This is a tried and true roast recipe that I have enjoyed since my childhood!

2.5 lb beef roast
5 potatoes (peeled and sliced into wedges)
1 bag of baby carrots
2 medium onions (halved)
2 pkgs brown gravy mix
2 cups water

Steps:

  • Spray your crock pot with cooking spray
  • Place your roast in your 6- quart crock pot (I used my Hamilton Beach Programmable Insulated Slow Cooker.)
  • Surround your roast with your potato wedges, onion halves and carrots
  • Mix together one of your brown gravy mixes with 1 c cold water
  • Pour over your roast and veggies
  • Cover and cook on low for 8-10 hours (total)
  • An hour before serving, mix together your remaining brown gravy mix and 1 c cold water
  • Pour over roast and veggies
  • Cover again for the last hour of cooking.

This Crock Pot Roast recipe is easy to make with potatoes, carrots, and thick and flavorful gravy. The meat is moist and full of flavor, your family will love this home cooked meal!

3-4 lb. Chuck Roast (see notes for other cut options)
2 tablespoons flour
4 tablespoons olive oil
3 tablespoons cold water + 3 tablespoons corn starch (to thicken the gravy at the end)
2 teaspoons brown sugar
½ teaspoon black pepper
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon paprika
1 cup chicken broth
2 cups beef broth
1 cube beef bouillon (or 1 tsp better than bouillon)
1 ½ teaspoon onion powder
1 teaspoon garlic powder
1 teaspoons low sodium soy sauce (can sub Worcestershire)
2-3 drops Kitchen Bouquet browning and seasoning sauce (optional: gives it a darker color)
1 Tablespoon cold unsalted butter
2 ¼ lbs. baby potatoes (see notes)
2 lbs. whole carrots (cut into halves or thirds.)

Steps:

  • Pat roast completely dry. Combine seasoning ingredients and massage it onto all sides of the roast, followed by the flour.
  • Heat olive oil in a large pan over medium-high heat. Once the oil is shiny and heated, add the roast and sear on each side for 2-3 minutes, until a brown crust has developed. Decrease heat slightly if needed during cooking. Remove from heat and set aside.
  • Whisk together the gravy ingredients and add some of it to the skillet that you used to sear the roast. Use a silicone spatula to "clean" the bottom and sides of the skillet, this will give the gravy more flavor. Transfer it to the slow cooker along with the remaining gravy, followed by the pot roast and any juices from the plate.
  • Cut the potatoes in half or thirds of equal size. (If 1-2 inch potatoes, you can leave them whole.)
  • Peel the carrots and slice them into halves or thirds. Very thick carrots can also be sliced in half lengthwise.
  • Arrange the potatoes around the roast and top with carrots. Place the lid securely on top and resist the temptation to open it during cooking as you'll lose a lot of heat.
  • Cook on high for 5-6 hours or on low for 8-10 hours.
  • Carefully remove the carrots, potatoes, and the roast and set on a serving platter. Tent with foil.

Taking the time to make a smooth, thick gravy for this slow-cooked dinner is worth it. As the pot roast cooks, the water and juices from the vegetables and meat will thin the gravy out, creating just the right consistency.

One 4-pound beef chuck roast
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour, plus more for coating
3 tablespoons olive oil
4 medium carrots, cut into 2-inch pieces
3 stalks celery, peeled and cut into 2-inch pieces
1 medium onion, cut into 1/2-inch wedges
3 cloves garlic, mashed
3 tablespoons tomato paste
1 cup red wine
3 cups low-sodium beef broth
3 bay leaves
2 sprigs fresh thyme
1/2 teaspoon ground allspice
1/2 cup loosely packed parsley leaves, chopped

Steps:

  • Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 8 minutes, turning as needed. Transfer the roast to the insert of a 6-quart slow cooker, along with the carrots, celery, onions and garlic.
  • Add the remaining 1 tablespoon oil to the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, bay leaves, thyme, allspice, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking, until the gravy is smooth and thickens slightly, about 4 minutes.
  • Pour the gravy into the slow cooker. Cover and cook on low for 8 hours. The roast and vegetables should be tender.
  • Remove the roast and let rest for a few minutes. Discard the thyme stems and strain the vegetables, reserving the gravy. Toss the vegetables with half the parsley and season with salt and pepper. Stir the remaining parsley into the gravy and season with salt and pepper. Slice the roast against the grain. Serve the meat and vegetables on a platter, moistening them with some of the gravy; serve the remaining gravy on the side.

¼ cup all-purpose flour
1 (2 1/2 pound) boneless beef chuck roast
1 pinch salt and ground black pepper to taste
1 (1.2 ounce) package dry beef gravy mix
1 (1 ounce) package ranch dressing mix
1 (.7 ounce) package dry Italian-style salad dressing mix
½ cup water, or as needed
5 whole peeled carrots

Steps:

  • Spray the inside of a slow cooker with cooking spray. Spread the onion slices out into the bottom of the cooker.
  • Spread the flour out onto a work surface. Sprinkle the chuck roast with salt and black pepper, and roll the roast in the flour to coat all sides. Using the edge of a small, sturdy plate, pound the flour into the meat. Place the floured roast into the cooker on top of the onions. Whisk together beef gravy mix, ranch dressing mix, and Italian dressing mix in a bowl, and whisk the mixes with water until smooth. Pour over the chuck roast. Distribute carrots around the meat.
  • Cover the cooker, set to Low, and cook until the roast is tender and the gravy has thickened, about 8 hours.

1 kg fully cooked deli ham
40 whole cloves, divided
8 tablespoons honey, divided

Steps:

  • Cut ham in equal halves.
  • Stick 20 whole cloves into each half.
  • You can cut a diamond pattern first if you want, and stick one clove into the center of the diamond.
  • Place each ham into a Ziploc bag and freeze until ready to use.
  • If desired, defrost one ham the night before you wish to make it (I will often make it right from frozen, but most people argue that this is not safe).
  • Place 4 tbsp of honey over one ham before cooking and cook on high for about 3 hours or on low for 6 hours, Increase cooking time if making from frozen.
  • Repeat steps 5 and 6 for second ham.

3/4 cup pinto beans, sorted and washed
3/4 cup baby lima beans, sorted and washed
3/4 cup navy beans, sorted and washed
3/4 cup kidney bean, sorted and washed
2 cups chopped tomatoes, drained
4 cups tomato sauce
1 cup barbecue sauce (KC Masterpiece, original)
1 1/2 teaspoons Coleman's dry mustard
1/2 teaspoon crushed red pepper flakes
3 cups green beans, fresh, cut bite size
1/4 lb bacon, cut bite size
3 medium yellow onions, chopped
3 pasilla chilies, roasted, skins scrapped clean, seeded, chopped
3 stalks celery, chopped
2 lbs ground chuck

Steps:

  • Mix the dry beans and soak over night.
  • Next day drain and rinse the beans.
  • Place first 10 ingredients in crock pot set on low.
  • Fry bacon 'til well done but not crisp. Remove and drain.
  • Pour off all but 2 TBS of the grease.
  • Saute (stir Fry) onions, chilies, and celery 'til onions are translucent.
  • Remove and drain.
  • Brown and crumble the ground chuck.
  • Add bacon, onions, chilies, and chuck to crock pot.
  • (If they need more liquid use chicken stock.).
  • Cook on low for 8 - 10 hours. remove from heat, cool overnight.
  • The next day return to heat for 3-4 hours, serve.
  • Goes great with corn tortillas, corn bread. or corn sticks. (corn bread cooked in a bread stick pan.).

Easy crock pot recipe that requires a bit of prep but turns out delicious! I created this as an alternative to similar recipes that call for a bottle of Italian dressing, because I prefer to control the ingredients in my recipes. (Does anyone really want to ingest xanthan gum?) Shred the leftovers and use them in all manner of Italian and Mexican dishes! Notes: This recipe requires a large crock pot (I use a 6-qt one). Can be cooked from frozen but doesn't absorb the Italian seasoning as well (because seasonings must be sprinkled atop the skin), and may be difficult to get the lid on the crock pot tightly.

1 whole turkey breast, bone-in
3 tablespoons olive oil or 3 tablespoons canola oil
1/2 cup water
1/4 cup white wine vinegar
1 (1 ounce) packet Italian salad dressing mix (such as Good Seasons)

Steps:

  • Thaw turkey breast in refrigerator. Remaining prep can be done the night before cooking.
  • Wash breast and pat dry.
  • Set breast on cutting board, meaty side up. (Use dishtowels to help hold turkey breast upright, or get someone to hold it for you.).
  • Working from the bottom (pointy) end, use the handle of a wooden spoon or your fingers to separate skin from meat. Do not remove skin. When you are finished, skin should be attached around all sides but loose over the main portion of the breast.
  • Using your fingers or a spoon, sprinkle the dry Italian dressing mix underneath the skin onto the breast meat. Try for relatively even coverage, but don't obsess! The flavor will be well-absorbed throughout the breast.
  • Massage the skin to grind the seasoning mix into the meat as much as possible.
  • Using a meat fork, pierce the breast (through the skin) many times.
  • If prepping the night before, wrap breast and refrigerate. Otherwise, proceed to next step.
  • Rub olive or canola oil over skin of breast, massaging well.
  • Pour water and vinegar into crock pot.
  • Place turkey breast skin-side down in crock pot. If necessary, bend or break ribs in order to get lid on tightly. Do not use foil to hold breast upright, as the vinegar will react with the foil. If you have to position breast on its side, see step 13.
  • Cook on low setting for 8-10 hours or until a meat thermometer inserted in thickest part of breast registers at least 190°F.
  • If you had to position the breast on its side, turn breast over once halfway through cooking time OR for several minutes after cooking has finished, so that the top side can marinate in the juices.
  • Slice or shred and serve hot with your favorite side dish. Alternatively, cool and shred meat, freezing portions for later use (my favorite use for this recipe!).

2 lbs uncooked small pasta noodles, should have a cooking time around 13 minutes
2 (12 ounce) cans evaporated milk
1 1/2 cups half-and-half
6 cups milk
1/2 cup flour
4 cups sharp cheddar cheese, shredded
2 cups mild cheddar cheese, shredded
16 ounces Velveeta cheese, diced
1 cup parmesan cheese
8 tablespoons salted butter, cut up
1 teaspoon onion powder
3/4 teaspoon garlic powder
1/2 teaspoon white pepper
1/2 teaspoon salt

Steps:

  • Whisk flour with 1 cup of milk until smooth.
  • Mix everything in (very large) crock pot.
  • Cook 3 to 4 hours on low, or until sauce comes together and pasta is tender. Stir every 30 to 60 minutes, if possible.
  • Freeze leftovers in 2 serving portions.
  • Reheat in microwave safe dish on defrost for 20 minutes, stirring every 5 minutes. At this time, the mac and cheese should be mostly defrosted. Defrost for another 10 minutes or so, stirring every 2.5 minutes or until hot. (I have found this is the best way to reheat frozen mac and cheese with no seperation of the sauce.).

  • For immediate cooking:.
  • Mix corn, beans and 1 cup of salsa together and put in the bottom of the crock pot.

  • Good served over cooked rice and dipped into with tortilla chips.

I finally got around to putting this recipe on Recipezaar! This is our family's favourite recipe. It is very kid friendly (no heat) so feel free to add something to spice it up if you like it spicy. I am posting this mainly so that I can access this recipe on "my shopping list" which is a feature I use here on Recipezaar all the time!

1 lb ground beef
1 small onion, chopped
1 (28 ounce) can white beans, in tomato sauce
1 (19 ounce) can kidney beans, drained
2 (10 ounce) cans condensed tomato soup
1 teaspoon taco seasoning
1 teaspoon cumin
1 teaspoon chili powder
1 cup cheddar cheese

Steps:

  • Brown ground beef, (I like to do a huge batch of ground beef using Tish's recipe#31008 and it works perfectly) place into a Ziploc bag and throw into the freezer.
  • The night before serving, defrost overnight.
  • (I usually don't, but some people argue that cooking frozen meat in the crock pot is not safe.).
  • Throw everything into the crock pot and cook for 3-4 hours on high or 6-7 hours on low.
  • Garnish with cheddar cheese and serve.
  • I will sometimes serve this on buns as sloppy Joe's.
  • **If desired you can make the entire recipe and freeze already made, then heat to serve. This recipe freezes great!**.

In view of a reviewers comment - I can only ask that you please cook for the full length of time stated in the recipe for your first time, keeping an eye on it of course, and then adjust from there.

1 beef roast, that will fit your crock pot
2 minced garlic cloves
1 teaspoon dried rosemary
1 oven cooking bag

Steps:

  • For OAMC place all ingredients in the oven bag and into a plastic freezing bag, and freeze.
  • When ready to cook, take straight from the freezer - no need to thaw - add salt and pepper and place in prewarmed crock pot in oven roasting bag only.
  • Make sure top of oven bag is next to crock pot lid.
  • Cook on high for 4 hours, and reduce to low for another 3 -4 hours.
  • Remove carefully from crock pot and place into a container that will hold juices of meat.
  • Split bag, remove roast, drain juices into a saucepan, and thicken with a little cornflour to suit.
  • If cooking a thawed roast, reduce cooking time by 2 hours.
  • Please use your own judgement for cooking times, as every one's crock pot is different.
