MEDITERRANEAN PASTA

Mediterranean Pasta image

Mediterranean Pasta with tomatoes, artichoke, garlic, and lemon. A fast, healthy pasta recipe that's easy to make and filled with bright flavor! Keep the recipe vegetarian or serve with chicken or shrimp. A nutritious all-in-one meal.

Provided by Erin Clarke / Well Plated

Categories     Main Course

Time 20m

Number Of Ingredients 12

1 tablespoon kosher salt (plus 1 teaspoon, divided)
6 ounces whole wheat angel hair pasta (whole wheat spaghetti, or similar whole wheat noodles (I recommend DeLallo whole wheat pasta))
4 cloves garlic
2 cups grape tomatoes (or cherry tomatoes)
1 can quartered artichoke hearts ((14 ounces))
1 can whole pitted black olives ((6 ounces))
3 tablespoons good-quality olive oil
1/2 teaspoon ground black pepper
1/4-1/2 teaspoon crushed red pepper flakes
1/4 cup freshly squeezed lemon juice (about 1 lemon)
1/4 cup freshly grated Parmesan cheese
1/4 cup fresh Italian parsley (chopped)

Steps:

  • Bring a large pot of water to a boil and add 1 tablespoon salt. Cook the pasta until al dente. Reserve 1/2 cup of the pasta water, then drain.
  • While the water boils and pasta cooks, prep your vegetables and remaining ingredients: mince the garlic; halve the cherry tomatoes; drain and roughly chop the artichokes; drain and slice the olives in half. Once the vegetables start cooking, the recipe goes quickly, so you want to be ready.
  • Heat the olive oil in a large skillet over medium high heat. Add the tomatoes, garlic, the remaining 1 teaspoon salt, pepper, and crushed red pepper flakes. Cook, stirring frequently, until the garlic is fragrant and the tomatoes begin to break down and release some juices into the oil, 1 to 2 minutes.
  • Add the pasta to the skillet and toss to coat. Add the artichokes and olives. Drizzle the lemon juice over the pasta. Continue tossing and cook for 1 to 2 minutes, until warmed through. If the pasta seems too dry, add a splash of the reserved pasta water to loosen it. Taste and adjust the salt and pepper as desired. Remove from heat and sprinkle with Parmesan and parsley. Toss once more and enjoy.

ANGEL HAIR PASTA WITH GARLIC, HERBS, AND PARMESAN

Angel Hair Pasta With Garlic, Herbs, and Parmesan image

Simple angel hair pasta side, with olive oil, garlic, herbs and Parmesan. Easy! Cooks in 10 minutes.

Provided by Elise Bauer

Categories     Side Dish     Make-ahead     Quick and Easy

Time 25m

Yield 4

Number Of Ingredients 9

8 ounces angel hair pasta
Salt
1/4 cup extra virgin olive oil
2 tablespoons finely chopped fresh herbs such as rosemary, thyme, oregano
1/4 cup chopped fresh parsley
3 cloves of garlic, sliced
1/8 teaspoon chili pepper flakes (or more to taste)
1/2 to 1 teaspoon of freshly ground black pepper (to taste)
1/2 cup grated Parmesan cheese

Steps:

  • Prepare boiling water for pasta: Bring a large pot of salted water to a boil. (1 tablespoon of salt for every 2 quarts of water).
  • Cook garlic and herbs: While the water is heating in step 1, heat the olive oil in a small saucepan on medium heat. Add the sliced garlic, chili pepper flakes, finely chopped herbs, and chopped parsley to the oil. Cook for one minute or until the parsley has wilted and the garlic is emitting a strong fragrance. Remove from heat.
  • Cook the pasta: The angel hair past will cook in about 2 minutes once it starts, so get everything ready. Once the water is at a rolling boil, add the pasta. Cook at a rolling boil until al dente. Remove 1/2 a cup of the pasta cooking water and set aside. Drain the pasta and rinse briefly with cold water, just enough to stop the cooking, but not so much as to make the pasta cold. The pasta should still be quite warm.

ANGEL HAIR PASTA WITH GARLIC AND PARMESAN

Angel Hair Pasta with Garlic and Parmesan image

Tender angel hair pasta noodles tossed in a delicious coating of sauteed garlic, Parmesan, butter, and olive oil. The perfect side-dish or simple pasta dinner for when you want something yummy but only have ten minutes.

Provided by Maria

Categories     Side Dish

Time 15m

Yield 6-8

Number Of Ingredients 9

1 16 oz package of angel hair pasta
8-10 large segments of garlic, finely chopped (I usually use a whole clove)
4 tbsp butter
4 tbsp olive oil
2 tbsp dried parsley
½ cup freshly grated Parmesan cheese
½ tsp salt
¼ tsp pepper
1 large lemon wedge (optional)

Steps:

  • Boil pasta according to package directions for al dente pasta. Make sure to salt the water.
  • While waiting for water to boil and pasta to cook, add olive oil and butter to a large sauté pan. (You want the pan to be large enough that you will be able to add the pasta once it finishes cooking.)
  • Once butter has melted, add garlic, dried parsley, salt, and pepper. Sauté, stirring constantly, until it starts to turn golden brown. Do not overcook the garlic. Once it starts to turn a light brown or golden, remove from heat.
  • Once pasta is done, drain and quickly add it to the garlic, olive oil, butter mixture. Toss until evenly coated.
  • Add grated Parmesan and squeeze of lemon, if desired. Toss again. At this point, taste it and decide if you need to add more salt. You can also drizzle with a little more olive oil if desired.
  • Salt to taste if needed and serve immediately. I like to reserve a spoonful of the sautéed garlic to put in the center of the serving dish with a little more Parmesan cheese...as pictured.
  • Enjoy!
