2 ¼ cups all-purpose flour, or more if needed
1 envelope Fleischmann's® RapidRise Yeast
1 ½ tablespoons sugar
1 ½ teaspoons salt
½ teaspoon Spice Islands® Garlic Powder
½ cup water
½ cup milk
1 tablespoon butter or margarine, softened
1 egg white
1 tablespoon grated Parmesan cheese

Steps:

  • Combine 1-1/2 cups flour, undissolved yeast, sugar, salt and garlic powder in a large mixer bowl. Heat water, milk and butter until very warm (120 degrees F to 130 degrees F). Add to dry ingredients and beat for 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in enough additional flour to make a soft dough.
  • Cover and let dough rest 10 minutes in bowl.
  • Portion dough evenly into 12 to 15 greased muffin cups (2-1/2 x 1-1/4 inches).
  • Tip: Use an ice cream scoop to make portioning easier. Cover; let rise in warm, draft free place until doubled in bulk, about 35 minutes.
  • Combine egg white with 1 tablespoon water. Carefully brush tops of rolls with egg mixture; sprinkle with cheese. Bake at 375 degrees F for 15 to 18 minutes, or until lightly browned on top. Remove from pans and cool on wire rack.

A bread made without yeast with swirls of herb and pockets of cheese throughout. Slices well and especially great toasted!

4 tbsp fresh herbs (, finely chopped (I used a mix of dill, rosemary, parsley and thyme) (Note 1))
2 tbsp olive oil
5 oz / 150g block cheese ((cheddar or tasty), cut into 2mm / 0.1" thick slices (about 10 to 12 slices) (Note 2))
Butter for greasing
2 1/4 cups plain flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 1/4 cups buttermilk ((See Note 3 for substitute))
2 eggs
2 small garlic cloves (, crushed)

Steps:

  • Preheat oven to 180C/350F.
  • Grease a bread tin (21 x 11 cm / 8" x 4") or small cake tin with butter.
  • Mix the herbs and olive oil in a small bowl.
  • Sift the Dry Ingredients into a bowl.
  • Combine the Wet Ingredients into a bowl and whisk to combine.
  • Make a well in the centre of the Dry Ingredients. Pour the Wet Ingredients in and mix until just combined.
  • Pour 1/3 of the batter into the bread tin. Dollop half the herbs across the top then use a knife to "swirl" it into the batter up and down, and also turning the batter over (refer photo below).
  • Use half the cheese slices and push them randomly into the batter. Push some all the way in and leave some poking out of the batter.
  • Pour the remaining batter over the top. Dollop and swirl the remaining herbs, then randomly wedge in the remaining cheese, pushing most of it below the surface of the batter. Even out the surface.
  • Bake for 30 minutes, or until the top is golden. Remove from oven and cover with foil, then bake for a further 15 to 20 minutes (total baking time of 45 to 50 minutes). Check to make sure the centre is cooked by inserting a skewer - it should come out clean.
  • Turn the bread out onto a cooking rack. Allow to cool for at least 10 minutes before cutting.

I just came up with this one (literally like 3 hours ago) for the picnic tonight at a friends house and I have limited ingredients at home (as in I already used up the yeast we had earlier) and I only had/have a short amount of time to make them (yay procrastination!). I modified a yeast free pizza dough recipe, and freshly made they are tasty and very similar to yeast rolls (not quite as chewy). As I found it virtually impossible to find a more-than-basic-rolls recipe with my short amount of patience with internet searches, I decided to contribute to the world wide web of recipes for the other quickly bored friends out there. I did this by hand (in a deep metal skillet, but that's beside the point) as well, so I don't know how it will translate to the mechanical world. Also I made 2 batches, so that's why the yield is a little weird and I can let you know that mixing the dry ingredients is not necessary but helps (I forgot the baking soda and salt at first on the second batch).

2 1/2 cups whole wheat flour
6 teaspoons baking powder
2 teaspoons salt

Steps:

  • Preheat the oven to 375 degrees Fahrenheit and grease 24-count muffin tin(s).
  • Mix the dry ingredients (all-purpose and wheat flours, baking powder, and salt) until homogeneous (looks the same throughout).
  • Add wet ingredients (olive oil, eggs, and water*).
  • Knead dough for 2-3 minutes.
  • Fill each section of the muffin tin(s) so that the top part of the dough comes just above the rim and the majority of the section is filled (may not fill all of the tins).
  • Bake at 375 degrees for 10 minutes or until the dough is a slightly darker brown and has a hard outer shell but still gives (not like dough but soft bread).
  • Garlic Sauce: put all of the ingredients (olive oil, butter, garlic powder, and oregano) into a small bowl and whisk with a fork until the mixture looks creamy** and you cannot see any large lumps of butter (pin head sized lumps are okay).
  • Brush the rolls with liberal amounts of the Garlic Sauce right when they come out of the oven before you take them out of the tin(s).
  • *Add 1-1/2 cups of water to begin with and then add small amounts as you mix until a very slightly sticky dough forms and there is no more flour.
  • **should look kind of like the garlic sauce from a "fast-food" pizza chain.

1 1/4 cups warm milk (100°-105°F)
1 package rapid rise yeast
2 tablespoons sugar
1 1/2 teaspoons kosher salt
3 extra large eggs
4 tablespoons butter (at room temperature)
4 1/2 cups bread flour (divided)
1 cup parmesan cheese (freshly grated)
2 tablespoons butter (melted)
1/4 cup parmesan cheese (freshly grated)
2 tablespoons chopped parsley

Steps:

  • In a small bowl, lightly beat 2 of the eggs with a fork and set aside.
  • In the bowl attachment of a stand mixer combine the milk and yeast (Make sure the milk is between 100° and 105° -- too hot and it will kill the yeast - and the rolls won't rise). Use a conventional whisk to whisk together the yeast and the milk. Add the sugar, salt, beaten eggs, butter, and 1 cup of the bread flour and the parmesan cheese. Whisk together to combine.
  • Add the remaining 3 1/2 cups of bread flour and place the mixing bowl in the stand mixer. Attach the dough hook and knead the flour into the yeast mixture on medium speed for 6-7 minutes or until dough is soft and elastic.
  • Lightly oil a large mixing bowl with canola oil and set the dough in the center, turning once or twice to get a light sheen of oil on the dough. Cover the dough with a tea towel and set it in a cold oven to proof for one hour, or until doubled in size.
  • Spray vegetable spray in a large rectangular pan (I used my lasagna pan 11" x 15") or use two smaller pans. Divide the dough into quarters. Divide each quarter into sixths and roll each into a ball. Place in the pan so that the dough balls do not touch.
  • Lay a piece of wax paper over the rolls and set in a cold oven to rise for another hour. When the dough has doubled in volume, remove it from the oven and preheat the oven to 375°.
  • Lightly beat the remaining egg and brush it over the rolls. The egg wash gives the rolls a sheen. When the oven is hot, bake the rolls for 20 minutes.
  • Remove the rolls from the oven and brush with melted butter. Sprinkle with parmesan cheese and parsley. Serve.

1/4 cup sugar
2 1/2 tsp instant yeast
1 1/2 tsp salt
1 tsp soy lethicin (optional)
4 1/2 cups bread flour (more or less)
1/2 cup melted salted butter
1/2 tsp garlic powder
1/8 tsp Italian seasoning
1/8 tsp parsley
2 tsp Kraft parmesan cheese (in the green can)

Steps:

  • Combine water, sugar, yeast, and salt in a large mixing bowl. Add soy lecithin if desired.
  • Add 2-3 cups of the flour and beat for 5 minutes. Stir in additional flour till you have a soft dough.
  • Let rest 5 minutes, then roll out on a counter sprayed with non stick cooking spray.
  • Cut into pieces with the edge of a glass or cup. Place cut pieces into muffin cups sprayed with non stick cooking spray.
  • Whisk together the garlic butter ingredients and brush the tops of the rolls lightly with the mixture.
  • Let raise 20- 30 minutes.
  • Bake at 350 for 15-20 minutes or until tops are lightly browned. (The bottoms brown quickly, I like to cook mine on an upper rack)
  • Brush the remaining garlic butter over the hot rolls.
