1 pound dried Great Northern beans
1 pound bacon, chopped
1 onion, chopped
2 jalapenos, chopped
1/4 cup tomato paste
1/4 cup dark brown sugar
1/4 cup molasses
Vegetable broth
1/4 teaspoon cayenne pepper
1 teaspoon black pepper
2 teaspoons kosher salt

Steps:

  • Heat oven to 250 degrees F.
  • Soak beans in a plastic container overnight in just enough cold water to submerge them completely.
  • Place a cast iron Dutch oven over medium heat and stir in the bacon, onion, and jalapenos until enough fat has rendered from the bacon to soften the onions, about 5 minutes. Stir in the tomato paste, dark brown sugar, and molasses.
  • Drain the beans and reserve the soaking liquid. Add the drained beans to the Dutch oven. Place the soaking liquid in a measuring cup and add enough vegetable broth to equal 4 cups of liquid. Add the liquid to the Dutch oven and bring to a boil over high heat. Add in cayenne, black pepper and salt. Give them a stir and cover with the lid. Place the Dutch oven in the oven for 6 to 8 hours, or until the beans are tender.

1 pound dry navy beans
6 cups water
1 pinch baking soda
1 bay leaf
6 slices bacon, cut into 1/2-inch pieces
1 yellow onion, diced
⅓ cup molasses
¼ cup packed dark brown sugar
1 teaspoon dry mustard powder
1 ½ teaspoons salt
½ teaspoon freshly ground black pepper, or to taste

Steps:

  • Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
  • Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
  • Raise oven heat to 350; bake beans uncovered in oven until top develops a flavorful crust, 20 to 30 more minutes.

8 slice bacon
1/2 onion - diced
1/2 bell pepper - diced
2 or 3 jalapenos - diced (deseed for less heat)
55 oz bush's baked beans - large can original flavor
8 oz pineapple chunks - drained
1 c brown sugar - packed
1 c ketchup
3 Tbsp worcestershire sauce
1/2 Tbsp dry mustard
aluminum pan 12x9 or deep 9x9

Steps:

  • 1. Sauté bacon pieces in fry pan until crispy and remove from pan with a slotted spoon. Sauté onion, bell pepper and jalapeño pepper until tender.
  • 2. In a large mixing bowl combine beans, pineapple, brown sugar, ketchup and dry mustard. Stir in bacon pieces and vegetables. Pour into a 12X9 or a deep 9X9 aluminum baking pan. (While mixing if things look dry, add additional ketchup 1/4 -1/2 cup at a time)
  • 3. Place in a 220-250° smoker for 2 1/2 - 3 hours (make sure temperature of the baked beans reaches 160°) or place in a 350° oven and bake for 1 hour.

This recipe is in a small cookbook I bought Years ago while in Amish country. I've made it for years, and my family loves it. Its well worth the time and trouble for those rave reviews you're sure to get! I had to guess at the servings, so don't take it as a true figure.

2 cups dried navy beans
1 1/2 teaspoons salt
1 small onion, minced
4 tablespoons molasses
1 teaspoon dry mustard
4 tablespoons catsup
1/4 lb salt pork or 4 slices bacon
water

Steps:

  • Soak beans over night in cold water.
  • Drain,and add 1 1/2 quarts fresh water,and the onion and cook slowly until the skins on the beans burst.
  • Drain and save the liquid.
  • Mix molasses, sasoning and catsup with 1 cup of the liquid.
  • Put half the salt pork or bacon in bottom of bean pot or baking dish.
  • Add the beans and top with remainder of pork or bacon.
  • Pour molasses mixture over beans, and add more liquid just to cover the beans.
  • Bake covered for 5 hours in slow oven(300 degrees). Uncover for the last 30 minutes. Add water if necessary while cooking.

1 lb Ground Hamburger (93/7% Lean)
1 Cup Ham (Cubes)
1 Can Kidney Beans (Rinsed and Drained)
1 Can Navy Beans (Rinsed and Drained)
2 Cans Pork and Beans
1/4 Cup Brown Sugar
1 Bottle Chili Sauce
1 Cup Beef Broth
1 tbl Yellow Mustard
1 Cup Yellow Onion (Diced)
1 Bell Pepper (Red, Green, Yellow, OR Orange Diced)

Steps:

  • Place 16-18 hot coals as a base for the bottom and place 12 inch Dutch Oven over coals. Allow Dutch Oven to heat up. Once hot add sliced bacon. I like to cut bacon in about 3/4in slices and throw them into the hot Dutch Oven and let them cook stirring as needed
  • Remove any excess oil and fat. It's easiest to use a few paper towels to absorb the excess fat.
  • Add 1 lb of ground beef to the cooked bacon. I prefer a lean ground sirloin but choose what you prefer.
  • Chop ground beef and allow to fully cook. You may need to drain excess fat from the hamburger depending on what you choose.
  • Add diced Onion and Diced Bell Pepper. Green Bell Pepper gives a nice bite to this recipe, but Red or Yellow is also a great option! Stir to combine and allow onions and bell pepper to soften for a few minutes.
  • Drain Kidney Beans and Navy Beans. Add Kidney, Navy and Pork and Beans to meat mixture.
  • Pour Chili Sauce, broth, and Yellow Mustard on top.
  • Add ham cubes and brown sugar and stir to combine.
  • Cover with lid and add 12-14 hot coals on top of Dutch Oven
  • Stir every 15 minutes and cook for 60-70 minutes.
  • In a large skillet on the stove over medium/high heat add bacon slices. I like to cut bacon in 3/4in pieces. Stir as needed until fully cooked.
  • Remove excess fat using paper towels to carefully remove.
  • Add 1 lb Lean Ground Sirloin to bacon and chop to break up beef. Feel free to use any ground beef. You may need to remove excess fat after cooking.
  • Dice Onion and Bell Pepper. Green Bell Pepper gives a nice bite to this recipe, but Red or Yellow is also a great option! Stir to combine and allow onions and bell pepper to soften for a few minutes.
  • Pour meat mixture into Slow Cooker or Dutch Oven
  • Drain Kidney Beans and Navy Beans. Add Kidney, Navy and Pork and Beans to meat mixture.
  • Pour Chili Sauce, broth and Yellow Mustard on top.
  • Add ham cubes and brown sugar and stir to combine.
  • Cover Dutch Oven or Slow Cooker with Lid
  • Bake in 350 Degree Pre-heated Oven for 1 hour stirring every 15 minutes OR - Use Slow Cooker and set to low for 4 hours.

4 28-ounce baked beans (¼ of the liquid drained off)
½ cup yellow mustard (may substitute with spice brown mustard)
⅓ cup barbeque sauce
¼ cup ketchup
1 tbsp molasses ((optional))

Steps:

  • Preheat oven to 350°
  • In a 12-inch cast iron skillet over medium heat cook bacon until crispy. Remove with a slotted spoon. Drain all but 2-3 tbsp of bacon grease.
  • Add onion, peppers, garlic, and jalapeno and cook for 4-5 minutes, until tender.
  • Add remaining ingredients except for 1 can of beans. Stir well. Then add in the last can and stir carefully. The pan will be very full.
  • Place cookie sheet or large piece of tin foil on the oven rack just underneath skillet, then carefully place skillet in the oven. Bake for 35-45 minutes, until thick and bubbly.

  • Cook bacon until not quite done; drain and set aside. (Bacon should not be brittle.)
  • Saute onions in 2 or 3 tablespoons bacon fat.

This was my grandmothers recipe that she only shared with her granddaughters. We had to literally stand by her and measure all the ingredients as she just went by her eye for ingredients. Its more of a sweet and sour baked bean, not as heavy as some baked bean recipes. I hope you enjoy it. Goes great with baked ham.

1 lb dried navy beans
1 tablespoon salt
1 cup granulated sugar
1 tablespoon dry mustard
4 -5 tablespoons cider vinegar
2 -3 tablespoons bacon grease
1 dash pepper
4 -5 slices bacon

Steps:

  • Soak beans overnight or at least 8 hours. Drain beans, put in dutch oven and cover with clean hot water. When beans start to cook, scum off and add salt. Cook slow til almost done. Put in casserole dish.
  • Add: Sugar.
  • Mustard.
  • Vinegar.
  • Bacon grease.
  • Stir until sugar and grease dissolve. Sprinkle with pepper, Add strips of bacon on top and Bake at 350 for about 1 hour or until bacon is brown.
