1 cup (180g) uncooked white rice ( (Note 3))
1 1/2 cups (375 ml) chicken broth (, low salt)

Time 1h

Yield 6

Number Of Ingredients 17

⅓ cup warm water
¼ cup packed brown sugar
2 tablespoons orange juice
2 tablespoons soy sauce
2 tablespoons ketchup
1 tablespoon white vinegar
4 cloves garlic, minced
½ teaspoon crushed red pepper flakes
¼ teaspoon Chinese five-spice powder
1 teaspoon grated orange peel
2 tablespoons olive oil
1 ½ pounds skinless, boneless chicken breast halves, cubed
2 cups water
1 cup uncooked white rice
2 teaspoons cornstarch
2 tablespoons cold water
chopped green onions for garnish

Steps:

  • In a bowl, stir together warm water, brown sugar, orange juice, soy sauce, ketchup, white vinegar, garlic, red pepper flakes, five-spice powder, and orange peel until the sugar has dissolved and the mixture is well combined.
  • Heat the olive oil in a large skillet or wok over medium heat, and cook and stir the chicken until the outside is golden brown and the inside is no longer pink, 10 to 12 minutes. Pour the sauce mixture over the chicken, bring to a boil, reduce heat to medium-low, and cover the skillet. Simmer for 30 minutes, stirring occasionally.
  • While the chicken and sauce are simmering, bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Set the rice aside and keep warm.
  • Whisk the cornstarch and 2 tablespoons of cold water in a small bowl until smooth, and stir into the chicken and sauce, a few teaspoons at a time. Let the chicken and sauce cook for about 2 minutes to thicken, then serve over hot cooked rice, sprinkled with green onion.

CHICKEN AND RICE ORIENTAL

Chicken and Rice Oriental image

Easy, easy dinner. I make this a lot when my husband is gone and I don't feel like cooking anything complicated. Makes great leftovers for lunch the next day. I usually cheat and use a roasted chicken from the supermarket--I just heat the shredded meat in butter for a few minutes in step one instead of cooking it.

Provided by jmelyn

Categories     One Dish Meal

Time 24m

Yield 6 serving(s)

Number Of Ingredients 8

2 tablespoons butter or 2 tablespoons margarine
1 lb boneless skinless chicken breast, cut into 1-inch pieces
1 (6 1/4 ounce) package Betty Crocker Chicken Helper chicken and herb rice (I have always used the fried rice flavor, since I can't find chicken and herb)
2 3/4 cups hot water
2 tablespoons soy sauce, to taste
1 tablespoon packed brown sugar, to taste
1 tablespoon crunchy peanut butter
1 (1 lb) bag frozen oriental-style vegetables, thawed

  • Cook chicken in butter 3 to 5 minutes, stirring occasionally, until outside turns white.

ONE-PAN CHINESE CHICKEN AND RICE

One-Pan Chinese Chicken and Rice image

If you don't want to spend your evening washing dishes, try this delicious one-pan Chinese chicken and rice dinner that reveals juicy chicken with crispy skin atop extra-flavorful rice. {Gluten-Free adaptable}To make this dish gluten-free, use tamari instead of soy sauce, and use dry sherry to replace Shaoxing wine.

Provided by Maggie Zhu

Categories     Main

Time 1h10m

Number Of Ingredients 15

4 bone-in skin-on chicken thighs ((about 1.75 lbs / 800 g in total))
1 tablespoon sesame oil
1 " (2.5 cm) ginger (, minced)
3 cloves garlic (, minced)
1 cup long grain white rice (, rinsed and drained)
1 1/2 cup Pacific Foods Organic Chicken Bone Broth with Sea Salt
1 tablespoon soy sauce
1 teaspoon Shaoxing wine ((or dry sherry))
1 teaspoon sesame oil
1/4 teaspoon white pepper ((or black pepper))
1/2 teaspoon ginger powder
1/2 teaspoon garlic powder
1/2 teaspoon cumin powder
1/2 teaspoon Chinese red pepper flakes ((or Korean pepper flakes))
3/4 teaspoon salt

Steps:

  • Rub the chicken thighs with the wet rub of shaoxing wine and sesame oil. Add the dry spices and toss to coat. Let marinate for 20 minutes.
  • (Optional) Preheat the oven to 400°F (200°C) if you plan to use the oven baking method instead of the stovetop method.
  • In a high-sided oven-safe pan (9" or 10" diameter cast iron or carbon steel pan or dutch oven), add the sesame oil and heat over medium-low heat. Add the ginger and garlic and saute until fragrant and lightly golden, 2 to 3 minutes.
  • Add the rice and stir until evenly coated with oil. Turn the heat off.
  • Arrange the rice and make four wells for the chicken. Add the chicken thighs to the wells, skin-side-up, nestling them in so there isn't too much rice underneath.
  • Add the broth and soy sauce. Cover the pan with a lid or aluminum foil.
  • Oven method: Move the pan to the oven and cook for 25 minutes. Once done, check the rice. If the rice is still a bit tough, return the pan to the oven and bake for another 5 minutes.
  • Stovetop method: Bring the broth to a boil. Cover the pan with a lid or aluminum foil, reduce the heat to low, and simmer on the stovetop for 20 minutes.
  • Turn on the broiler. Remove the lid or foil from the pan and move the pan under the broiler. Broil for 5 minutes, or until the chicken skin gets some color and crisps up.
  • Remove the pan from the oven and let rest for 5-10 minutes. Serve hot as a main dish.

CHINESE GARLIC CHICKEN

Chinese Garlic Chicken image

This better-than-takeout garlic chicken makes a great dinner served over a bed of rice but is also perfect as finger food for a party!

Provided by Yummy Addiction

Time 25m

Number Of Ingredients 10

2 Tablespoons cornstarch
salt (, to taste)
ground white pepper (, to taste)
4 boneless skinless chicken thighs
oil (, for frying)
4 cloves garlic (, sliced)
3 scallions (, cut into batons)
2 tablespoons rice wine
2 tablespoons soy sauce
a pinch of sugar

Steps:

  • In a bowl, mix the cornstarch with the salt and white pepper. Cut the chicken thighs into bite-sized pieces. Dredge the chicken pieces in the cornstarch mixture and shake off any excess. Set aside.
  • Heat the oil in a wok (it's also possible to make this recipe with a simple skillet if you don't have one). Add the chicken pieces and shallow fry them for 3-4 minutes or until golden and cooked through. If all the chicken doesn't fit in a single layer, work in batches. When done, remove with a slotted spoon and drain on a paper towel.
  • Clean the wok using a paper towel. Add some oil and stir-fry the garlic and scallions for 1-2 minutes. Add the rice wine, soy sauce, sugar, and a pinch of white pepper. Heat through and return the chicken pieces back into the pan. Mix them into the sauce.
  • Serve over the rice or it's also great as a finger food. Enjoy!

CHICKEN AND BROCCOLI (CHINESE TAKEOUT STYLE)

Chicken and Broccoli (Chinese Takeout Style) image

An easy chicken and broccoli stir fry recipe that yields juicy chicken and crisp broccoli in a rich brown sauce, just like the one at a Chinese restaurant. {Gluten-Free Adaptable}To make this dish gluten free, use dry sherry instead of Shaoxing wine. Use tamari or coconut amino to replace dark soy sauce. And make sure you pick a gluten-free oyster sauce such as this one.

Provided by Maggie Zhu

Categories     Main

Time 25m

Number Of Ingredients 15

1 lb (450 g) boneless skinless chicken breast ((or thigh))
1 tablespoon Shaoxing wine ((or dry sherry))
1/2 teaspoon salt
1 teaspoon cornstarch
3 tablespoons oyster sauce
2 tablespoons Shaoxing wine ((or dry sherry))
1/2 tablespoon dark soy sauce ((or soy sauce))
1/4 cup chicken stock
1 tablespoon sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1 head broccoli (, chopped into bite-sized florets)
2 tablespoons peanut oil ((or vegetable oil))
4 cloves garlic (, minced)
1 teaspoon ginger (, minced)

Steps:

  • Slice the chicken against the grain into thin bite-size pieces, no thicker than 1/4" (1/2 cm), transfer into a medium-size bowl. Add the marinade ingredients. Stir to mix well. Let sit for 10 minutes while preparing other ingredients.
  • Combine all the sauce ingredients in a bowl. Stir to mix well.
  • Bring 1/3 cup of water to a boil in a large nonstick skillet over medium-high heat. Add the broccoli and cover. Steam until the broccoli just turns tender and the water evaporates, about 40 to 50 seconds. Transfer the broccoli to a plate. Wipe the pan with a paper towel held in a pair of tongs if there's any water left.
  • Add the oil and swirl to coat the bottom. Spread the chicken in the skillet in a single layer. Allow to cook without touching for 30 seconds, or until the bottom side is browned. Flip to cook the other side for a few seconds. Stir and cook until the surface is lightly charred and the inside is still pink.
  • Add the garlic and ginger. Stir a few times to release the flavor and fragrance.
  • Return the broccoli to the pan. Stir the sauce again to dissolve the cornstarch completely and pour it into the skillet. Cook and stir until the sauce thickens, about 1 minute. Transfer everything to a plate immediately.
  • Serve hot with steamed rice or boiled noodles as a main dish.

  • Six hours before cooking (or the night before), marinate the chicken. In a container or bowl, soak the rice in water. In a separate container or bowl, rinse, then soak the mushrooms in 1.5 cups of water. Put everything into the fridge.
  • After everything is soaked and marinated, add the mushrooms, with their soaking liquid, the oyster sauce, soy sauce, dark soy sauce, and sesame oil to a saucepan and bring to a boil over medium high heat. Add the marinated chicken and simmer until the chicken is cooked through, 5-7 minutes. While the chicken is cooking, whisk 1 tablespoon cornstarch with 2 tablespoons water. Slowly add the cornstarch slurry to the pot. Stir and let the sauce thicken, 1-2 minutes. Remove from the heat and set aside.
  • Drain the rice very well and set aside. Add 2 tablespoons of oil to a wok or a large non-stick frying pan over medium high heat. When shimmery, add the shallot and cook, stirring, until soft. Stir in the garlic, and when fragrant, add the drained rice, tossing to coat in the oil. Stir in the soy sauces, toasted sesame oil, and five spice. Slowly add in 1.5 cups water, 1/2 a cup at a time, stirring occasionally and cooking until the water is absorbed before adding more, kind of like making risotto. The rice should be almost, but not quite tender at the end.
  • Assemble the lo mai gai in a bowl: lightly oil 4 heat safe bowls. Divide the sausage, mushrooms, and chicken evenly between the bowls. Add the rice to the top, pressing down with with a wet spoon or silicone spatula. Evenly spoon on 1-2 tablespoons of the mushroom and chicken sauce on top of the rice. Cover with foil then steam over high heat for 15 minutes (do this in batches if needed). Let cool slightly, carefully remove from the steamer, remove the foil, and flip onto plates. Serve with scallions, cilantro, and your favorite hot sauce.

  • Melt the butter in a small saucepan. Stir in the chicken broth, juice, soy sauce, onion, brown sugar, ginger and cardamom. Season with salt and pepper. Cook over medium heat until it comes to a gentle boil. Let it cook for about 5 minutes.
  • In a small bowl, whisk together the cornstarch and the water. Add the cornstarch mixture to the sauce and cook just until the sauce starts to thicken up. (This will probably happen very quickly.) Remove the sauce from the heat.
  • Meanwhile, pour a layer of vegetable oil into a large saute pan and warm over medium heat. Add the flour to a shallow dish and season with salt and pepper. Add the egg to another shallow pan and add about a teaspoon of water. Lightly whisk.
  • Working in 3-4 batches, take some of the chicken and dip it in the egg mixture. Allow some of the egg to drip off, and put the chicken in the flour mixture to coat. Use tongs to transfer the chicken to the hot oil and pan fry, turning as necessary, until the chicken is golden brown and cooked through. Remove to a paper towel lined plate. Repeat with the remaining chicken, adding more oil as necessary.

Homemade Rice Oriental. For those that used to love HB Helper Rice Oriental before it was discontinued this comes pretty close. It could be made healthier using ground turkey and fresh veggies instead of powdered but my family won't eat it that way. Also good with mushrooms added in the last few minutes of cooking.
