SHRIMP APPETIZER SPREAD

- In a large bowl, beat the cream cheese, sour cream and mayonnaise until smooth. , Spread mixture on a round 12-in. serving platter. Top with seafood sauce. Sprinkle with shrimp, mozzarella, green pepper, tomato and onions. Refrigerate until serving. Serve with crackers.

SEAFOOD CHEESECAKE- SAVORY
This recipe uses wheat crackers in the crust and the filling is cream cheese, minced clams, shrimp or crabmeat, sour cream and cheddar cheese. Great spread on crackers- You will be the hit of the party or buffet table with this delicious morsel. Epicurean recipe, changed a bit by me.

- Heat oven to 300^. Combine crackers and butter, mix well together. Butter or spray a 1 1/2 quart ovenproof casserole dish;line the bottom with waxed paper or parchment paper and butter or spray this paper too. Sprinkle 1/2 the crumb mixture on bottom of dish;reserve remainder of crumb mixture for top; set aside.
- In food processor fitted with a metal blade, finely chop onion. Add remaining ingredients, except reserved cracker crumb mixture. Process mixture 45 seconds ,until smooth. Pour into prepared dish; sprinkle with reserved cracker crumbs.
- Place dish in larger pan; place both in oven and fill larger pan with boiling water to about 2 inch deep. Bake 1 hour-until a knife inserted in cheesecake 1 inch from center comes out clean.
- Turn off oven; let cheesecake remain in oven for 30 minutes.Remove from oven. Cool on a wire rack until room temperature. Cover and refrigerate until cold - about 4 hours or overnight.
- To Unmold: Run a metal spatula or long knife along edge of pan; invert onto serving plate; remove wax paper; garnish with lemon zest and bagel chip, if desired.
CRAB DELIGHTS
Have these as appetizers or a light lunch. Using English muffins and canned crab meat. You can store in freezer until ready to use, then cook them. This is also good with Clam Chowder for lunch or dinner. Enjoy!

- Preheat oven to 400 degrees F (200 degrees C).
- In a medium-size mixing bowl, combine crabmeat, cheese spread, butter or margarine, mayonnaise, garlic salt, and parsley. Mix well, and spread on English muffins. Cut the muffins into quarters and arrange them on a cookie sheet.
- Bake at 400 degrees F (200 degrees C) for 15 minutes. Broil the muffins for the last minute to get them toasted.

- If using fresh salmon, preheat the oven to 400 degrees.
- Season the salmon lightly with salt and pepper, place on a foil lined baking sheet and bake for 12 minuets until the fish flakes apart.
- Remove the skin from the bottom and place into a medium sized bowl to cool.
- Flake the salmon with a fork or your hands, then add the cream cheese, mayonnaise, dill, salt and pepper, lemon juice and zest.

- Beat together the cream cheese, sour cream and mayo until smooth and creamy. Spread out on a large plate with an edge or in a 9x13 pan.
- Spread the seafood sauce over the cream cheese mixture gently.
- Sprinkle the shrimp over top of the sauce in an even layer.
- Layer the remaining ingredients however you like. I usually go green peppers, tomatoes, a little cheese, green onions and then the rest of the cheese.
- Refrigerate until serving.
- Serve with Ritz crackers for the BEST taste, but this also works with tortilla chips!

GAME DAY FIRE CRACKER SHRIMP

- 1. Note: Coconut oil has been described by nutritionist as, " The Healthiest oil on earth". I use "Pure, Unrefined, Cold Pressed" coconut oil. You may buy on-line or in your local health food store. It adds a lighter taste for fried foods and I love cooking with it.
- 2. Step 1 Preheat oil for frying between 350 - 360 ° F. While oil is heating, in a large Ziploc bag, add flour, cornstarch, Old Bay, garlic powder, cumin, and cayenne pepper. Place shrimp in bag and toss until shrimp is completely covered in season flour, then remove shrimp and shake off excess season flour and place on a plate to give coating a chance to adhere to shrimp.
- 3. Step 2 Place shrimp in hot oil in small batches so that you keep your oil hot. Cook batches of shrimp for about 1 - 2 minutes or until golden brown. Place fried shrimp on a tray with paper towels to drain and lightly season to taste with salt.
- 4. Step 3 To Serve, first place shrimp in a large bowl and add Thai Sweet Chili sauce to coat shrimp, then place on a serving platter and garnish with chopped scallions and lemon or lime zest if you desire.

- Add some water to a saucepan and bring to a rapid boil. Place finely diced King Oyster Mushrooms into the saucepan and cook for 5 minutes. (Chop the bell peppers while cooking the mushrooms.)
