3 skinless, boneless chicken breast halves, halved
2 (15 ounce) cans green beans, drained
6 red potatoes, cut into chunks
1 (.6 ounce) packet zesty Italian salad dressing mix
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts in a single layer in the center of a 9x13-inch baking dish. Pour green beans into one side of the baking dish. Spread potatoes out on the other side of the dish.
  • Sprinkle dressing mix over chicken, beans, and potatoes; drizzle butter over the top. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until chicken breasts are no longer pink in the center and the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This is a long time family favorite. I am not sure where it came from, but it's a great easy meal for a weeknight dinner.

3 tablespoons butter
1 teaspoon garlic, finely chopped
3 lbs chicken legs
2 cups chicken broth
1/2 cup water
3 cups egg noodles, uncooked
1 (16 ounce) package frozen cut green beans
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme leaves
1 medium red onion

Steps:

  • In a dutch oven, melt butter. Stir in garlic.
  • Add chicken, cook over medium-high heat, stirring occasionally until chicken is light golden brown.
  • Add Chicken broth and water, stirring occasionally, until chicken is no longer pink.
  • Reduce heat to medium, stir in all remaining ingredients except onion.
  • Cover the pot and continue to cook, until chicken and noodles are fork tender (10 to 15 minutes).
  • Cut the onion into eight wedges.
  • Stir in onion, cover and continue to cook for 5 minutes until onion is tender.
  • Let stand 5 minutes.

Take the stress out of a Sunday roast with this one-pan recipe that couldn't be simpler

1½ kg chicken
1 lemon, halved
50g softened butter
2 tsp dried mixed herbs
750g potatoes, chopped into roastie size
about 7 carrots, roughly 500g, each chopped into 2-3 chunks
2 tbsp olive oil
100g frozen peas
300ml chicken stock
1 tsp Marmite

Steps:

  • Heat oven to 220C/200C fan/gas 7. Snip the string or elastic off the chicken if it's tied up, then place in a big roasting tin. Shove the lemon halves into the cavity. Rub the butter, herbs and seasoning all over the chicken. Put the potatoes and carrots around it, drizzle everything with oil, season and toss together.
  • Roast for 20 mins, then turn the oven down to 200C/180C fan/gas 6 and roast for 50 mins more. Stir the peas, stock and Marmite into the veg in the tin, then return to the oven for 10 mins more.
