Here's what you need: plain biscuit, butter, cream cheese, double cream, white chocolate, vanilla extract, strawberry, raspberry, blueberry

3 cups plain biscuit
½ cup butter, melted
1 ⅔ cups cream cheese
1 ½ cups double cream
½ cup white chocolate, melted
1 teaspoon vanilla extract
½ cup strawberry
¼ cup raspberry
½ cup blueberry

Steps:

  • Throw the biscuits into a food processor and mix until you have fine crumbs.
  • Stir in the butter.
  • Pour into a greased springform tin and spread to make sure the base is even.
  • Chill for 10 minutes.
  • While the biscuit base is chilling, prepare the filling by whipping the cream cheese and double cream until you have soft peaks.
  • Fold in the melted white chocolate and vanilla extract.
  • Pour and spread on top of the biscuit base.
  • Place the berries on top.
  • Chill for 1 hour.
  • Enjoy!

1 9-ounce box chocolate wafer cookies, broken
2 ounces bittersweet (not unsweetened) or semisweet chocolate, coarsely chopped
5 tablespoons unsalted butter, melted
Filling
4 8-ounce packages cream cheese, room temperature
1 1/2 cups sugar
3 tablespoons all purpose flour
4 large eggs
2 teaspoons grated orange peel
1 teaspoon vanilla extract
Topping
1/2 cup sugar
3 tablespoons water
1 teaspoon cornstarch dissolved in 1 tablespoon water
2 cups fresh cranberries
1/2 teaspoon grated orange peel

Steps:

  • For crust:
  • Preheat oven to 325°F. Finely grind cookies and chocolate in processor. Add butter; blend until moist clumps form. Using plastic wrap as aid, press crumb mixture onto bottom and 1 1/4 inches up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Bake until set, about 8 minutes. Cool completely.
  • For filling:
  • Increase oven temperature to 350°F. Wrap 2 layers of heavy-duty foil around bottom and up sides of springform pan. Using electric mixer, beat cream cheese and sugar in large bowl until light. Beat in flour. Beat in eggs, 1 at a time, just until blended. Beat in orange peel and vanilla.
  • Pour filling into crust. Place springform pan in large roasting pan. Fill roasting pan with enough hot water to come halfway up sides of springform pan. Bake until filling is just set in center but still moves slightly, about 55 minutes. Remove cake from water bath; transfer to rack and cool completely, about 4 hours. Cover and chill overnight.
  • For topping:
  • Stir sugar and water in medium saucepan over medium-low heat until sugar dissolves. Increase heat to medium; add cornstarch mixture and bring to simmer. Add cranberries; cook until beginning to pop, stirring often, about 3 minutes. Stir in orange peel. Cool completely. Cover and chill overnight. (Cheesecake and cranberry mixture can be made 2 days ahead. Keep refrigerated.)
  • Run knife around top edge of cheesecake to loosen. Release pan sides. Top cheesecake with cranberry mixture. Chill until set, about 1 hour.

Unsalted butter, room temperature, for pan
1/2 recipe Chocolate Wafer Cookie Crust
6 ounces raspberries
2 1/4 cups sugar, plus 2 tablespoons
3 1/2 pounds (seven 8-ounce packages) cream cheese, room temperature
1/2 cup unbleached all-purpose flour
1 cup sour cream, room temperature
1 1/2 teaspoon pure vanilla extract
5 large eggs

Steps:

  • Preheat the oven to 350 degrees. Butter a 10-inch springform pan. Press the dough into the bottom of the pan, patting it into an even layer. Wrap the exterior of the pan (including the base) in a double layer of foil. Freeze the dough in the pan for 5 minutes.
  • Place the pan on a baking sheet. Bake until the crust is firm to the touch, 12 to 15 minutes. Transfer pan to a wire rack to cool completely.
  • Process raspberries and 2 tablespoons sugar in a food processor until smooth, about 30 seconds. Pass puree through a fine sieve into a small bowl; discarding solids; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the cream cheese on medium speed until fluffy, about 3 minutes, scraping down the sides as needed. In a large bowl, whisk together remaining 2 1/4 cups sugar and flour. With the mixer on low speed, gradually add sugar mixture to cream cheese, mix until smooth. Add sour cream and vanilla; mix until smooth. Add eggs, one at a time, beating until just combined; do not overmix.
  • Transfer reserved raspberry sauce to a small squeeze bottle; set aside. Pour cream-cheese filling into the prepared pan. Pipe reserved sauce evenly on top of cake in teaspoon-size amounts. With a wooden skewer or toothpick, swirl the sauce into filling.
  • Set pan inside a large, shallow roasting pan. Carefully ladle boiling water into roasting pan to reach halfway up sides of springform pan. Bake 45 minutes; reduce oven temperature to 325 degrees. Continue baking until cake is set but still slightly wobbly in the center, about 30 minutes more. Turn off oven; leave cake in oven with the door slightly ajar, 1 hour. Transfer pan to a wire rack; let cool completely. Refrigerate, uncovered, at least 6 hours or overnight. Before unmolding, run a knife around the edge of the cake.

1 1/2 cups graham cracker crumbs (10 crackers)
1 tablespoon sugar
6 tablespoons (3/4 stick) unsalted butter, melted
2 1/2 pounds cream cheese, at room temperature
1 1/2 cups sugar
5 whole extra-large eggs, at room temperature
2 extra-large egg yolks, at room temperature
1/4 cup sour cream
1 tablespoon grated lemon zest (2 lemons)
1 1/2 teaspoons pure vanilla extract
1 cup red jelly (not jam) such as currant, raspberry, or strawberry
1/2 pint sliced strawberries
1/2 pint fresh raspberries
1/2 pint fresh blueberries

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the crust, combine the graham crackers, sugar, and melted butter until moistened. Pour into a 9-inch springform pan. With your hands, press the crumbs into the bottom of the pan and about 1-inch up the sides. Bake for 8 minutes. Cool to room temperature.
  • Raise the oven temperature to 450 degrees F.
  • To make the filling, cream the cream cheese and sugar in the bowl of an electric mixer fitted with a paddle attachment on medium-high speed until light and fluffy, about 5 minutes. Reduce the speed of the mixer to medium and add the eggs and egg yolks, 2 at a time, mixing well. Scrape down the bowl and beater, as necessary. With the mixer on low, add the sour cream, lemon zest, and vanilla. Mix thoroughly and pour into the cooled crust.
  • Bake for 15 minutes. Turn the oven temperature down to 225 degrees and bake for another 1 hour and 15 minutes. Turn the oven off and open the door wide. The cake will not be completely set in the center. Allow the cake to sit in the oven with the door open for 30 minutes. Take the cake out of the oven and allow it to sit at room temperature for another 2 to 3 hours, until completely cooled. Wrap and refrigerate overnight.
  • Remove the cake from the springform pan by carefully running a hot knife around the outside of the cake. Leave the cake on the bottom of the springform pan for serving.
  • To make the topping, melt the jelly in a small pan over low heat. In a bowl, toss berries and the warm jelly gently until well mixed. Arrange the berries on top of the cake. Refrigerate until ready to serve.

A stunning no-cook pudding bursting with summer flavours - great for relaxed entertaining

2 x 150g bars white chocolate
2 x 300g tubs soft cheese (we used Philadelphia)
284ml pot double cream
50g caster sugar
170g punnet raspberries
5 tbsp raspberry jam
85g amaretti biscuits
200g small strawberries
a few blueberries (optional)

Steps:

  • Break the chocolate into a glass bowl, then put it over a pan of just simmering water to melt, making sure the bottom of the bowl doesn't touch the water. Line a lightly oiled 900g loaf tin with cling film.
  • Whisk the cheese, cream and sugar together, preferably with electric beaters, then stir into the almost-cool melted white chocolate until well combined.
  • Stir 50g raspberries with 2 tbsp of the jam. Spoon half the cheese mixture into the loaf tin, then spoon the jammy raspberries down the centre. Top with the rest of the cheese mixture, level the top, then press in the biscuits. Cover and chill for 6 hrs or overnight.
  • Set aside about 6 strawberries. Halve the rest, then warm in a pan with the remaining jam until soft. Whizz in a food processor or with a hand blender, then rub through a sieve to remove the seeds and make a sauce. Add a drop of water if the sauce is too thick.
  • To serve, carefully turn the tin onto a plate, lift it away and strip off the cling film. Halve the remaining strawberries, then arrange on top of the cake with the remaining raspberries and blueberries (if using). Pour over a little sauce and serve the rest separately for drizzling over.

1 (12 ounce) package frozen sweetened raspberries
1/3 cup sugar
1 teaspoon cornstarch
1 1/2 cups crushed chocolate wafers (about 25)
4 tablespoons melted butter
1 (6 ounce) package white chocolate baking squares, chopped
3 (8 ounce) packages cream cheese, softened
1/2 cup sugar
3 eggs

Steps:

  • FOR SAUCE.
  • Thaw berries, do not drain.
  • Place half of the berries in a blender or food processor. Blend until smooth. Press berries through a fine mesh sieve and discard seeds, Repeat with remaining berries, reserving 10 -15.
  • In a small saucepan stir together the 1/3 cup sugar and the cornstarch. Add sieved berries. Cook and stir until thick and bubbly. Remove from heat, and set aside 2 tablespoons of sauce, along with reserved berries. Cover and chill remaining sauce until serving time,.
  • FOR CRUMB CRUST.
  • In a medium bowl combine crushed chocolate wafers and melted butter. Press into a 9 inch spring form pan. Set aside.
  • Start preheating oven to 350.
  • FOR CHEESECAKE.
  • In a small saucepan, melt white chocolate over very low heat, stirring constantly. Set aside to cool.
  • In a large mixing bowl, combine cream cheese and the 1/2 cup sugar. beat with an electric mixer on medium speed until combined.
  • Add eggs, beating just until combined.
  • Beat in melted white chocolate again just until combined.
  • Spread over crust, and add in reserved berries. You can add them in specific places or just let them fall in randomly which adds an artistic effect.
  • Drizzle the reserved raspberry sauce over filling and carefully marble the topping with a knife.
  • Bake in a 350 oven for 40-45 minutes or until center appears set when shaken. DO NOT OVERBAKE. Cool for 15 minutes in pan on a wire rack. Loosen crust from side of pan and cool for an additional 30 minutes Remove side of pan. COOL COMPLETELY. Chill for at least 4 hours (preferably 24 hours) before slicing. Serve with remaining sauce.

5 packages (8 ounces each) cream cheese, softened

1 cup sour cream
1/2 cup heavy whipping cream
2 teaspoons vanilla extract
7 large eggs, lightly beaten
TOPPINGS:
1 package (12 ounces) frozen raspberries or blueberries , thawed
1/2 cup sugar
2 cups heavy whipping cream
1/2 cup confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. Place a greased 10-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around outside of pan. Place on a baking sheet., In a small bowl, mix cracker crumbs and sugar; stir in butter. Press onto bottom and 1 in. up sides of prepared pan. Bake 8 minutes. Cool on a wire rack., In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream, cream and vanilla. Add eggs; beat on low speed just until blended. Pour into crust. Place springform pan in a larger baking pan; add 1 in. of hot water to larger pan., Bake 50-60 minutes or until center is just set and top appears dull. Remove springform pan from water bath. Cool cheesecake on a wire rack for 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., For toppings, place berries and sugar in a food processor; process until blended. In a small bowl, beat cream until it begins to thicken.
