4 cups cooked rice
1 can (12 ounces) evaporated milk
1 cup 2% milk
1/3 cup sugar
1/4 cup water
3/4 cup dried cherries
3 tablespoons butter, softened
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Generously grease a 6-qt. electric pressure cooker. Add rice, milks, sugar and water; stir to combine. Stir in remaining ingredients. , Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Allow pressure to naturally release for 5 minutes, then quick-release any remaining pressure. Stir lightly. Serve warm or cold. Refrigerate leftovers.

1 cup water
1/4 teaspoon salt
1/2 cup long-grain white rice
3 cups 1% fat milk
1/3 cup sugar
1 large egg
2 large egg whites
1 teaspoon vanilla
1/8 teaspoon ground cardamom
1/3 cup golden raisins
1/3 cup dried tart cherries

Steps:

  • Bring water with salt to a boil in a 2-quart heavy saucepan and stir in rice. Cover pan and reduce heat to low, then cook until water is absorbed, about 15 minutes. Stir in milk and sugar and cook over very low heat, covered, until mixture resembles a thick soup, 50 minutes to 1 hour.
  • Whisk together egg, egg whites, vanilla, cardamom, and a pinch of salt. Whisk about 1 cup hot rice mixture into egg mixture, then stir mixture into remaining rice. Cook over low heat (do not let boil), whisking constantly, until an instant-read thermometer registers 170°F, 1 to 2 minutes. Remove from heat and stir in raisins and cherries.
  • Transfer pudding to a 2-quart dish or 6 (8-ounce) ramekins and chill, its surface covered with wax paper, until cool but not cold, 1 to 2 hours.

1 cup 2% milk
1/3 cup sugar
1/4 cup water

2 cups milk
1 cup half-and-half cream
1 cup basmati rice (washed)
3/4 cup sugar
1 1/2 tablespoons vanilla extract
1/2 cup dried cherries
1 pinch cinnamon

Steps:

  • In a saucepan, bring milk, half & half and sugar to a boil.
  • Add rice and vanilla extract.
  • Cook at medium heat for 8 minutes.
  • Stir while heating until creamy and/or sticky.
  • Add cherries and stir for 2 minutes.
  • Set aside for 10 minutes.
  • Garnish with cinnamon.

We do this at Tru but spoon the rice pudding over a thin layer of caramelized cinnamon creme brulee that's spread in the bottom of a shallow bowl.

1/2 cup arborio rice
3 cups milk
1 cup heavy cream
1/4 cup sugar
1/2 vanilla bean, split
3/4 teaspoon almond extract
1/2 pint raspberries

Steps:

  • In a large saucepan, place all the ingredients, except the almond extract and raspberries. Bring it to a gentle boil and then turn it down to a gentle simmer, stirring occasionally to keep it from sticking to the bottom, for about 30 to 40 minutes. Taste the rice to check for doneness. The rice should be very soft and plump.
  • Take the pudding off the heat and stir in the extract. Pour into dessert bowls and stir in some fresh raspberries. Serve immediately.

1/2 cup dried tart cherries or cranberries
2 teaspoons vanilla extract
1 teaspoon fresh lemon juice

Steps:

  • Combine 4 cups milk, rice, sugar, cinnamon and salt in heavy large saucepan. Bring to boil over medium-high heat, stirring frequently. Reduce heat to medium and simmer until rice is very tender, stirring occasionally, about 25 minutes.
  • Whisk cornstarch and 1 tablespoon milk in large bowl to blend. Add eggs; whisk to blend. Whisk in hot rice mixture. Return to saucepan. Add cherries; stir over low heat just until mixture comes to boil. Mix in vanilla and lemon juice. Serve warm or pour pudding into buttered medium bowl. Press plastic wrap onto surface. Chill until cold, at least 8 hours or overnight. Spoon pudding into bowls and serve.

3 cups milk
1/3 cup sugar
1/2 teaspoon almond extract
1/2 cup sliced almonds, toasted
2 ounces medium-dry sherry
1 1/2 cups heavy cream

4 ounces dried cherries (3/4 cup)
1 cup pinot noir or other red wine
2 tablespoons sugar or red currant jelly

Steps:

  • Cook the rice, milk, and sugar in a heavy-bottomed 2-quart saucepan over medium heat until the rice is tender and the milk is absorbed, 30-40 minutes. Remove from the heat and stir in the almond extract, almonds, and sherry. Using a rubber spatula, scrape the pudding into a bowl and chill for at least 1 hour. Whip the cream in an electric mixer on high speed (or by hand) until soft peaks form and then get a little firmer, and fold into the chilled pudding. Serve immediately or refrigerate until ready to serve. Top with warm or cold cherry sauce.
  • Dried Cherry Sauce
  • Place the cherries in a small saucepan with the wine, 1/2 cup water, and the sugar or jelly. Bring to a boil, reduce heat, and simmer until the cherries are tender and the juice is syrupy (approximately 10 minutes).

1/2 teaspoon salt
1 (12 ounce) can evaporated skim milk
1/3 cup brown sugar
1/2 teaspoon orange zest
1/2 cup milk
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract
1/2 cup dried cherries
1/4 cup slivered almonds, toasted

Steps:

  • Cook the rice until tender.
  • Add the evaporated milk, brown sugar and orange zest; cover and cook for 10 minutes.
  • Uncover and cook, stirring frequently, for 10 minutes or until the rice is very creamy and most of the liquid has been absorbed.
  • Stir in the milk, vanilla and almond extracts and remove from heat.
  • Cool to room temperature, stir in the cherries and almonds and refrigerate for 2 hours or until chilled.

Steps:

  • Place cherries in small bowl. Cover with hot water. Let stand 15 minutes. Drain.
  • Combine milk, rice, sugar, orange peel and salt in heavy medium saucepan. Bring to simmer over medium heat, stirring often. Reduce heat to medium-low; simmer gently uncovered until rice is very tender and pudding is creamy, stirring occasionally, about 30 minutes. Mix in cherries and vanilla. Divide among 6 custard cups. 1 egg white
1/2 cup brown sugar or 1/4 cup honey (i used the honey)
1/8 teaspoon salt
1 tablespoon butter, melted
1 tablespoon lemon juice
1/2 cup dried cherries
2 cups short-grain cooked rice

Steps:

  • Preheat oven to 325º.
  • Lightly grease a baking dish with lid (or use individual ramekins).
  • Combine milk, almond extract, eggs, sugar, salt, butter and lemon juice.
  • Beat well.
  • Add cherries and rice; stir to combine.
  • Pour mixture into baking dish.
  • Cover and bake until set, about 45-50 minutes.

1/2 cup arborio rice (see tips, below)
1/4 cup dried cherries (see tips)
2 tablespoons ground almonds
1 teaspoon grated lemon zest
1 pinch salt
4 cups milk (see tips)
2 eggs
1 teaspoon almond extract
toasted sliced almonds (optional)
whipped cream (optional)

Steps:

  • In prepared slow cooker greased stoneware, mix together sugar, rice, cherries, almonds, lemon zest and salt.
  • Whisk together milk, eggs and almond extract, and stir into rice mixture.
  • Cover and cook on high for 4 hours, until rice is tender and pudding is set.
  • Serve warm, garnished with toasted almonds and whipped cream, if desired. Serves 6.
  • TIPS:.
  • Long-grain white rice can be successfully used in this recipe, but the pudding will not be as creamy as one made with arborio rice.
  • Use 1 cup fresh, pitted cherries in place of the dried cherries, if desired. Or substitute an equal quantity of dried cranberries, instead.
  • For a rich pudding, use half milk and half cream.
