PUDDING-BANANA SPLIT

- Beat pudding mix and milk in large bowl with whisk 2 min. Stir in 1-1/2 cups COOL WHIP; spread onto bottom of 8-inch square pan. Freeze 3 hours or until firm enough to scoop.
- Chop 16 wafers. Spoon scant tablespoonful of the chopped wafers into each of 8 parfait glasses or dessert dishes. Scoop 1/4 cup of the pudding mixture into each glass; sprinkle with remaining chopped wafers.
- Cut bananas lengthwise in half, then cut each piece crosswise in half. Stand 1 banana piece in each parfait glass. Fill with remaining COOL WHIP and wafers; top with cherries.

- In a large bowl, whisk milk and pudding mix for 2 minutes. Let set for two minutes or until soft-set. Add the banana, strawberries and pineapple., Transfer to a large serving bowl. Dollop with whipped topping. Drizzle with chocolate syrup; sprinkle with pecans. Top with additional strawberries and bananas if desired.

BANANA PUDDING
Steps:
- Combine the milk and vanilla bean in a small saucepan and bring just to a boil over medium heat. Immediately turn off the heat and set aside to infuse for 10 minutes.
- Whisk the egg yolks and granulated sugar together until light and fluffy. Add the cornstarch and whisk vigorously until no lumps remain. Whisk in 1/4 cup of the hot milk mixture until incorporated. Whisk in the remaining hot milk mixture, reserving the empty saucepan.
- Pour the mixture through a strainer back into the saucepan. Cook over medium-high heat, whisking constantly, until thickened and slowly boiling. Remove from the heat and stir in the butter.
- Stir in the banana slices and pour into dessert cups and chill, covered if you don't want a skin, uncovered if skin is your thing.
- Whip the cream with the sugar and cocoa powder until stiff. Keep chilled until ready to serve. Cut banana leaves in long triangles and stick it at the back of the pudding for decoration. Top pudding with a dollop of cocoa whipped cream.
BANANA SPLIT PUDDING BROWNIES
From Vegan With A Vengeance. This is a really fudgy brownie with a banana pudding on top that melts into the brownie layer and forms this unbelievable ooey gooey banana brownie concoction. Although you can hold it in your hand, you may want to serve it with a fork. Enjoy!

- Preheat oven to 350°F
- Spray a 9x13-inch baking pan with nonstick cooking spray or very lightly grease with oil.
- TO MAKE THE BROWNIE BATTER: Melt the chocolate by placing in a pan or heat-proof mixing bowl over a small pot of boiling water.
- Stir with a heatproof spatula until completely melted, then remove from heat and set aside to cool.
- In a large mixing bowl, combine 1 cup of mashed banana, the oil, and the sugar. Use a handheld mixer to beat everything together for about a minute. If you don't have a mixer, use a strong fork and mix for about 3 minutes.
- Mix in the vanilla and melted chocolate.
- In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.
- Add this to the banana mixture in batches, mixing with the hand mixer as you go along. Mix for about 1 minute more.
- PREPARE THE BANANA TOPPING: In a small bowl, combine all topping ingredients and mix with the hand mixer (remember to rinse the beaters off first) for about a minute.
- TO ASSEMBLE AND BAKE THE BROWNIES: Spread the brownie batter evenly into baking pan. Pour the banana topping over that and spread evenly.
- Bake for 30 minutes. Remove from oven and let cool.
- After about 15 minutes, move it to the fridge until fully cooled.
- Cut into twelve squares, place a few slices of banana on top of each portion, and serve.
