ONE POT CHINESE CHICKEN AND RICE

Steps:
- Mix Sauce in a large bowl. Add chicken and set aside to marinate for 10 minutes to overnight.
- Cut Chinese broccoli stems cut into 2.5 cm/1" pieces, leafy part 5cm/2.5cm pieces.
- Heat oil in a large pot over medium high heat. Remove chicken from marinade, shaking off excess marinade - RESERVE marinade!
- Cook both sides until golden - about 90 seconds on each side, don't let them burn! Remove chicken onto plate.
- Add a touch of oil if pot is dry. Add onion, garlic and ginger, cook for 2 minutes until tinged with gold.
- Add rice, stir to coat grains in oil. Add broth, reserved Marinade and Chinese broccoli stems. Stir.
- Place chicken across the top, pour in juices pooled on plate. Cover, bring to simmer then lower heat to medium.
- Cook for 12 -15 minutes or until liquid is absorbed (tilt pot to check).
- Remove from heat. Working quickly, scatter Chinese broccoli leaves across surface, clamp lid back on.
- Rest for 10 minutes. Remove lid, toss rice and serve, garnished with sesame seeds and green onions. A dollop of your favourite chilli paste wouldn't go astray either!

- In a bowl, stir together warm water, brown sugar, orange juice, soy sauce, ketchup, white vinegar, garlic, red pepper flakes, five-spice powder, and orange peel until the sugar has dissolved and the mixture is well combined.
- Heat the olive oil in a large skillet or wok over medium heat, and cook and stir the chicken until the outside is golden brown and the inside is no longer pink, 10 to 12 minutes. Pour the sauce mixture over the chicken, bring to a boil, reduce heat to medium-low, and cover the skillet. Simmer for 30 minutes, stirring occasionally.

- In a large pot, rinse rice till water runs clear, about 3 to 4 times, drain.
- Add 10 cups (2.4 liters) water to the rice and set it on the stove to boil. When water comes to boil, remove lid, add chicken breasts. As soon as water comes back to a boil, add salt and pepper and reduce heat to simmer for about 30 minutes. If porridge gets too thick at any point, stir in ½ cup (120ml) water to dilute.
- Remove chicken breasts from pot with tongs. Shred the chicken breasts and return shredded meat to the pot.
- Add ginger and one to two teaspoons of sesame oil to the porridge. Turn off heat.
- Serve immediately with a sprinkling of green onions, pepper, and soy sauce. Add a few drops of sesame oil if desired.

- Rub the chicken thighs with the wet rub of shaoxing wine and sesame oil. Add the dry spices and toss to coat. Let marinate for 20 minutes.
- (Optional) Preheat the oven to 400°F (200°C) if you plan to use the oven baking method instead of the stovetop method.
- In a high-sided oven-safe pan (9" or 10" diameter cast iron or carbon steel pan or dutch oven), add the sesame oil and heat over medium-low heat. Add the ginger and garlic and saute until fragrant and lightly golden, 2 to 3 minutes.

- Turn on the broiler. Remove the lid or foil from the pan and move the pan under the broiler. Broil for 5 minutes, or until the chicken skin gets some color and crisps up.
- Remove the pan from the oven and let rest for 5-10 minutes. Serve hot as a main dish.

- In a bowl, mix the cornstarch with the salt and white pepper. Cut the chicken thighs into bite-sized pieces. Dredge the chicken pieces in the cornstarch mixture and shake off any excess. Set aside.
- Heat the oil in a wok (it's also possible to make this recipe with a simple skillet if you don't have one). - Six hours before cooking (or the night before), marinate the chicken. In a container or bowl, soak the rice in water. In a separate container or bowl, rinse, then soak the mushrooms in 1.5 cups of water. Put everything into the fridge.

Slowly add in 1.5 cups water, 1/2 a cup at a time, stirring occasionally and cooking until the water is absorbed before adding more, kind of like making risotto. The rice should be almost, but not quite tender at the end.
- Assemble the lo mai gai in a bowl: lightly oil 4 heat safe bowls. Divide the sausage, mushrooms, and chicken evenly between the bowls. Add the rice to the top, pressing down with with a wet spoon or silicone spatula. Evenly spoon on 1-2 tablespoons of the mushroom and chicken sauce on top of the rice. Cover with foil then steam over high heat for 15 minutes (do this in batches if needed). Let cool slightly, carefully remove from the steamer, remove the foil, and flip onto plates. Serve with scallions, cilantro, and your favorite hot sauce.

- Melt the butter in a small saucepan. Stir in the chicken broth, juice, soy sauce, onion, brown sugar, ginger and cardamom. Season with salt and pepper. Cook over medium heat until it comes to a gentle boil. Let it cook for about 5 minutes.
- In a small bowl, whisk together the cornstarch and the water. Add the cornstarch mixture to the sauce and cook just until the sauce starts to thicken up. (This will probably happen very quickly.) Remove the sauce from the heat.
- Meanwhile, pour a layer of vegetable oil into a large saute pan and warm over medium heat. Add the flour to a shallow dish and season with salt and pepper. Add the egg to another shallow pan and add about a teaspoon of water. Lightly whisk.
- Working in 3-4 batches, take some of the chicken and dip it in the egg mixture. Allow some of the egg to drip off, and put the chicken in the flour mixture to coat. Use tongs to transfer the chicken to the hot oil and pan fry, turning as necessary, until the chicken is golden brown and cooked through. Remove to a paper towel lined plate. Repeat with the remaining chicken, adding more oil as necessary.
