1 cup vanilla yogurt: any brand will do- just pick your favorite!
-3 tbsp honey
3 tsp lime juice
-1 tablespoon coconut

Steps:

  • Place all the ingredients together in a medium sized bowl
  • Stir until all the ingredients are mixed together
  • Pour your dressing over your fruit salad
  • Gently mix your fruit and dressing together until well coated
  • Place in the refrigerator until ready to serve

This is an adaptation of several slightly different recipes, but slightly different from the rest. My family LOVES it--and so does everyone else who's tasted it! This is also wonderful as a topping for belgian waffles.

2 tablespoons flour
1/2 cup sugar
2 eggs
1 (20 ounce) can pineapple tidbits, juice of
1 lemon, juice of
1 orange, juice of
vinegar (approx. 1 T)
1 grated lemon, rind of
1/2 grated orange, rind of
1/2 pint whipping cream, whipped
2 -3 apples
2 oranges
3 -4 bananas
1 (20 ounce) can pineapple tidbits (you used the juice in the dressing!)
1 cup grapes
1 cup cherries (fresh, frozen, or canned)
fruit (in season, canned, or frozen)
miniature marshmallow (to taste(I use 1/2 bag)

Steps:

  • Whisk the flour & sugar together. Beat eggs until light, and whisk in flour & sugar.
  • Drain a can of pineapple tidbits into a 2-cup measure, add the lemon and orange juices, and pour in enough vinegar to make 1-1/4 cups total liquid.
  • Add to the egg mixture. Cook in double boiler, stirring constantly, until thickened.
  • Chill thorougly, then fold in whipped cream.
  • Fold into your mixed fruit--you really can use whatever fruit you have on hand. I've added mango, pears, starfruit, kiwi, and I can't remember what all!
  • Chill and enjoy!

1 can (20 ounces) unsweetened pineapple chunks
1 can (15 ounces) reduced-sugar sliced pears, drained
1 can (15 ounces) sliced peaches in juice, drained
1-1/2 cups seedless red grapes
1 package (3 ounces) cook-and-serve vanilla pudding mix
2 medium firm bananas
3 tablespoons lemon juice
1 jar (10 ounces) maraschino cherries, well drained

Steps:

  • Drain pineapple, reserving juice in a 1-cup measuring cup. In a large bowl, combine the pineapple, pears, peaches and grapes. Cover and refrigerate. , Add enough water to pineapple juice to measure 1 cup. Pour into a small saucepan. Whisk in pudding mix. Bring to a boil over medium heat, stirring constantly. Remove from heat; set aside to cool to room temperature., Slice bananas into a small bowl. Drizzle with lemon juice; gently toss to coast. Let stand for 5 minutes; drain. Add bananas and cherries to chilled fruit. Add cooled pudding; toss gently to combine. Refrigerate until serving. Refrigerate leftovers.

1/2 cup plain yogurt
1/4 cup mayonnaise
1 teaspoon lemon juice
1 teaspoon honey
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
Freshly ground black pepper
1 Granny Smith apple, cored and diced
1 cup seedless grapes, halved
1 pear, peeled, cored and diced
10 to 12 medium size strawberries, halved
1 mango, peeled and diced
1 banana, sliced
1/3 cup chopped walnuts, toasted

Steps:

  • In a small mixing bowl whisk together the yogurt, mayonnaise, lemon juice, honey, vanilla extract and salt. Season with pepper, to taste. Set aside.
  • Place all of the fruit and the nuts into a large mixing bowl and toss to combine. Add the dressing, toss and serve.

PERFECT SUMMER FRUIT SALAD

The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
2 cups blueberries

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

  • This is a sweet and sour dressing and may be used on fruit salads, especially Waldorf, cabbage slaw, carrot and raisin, or even poured over head lettuce.

This is my grandmother's recipe for the salad dressing she used instead of mayonaise. (I never tasted mayo until I was a teenager). We used it in pasta salads, egg and tuna salads and sandwiches. I still don't eat BLTs without the tang of this dressing. Grandma made hers on the stovetop and had to stir constantly to avoid scorching. I now do mine in the microwave and no longer have to worry about that.

1/2 cup sugar
1 tablespoon cornstarch
1/2 teaspoon salt
1 egg
1/4 cup vinegar (either white or cider )
1/2 cup hot water
2 tablespoons prepared yellow mustard (Dijon, Honey Mustard or other flavors will work)
1 tablespoon butter

Steps:

  • In microwave safe bowl mix sugar, cornstarch and salt.
  • Whisk in the egg, vinegar, water and mustard.
  • Microwave on high for 3 minutes then stir.
  • Microwave again on high for 1 minute then stir and repeat in 1 minute increments until dressing comes to a boil and thickens - about 5 - 6 minutes total cook time. (It will continue to thicken as it cools).
  • Add butter.
  • Store in refrigerator.
