INDIAN ASPARAGUS STIR FRY



Indian Asparagus Stir Fry image

Stir fried asparagus subzi with ajwain seeds, garlic and green chilli.

1 lb asparagus spears
4 tablespoons gram flour
1 tablespoon oil
1 teaspoon carom seeds
1 tablespoon garlic (finely minced)
⅛ teaspoon hing (asafoetida, optional)
1 teaspoon kosher salt
1 teaspoon green chili (minced)
½ teaspoon ground cumin
½ teaspoon ground coriander
⅛ garam masala
½ lemon
cilantro for garnish

Steps:

  • Trim asparagus and discard the woody thick ends. Then cut into 1-inch pieces, if the asparagus is thick, slice it vertically down the middle to make thinner segments.
  • Preheat a medium skillet over medium heat. Dry roast gram flour for 5 minutes, breaking any lumps and stirring frequently. Take out the roasted flour and reserve.
  • Wipe the skillet with a dry towel and heat oil over medium heat. Add carom seeds, garlic, and hing and saute for 30 seconds to one minute or until aromatic.
  • Add the asparagus, salt, and green chili. Mix well and cook covered for 5 to 10 minutes on medium heat until the asparagus starts to get tender. Do not overcook as you want to have a crunchy bite.
  • Add cumin, coriander powder, and mix well. Sprinkle gram flour 1 tablespoon at a time, mixing well between each addition. Cook covered for 2 more minutes. Turn the heat off. Sprinkle garam masala, add a squeeze fresh lemon juice over the top and garnish with cilantro.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/3 cup mayonnaise
1 teaspoon lemon juice
1/2 teaspoon curry powder
1/8 teaspoon pepper
1 package (10 ounces) frozen asparagus spears, thawed
1 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
2 tablespoons canola oil
1/4 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine the soup, mayonnaise, lemon juice, curry and pepper; set aside. , Place half of the asparagus in a greased 8-in. square baking dish. Spread with half of the soup mixture., In a large skillet, saute chicken in oil until no longer pink. Place chicken over soup mixture. Top with remaining asparagus and soup mixture. , Cover and bake at 375° for 20 minutes. Uncover; sprinkle with cheese. Bake 5-8 minutes longer or until cheese is melted.

  • Heat 1 inch salted water in medium pot, bring to boil.

  • Heat to boiling; reduce heat.

3 tablespoons roasted chana dal powder (ground dried chickpeas)

1 tablespoon jeera powder (ground cumin)

Steps:

  • Chop asparagus, carrots and potato into 1/2 inch pieces.
  • Take a non-stick pan and put it on medium flame.
  • Add oil and other seasonings like mustard seeds and jeera and curry leaves.
  • Now add carrots and potatoes first.
  • Add turmeric and mix them all properly and close the lid.
  • After few minutes stir by adding salt and put the lid on again for a minute.
  • Add chopped asparagus and stir them all and close the lid to allow them cook.
  • After a few minutes check if all ingredients are cooked.
  • Then reduce stove to low and add roasted chana dal powder and dry coconut powder and chili powder.
  • Stir them all and close lid for a few minutes and switch off the stove.
  • Garnish with chopped coriander.
  • Goes well with rice, Chapathi, Dosa.

3 ribs celery, chopped
1 cup seedless red grapes, halved
1/2 cup shredded carrot, a couple of handfuls
4 scallions, chopped on an angle
1 cup plain yogurt
2 tablespoons curry powder or 2 rounded teaspoons mild curry paste
Salt and pepper
8 ounces mixed baby greens
2 tablespoons mango chutney, found on condiment aisle, plus some to pass at table
1 tablespoon rice wine or white vinegar, eyeball it
3 tablespoons vegetable, canola or safflower oil, eyeball it
1/4 cup (2 ounces) sliced smoked almonds

Steps:

  • Combine meat, celery, red grapes, carrot and scallions.Add yogurt and curry to the salad and toss to evenly distribute the curry. Season the salad with salt and pepper, to your taste.
  • To dress the greens, add salad to a bowl. In a second bowl, combine chutney and vinegar. Whisk in oil. Drizzle dressing over greens and toss.
  • To assemble, pile dressed greens on a plate. Using an ice cream scoop, place 2 scoops of chicken salad on greens. Garnish with toasted almonds.

2 tablespoons salted butter
4 cloves garlic, minced
1 medium yellow onion, finely diced
1 sweet potato, peeled and finely diced
1 tablespoon curry powder
One 13.5-ounce can coconut milk
1 cup chicken broth
2 tablespoons honey, plus more to taste
1/4 teaspoon kosher salt, plus more to taste
1 rotisserie chicken, meat pulled and skin and bones discarded
1/4 cup fresh cilantro leaves, chopped, plus whole leaves, for garnish
A few dashes of hot sauce, such as sriracha
1/2 lime, juiced, plus 6 lime wedges, for serving
1/2 small mango, diced, for garnish

Steps:

  • Heat the butter in a large skillet over medium-high heat. Add the garlic, onion and sweet potato to the skillet and cook, stirring, for 2 minutes. Sprinkle the curry powder over the vegetables and continue cooking for another minute. Reduce the heat to medium low and pour in the coconut milk and broth, stirring to combine. Mix in the honey and salt. Allow the sauce to heat up until gently simmering.
  • Add the chicken to the sauce, tossing to coat, and allow it to simmer until warmed through, about 3 minutes. Turn off the heat. Mix in the chopped cilantro, hot sauce and lime juice.
  • Ladle the soup into bowls. Garnish with mango cubes, cilantro leaves and lime wedges.

I created this for the Ready Set Cook contest in 2003. Morsels of mock crab in a spicy creamy asparagus soup. Microwaving the vegetables is a time and nutrient saver, but you could also boil or steam them.

1 lb asparagus, ends trimmed, coarsely chopped
1 small onion, coarsely chopped
1 potato, diced
8 ounces surimi or 8 ounces imitation crabmeat, broken into small pieces
1 cup chicken broth
1 cup milk
1 tablespoon flour
3 tablespoons butter (or Smart Balance)
1 tablespoon garlic powder
1 tablespoon yellow curry powder
1/4 teaspoon ground cayenne pepper
1/2 teaspoon ground black pepper
1 teaspoon salt
1 dash Worcestershire sauce

Steps:

  • Cook asparagus, onion, and potato (layered in that order) in a round covered casserole dish, with the chicken broth, in the microwave on high for 10 minutes (stirring 2-3 times).
  • When vegetables are tender, remove half of the potatoes and set them aside (you can also set aside the asparagus tips if you like).
  • Put the vegetables in a blender and puree until smooth (you may have to do it in two batches, depending on the size of your blender). Alternately, put them in a pot and use a hand blender.
  • Put the puree in a pot on medium heat and whisk in 1 T flour. Stir until smooth and soup begins to boil.
  • Reduce heat to medium-low (simmering) and add the remaining potatoes to the pot.
  • Stir in the butter, milk, garlic, curry, cayenne, black pepper, salt and Worcestershire, and simmer for 10 minutes.
  • Add the crab (and asparagus tips if you saved them) and simmer for 5 minutes.

1 cup pork stock or 250 ml chicken stock
1 cup apple, wedges
2 tablespoons chopped chutney (optional)

  • In a skillet, saute onion, red pepper, celery, and peanuts in butter.

1 lb fresh asparagus
6 cups chicken stock (preferably homemade) or 6 cups broth (preferably homemade)
1/4 cup butter (1/2 stick)

3 large egg yolks
1 teaspoon curry powder (to taste)
1 cup heavy cream (whipping)
salt
fresh ground white pepper

Steps:

  • Remove and discard woody ends from asparagus stalks;scrape spears with a vegetable peeler.
  • Cut off tips and reserve.
  • Dice stalks and combine with stock in a 4- quart saucepan.
  • Bring to a boil and cook, uncovered, 8 to 10 minutes, or until very tender.
  • Cool, then puree in a blender or food processor; set aside.
  • Melt butter over low heat in large heavy saucepan.

1 tbsp sunflower oil
1 red onion , thinly sliced
1 garlic clove
2 tsp ready-prepared ginger from a jar
½-1tsp ready chopped chillies , from a jar
200g can chopped tomatoes
200g raw peeled prawns or chopped skinless boneless chicken
2 tsp gujarati masala , or garam masala
3 tbsp low fat yogurt
handful coriander leaves, roughly chopped or torn

Steps:

  • Heat the oil in a pan, add onion and fry until they colour. Crush the garlic into the pan, add ginger and chilli; cook briefly. Add tomatoes and a quarter of a can of water and bring to the boil. Simmer for 2 mins, add prawns or chicken and gujarati masala, cover and cook for 2-3 mins for prawns and 5-6 mins for chicken.
  • Reduce the heat to a simmer, then stir in the yogurt, a tablespoonful at time. Sprinkle with coriander and serve with warm garlic and coriander naans and a crisp salad of cucumber, shredded lettuce, sliced red onion and wedges of lemon.
