DELICIOUS PECAN PATTIES

A vegetarian delight. Very versatile I know non-vegetarians who absoulutely love this recipe. Try it!

Number Of Ingredients 9

1 1/2 cups quick oats
1 cup pecan meal
1/2 teaspoon garlic powder
1 teaspoon onion powder
salt
1 tablespoon poultry seasoning
1 cup cold water
1 tablespoon soy sauce
1 cup firm tofu

Steps:

  • Crumble tofu and knead all ingredients together.
  • Form into patties.
  • Fry slowly in pan.
  • Cover with mushroom soup and bake @ 350 for 30 minutes. Or serve as is with your favorite gravy.
  • If desired you may substitute walnut pieces for pecan meal.
  • You may add one handful of Brewer's yeast.
  • May add extra oats and water.

As per Betty Crocker "These patties are absolutely delicious served in sandwich buns with cranberry sauce". Or can be served with steamed broccoli on the side. Taken from Betty's Quick and Easy cookbook. I haven't tried them yet, but will soon.

2 cups wild rice, cooked
1 cup soft breadcrumbs
1/3 cup pecans, chopped
1/2 teaspoon garlic salt
2 eggs
1 (2 1/2 ounce) jar mushroom pieces, drained and finely chopped
1 (2 ounce) jar diced pimentos, drained
2 tablespoons vegetable oil

Steps:

  • Mix all ingredients together except oil.
  • Heat oil in 10-inch skillet over medium heat.
  • Scoop wild rice mixture by 1/3 cupfuls into skillet; flatten to 1/2 inch thick.
  • Cook about 3 minutes on each side or until light brown.
  • Remove patties from skillet; cover and keep warm while cooking remaining patties.

1 1/2 pounds (685 g) cremini mushrooms
1/2 cup (30 g) fresh parsley
2 tablespoons (30 ml) olive oil, divided
2 large-size yellow onions, finely chopped
3 large-size garlic cloves, minced
1 1/2 to 2 cups (165 to 220 g) bread crumbs or cracker meal
3 tablespoons (45 g) tahini
2 tablespoons (30 g) hoisin sauce
3/4 cup (85 g) toasted pecans or walnuts, chopped
3 tablespoons (45 ml) tamari soy sauce
1 teaspoon (2 g) dried oregano
1/2 teaspoon dried sage
salt and ground pepper, to taste

Steps:

  • In a food processor, mince mushrooms and parsley. Remove and set aside.
  • In a sauté pan over medium heat, warm 1 tablespoon (15 ml) olive oil and cook onions and garlic for 5 to 6 minutes. Transfer onion mixture to a large-size bowl, and combine with minced mushrooms and parsley, bread crumbs, tahini, hoisin sauce, chopped nuts, tamari, oregano, sage, salt, and pepper.
  • Place mixture in refrigerator for at least half an hour. Mixture will be soft, but you should be able to form patties. Add additional bread crumbs or tahini, if needed.
  • Create patties using your hands. In a sauté pan, warm remaining 1 tablespoon (15 ml) oil, and fry patties over medium heat for 3 to 5 minutes on each side, until lightly browned and crispy. Be careful to keep patties intact.

From Cooking Light, these were suggested being served as veggie burgers with whole-grain buns and Boston lettuce leaves with chili sauce. I think they're too carb-rich for that but would make a nice starch side to have with greens and another protein like tofu or seitan. I guess that 3 or so sweet potatoes would be enough?

2 1/2 cups sweet potatoes (about 2 large or 3 medium)
2 1/2 cups chopped onions
3 garlic cloves (1 1/2 teaspoons minced)
1 cup regular oats
1 1/2 teaspoons ground cumin
3/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/2 chopped pecans, preferably toasted
1 tablespoon olive oil, divided

Steps:

  • Wash and peel the sweet potatoes and cut into 1/2-inch cubes.
  • Cover them with water in a large saucepan and bring to a boil. Reduce the heat and simmer for 15 minutes or until somewhat tender, then drain.
  • Coat a large nonstick skillet/frying pan with cooking spray and heat over medium-high heat.
  • Add chopped onion and garlic to the pan, sautee 5 minutes or until tender.
  • Place sweet potato, chopped onion mixture, oats, and spices in a food processor and pulse until smooth.
  • Place the mixture into a large bowl and stir in the pecans. Divide into 6 equal portions, shaping each inch a 1/2-inch thick patty.
  • Wipe the frying pan dry with a paper towel. Heat 1 1/2 teaspoons oil over medium-high heat.
  • Add 3 patties to the pan, cook 4 minutes or until browned. Carefully turn the patties over and cook the other side for 3 minutes or until browned.
  • Repeat with the remaining oil and uncooked patties.
