught in the roll. Using a sharp chef's knife, cut the omelet into slices and arrange on a platter.

1 cup milk
1/3 cup flour
1 bell pepper, your choice, chopped
1 cup mushroom, chopped
3 green onions, chopped
6 slices bacon, cooked crisp and chopped
1 1/2 teaspoons oregano
salt and pepper, to taste
1 cup grated cheddar cheese
1 cup salsa, your favorite

Steps:

  • Preheat oven to 350.
  • Line a 15x10x1 inch pan with parchment paper, making sure ends extend over the edge of the pan.
  • Spray with non stick cooking spray.
  • Combine eggs with next 8 ingredients and pour into prepared pan.
  • Bake 25 minutes, or until eggs are set.
  • Sprinkle cheese evenly over the top and continue baking until cheese is melted.
  • Roll omelette immediately beginning at the short end and peeling off the paper as omelette is rolled.
  • Place on platter and cut into 4 pieces.
  • Serve with heated salsa.

1 tbsp sunflower oil
1 carrot , thinly shredded
120g pack shiitake mushroom , stems removed and thinly sliced
100g bag beansprout
3 spring onions , thinly sliced
knob of ginger , peeled and finely grated
1 garlic clove, chopped or grated
soy sauce
3 eggs beaten with 1 tsp sunflower oil

Steps:

  • Heat the oil in a wok and stir-fry the carrot and mushrooms for 2 mins until just starting to soften. Add the beansprouts, onions, ginger and garlic and stir-fry for another 1-2 mins or until the beansprouts are starting to turn transparent. Season with the soy sauce and set aside. Can be made up to 4 hrs ahead.
  • Heat a medium frying pan, add a little oil, then tip out the excess. Pour in a little of the egg and swirl around the pan to make a thin, even layer. Fry for 30 secs or until the edges turn golden, then flip over with a palette knife for another 10 secs. Slide out onto greaseproof paper and repeat until you have made six pancakes. Can be made up to a day ahead.
  • Cut each pancake in half. Spoon a little of the veg mix in the centre of the half-moon of pancake and roll up, tucking in the edges. Steam briefly to heat the rolls just before serving or microwave on High for 30 secs.

1/4 cup milk (i use 2%)
1/4 teaspoon salt
2 tablespoons vegetable oil
1 sweet red pepper, chopped
2 cups sliced mushrooms
1 tablespoon fresh thyme, chopped or 1/2 teaspoon dried thyme
1/4 teaspoon pepper
2 green onions, sliced
2/3 cup cheddar cheese, shredded

Steps:

  • Line bottom of 13 x 9 inch metal cake pan with parchment or waxed paper; grease paper and sides of pan.
  • Set aside.
  • In bowl, whisk together eggs, milk and salt, pour into prepared pan.
  • Bake in 400f degree oven for 10 minutes or until centre is firm when touched.

  • Starting at narrow end, roll up jello roll style.
  • Return omelette roll to cake pan; sprinkle with remaining cheese.
  • Broil for 3 to 5 minutes or until cheese is bubbly.
  • Slice crosswise to serve.
