SPINACH SWISS QUICHE
Warm wedges of this tasty quiche are packed with convenient frozen spinach, sweet red pepper and Swiss cheese. My family requests this dish year-round. You can saute the bacon mixture the night before to reduce prep time on busy mornings. -April Milner, Dearborn Heights, Michigan

Steps:
- On a lightly floured surface, unroll dough. Transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond edge of plate; flute edges. Line unpricked crust with a double thickness of heavy-duty foil. , Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack. Reduce heat to 350°., In a small skillet, cook the bacon, onion and red pepper until vegetables are tender; drain. Stir in spinach. Spoon spinach mixture into pastry. , In a small bowl, combine the egg substitute, cottage cheese, Swiss cheese and seasonings; pour over spinach mixture., Bake for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting., Serve with sour cream.

CHEDDAR-SWISS SPINACH QUICHE
I got this recipe a few years back on mrbreakfast.com and have been making it since. The recipe makes two pies so I will often freeze one for later or take one to work with me. I have reduced the amount of cheese considerably and also mix up the recipe a bit by using whatever I have on hand. Serving size is for one quarter of a pie. Enjoy!

- Heat oven to 350 degrees.
- In a medium bowl, beat eggs with evaporated milk, dry mustard, salt, and pepper.
- Add the spinach, green onions, and cheeses. Stir well until combined.
- Pour half the mixture into each prepared pie crust.
- Bake for about one hour or until the top is golden brown and the center of the quiche is firm.

CRUSTLESS BACON, SPINACH & SWISS QUICHE - LOW CARB
I've read through a lot of recipes to come up with my version of this quiche. I wanted to make one that is crustless and low carb, and this one is a WINNER! But once I start eating it, I just don't want to stop! I thought I could make it ahead so I could have a quick breakfast on work mornings, but this rarely lasts out the day it was made!

Steps:
- On a foil lined pan, cook bacon in 350 degree F. oven until crisp.
- While bacon cooks, chop onion and shred cheese.
- Heat 1 tablespoon butter and 1 teaspoon oil in skillet over medium heat. Add chopped onion, and stir to coat.
- When onion turns glossy, add thawed spinach, and stir to mix. Heat about 5 minutes, then remove from heat to cool.
- Remove bacon from oven, and place on a paper-towel lined plate to drain.
- Stir together eggs, salt, pepper & heavy whipping cream in a medium bowl.
- Add in cheese, onion/spinach mixture, and bacon. Stir thoroughly to mix.
- Butter a glass pie plate or quiche dish, pour mix in, and pat evenly with a fork.
- Bake in 350 degrees F. oven 25-30 minutes, or until a knife inserted in the center comes out clean.
- Let rest 5 minutes before cutting & serving.
- I bet you can't eat just ONE slice!

SPINACH QUICHE

- Preheat the oven to 350 degrees F (on low fan speed, if using convection). During this time, cover the bottom of the piecrust with aluminum foil and uncooked beans. Place the piecrust in the oven and bake (blind bake) for 10 to 12 minutes to allow the crust to cook. The crust should be light brown on the edges when removing from the oven.
- During the cooking of the crust, whisk together the milk, salt, pepper, nutmeg and eggs in a bowl. After mixing the eggs, in a second bowl, blend together the spinach, bacon, cheese and parsley. Add half of the egg mixture to coat the ingredients, again mixing well. Next, add the mixture to the cooked crust then finish with the remaining egg mixture. Bake in the oven until the middle of the quiche is set, about 20 minutes.
- Remove and serve.
SWISS CHEESE AND SPINACH QUICHE
One of our favorite quiches. From a local hospital cookbook my mom gave me. We omit the salt as the cheese adds enough salt for us. *Note: Make sure the pie crust is a deep dish! We have made this using a regular one before with messy results!

CHEESY SPINACH (OR SWISS CHARD) AND MUSHROOM QUICHE
This quiche is easy to make and really tasty. You can use any kind of cheese combination. Grate the cheese on the large holes of the grater. This is a great way to use up bits and pieces of left over cheese. I usually make this after a party, when I have lots of kinds of left over cheese that may not get used up otherwise. I have even used Parmesan and feta mixed with other cheeses and it always tastes great. Try whisking in 1 1/2 tsp of dijon mustard with the half and half or milk for a little more flavor. I have subsequently made this with 1 bunch of well sauteed, chopped, swiss chard and 1/2 onion, finely diced. I sauteed them in 3 tbsp butter for 15 minutes over med heat, and used 1 1/2 c. of the cooked chard and onion instead of the spinach. Everything else remains the same. It was really, really good.

- Drain the spinach very, very well. I squeeze it and them roll it in paper towels to get all liquid out - otherwise, a soggy pie.
- Place spinach in pie shell.
- Top spinach with mushrooms.
- Sprinkle nutmeg over mushroom.
- Top mushrooms with cheese.
- Beat eggs well and add half and half, salt and pepper.
- Pour egg mixture over cheese, being careful not to let it run over edges of the pie. I use the tip of a knife to move the cheese a bit so that the egg mixture can get through to the bottom of the pie.
- Bake at 350F for 45-50 minutes. Top will be lightly browned and it won't look wet. Let it sit for about 10 minutes before cutting and serving.
