CREAMY SHRIMP SCAMPI DIP

Creamy Shrimp Scampi Dip image

This rich, garlicky dip caused a feeding frenzy in the Food Network test kitchen. We've taken a beloved shrimp-and-pasta dish and made it into a creamy, crowd-pleasing appetizer. You can make it ahead to take to a nearby potluck, then ask your host if you can borrow some oven space to quickly bake it.

Provided by Food Network Kitchen

Categories     appetizer

Time 1h5m

Yield 8 to 10 servings

Number Of Ingredients 15

8 ounces cream cheese, at room temperature
1 cup shredded part-skim mozzarella
1 cup sour cream
1/2 cup mayonnaise
1/2 cup grated Parmesan
4 tablespoons plain dried breadcrumbs
Kosher salt
2 tablespoons unsalted butter, plus 1 tablespoon melted unsalted butter
1 pound large peeled and deveined shrimp, tails discarded, cut into 1/4-inch pieces
6 cloves garlic, thinly sliced
Large pinch crushed red pepper flakes
1/2 cup dry white wine
1/2 cup fresh parsley leaves, finely chopped
1 teaspoon lemon zest
Slices of crusty bread and/or crackers, for serving

Steps:

  • Position an oven rack in the top position, and preheat the oven to 375 degrees F.
  • Beat the cream cheese, mozzarella, sour cream, mayonnaise, Parmesan, 2 tablespoons of the breadcrumbs and 1/2 teaspoon salt in a large bowl with an electric mixer on medium high until smooth. Cover and refrigerate until ready to add the shrimp.
  • Melt 2 tablespoons butter in a large skillet over medium-low heat. Add the shrimp, garlic, 1/4 teaspoon salt and the red pepper flakes, and cook, stirring frequently, until the shrimp just start to turn pink, about 2 minutes. Add the wine, bring to a simmer and cook until the shrimp are pink and cooked through, about 2 minutes (there will be some liquid left in the skillet). Remove the skillet from the heat, and let the shrimp cool completely.
  • Meanwhile, mix together the parsley, the remaining 2 tablespoons breadcrumbs and 1 tablespoon melted butter, the lemon zest and a pinch of salt in a small bowl.
  • Stir the shrimp, pan sauce and cream cheese mixtures together to combine; transfer to a 2-quart flameproof baking dish. (The dip and breadcrumb mixture can be covered and refrigerated overnight separately at this point.) Sprinkle the breadcrumb mixture over the dip, and bake until hot and bubbly, 15 to 20 minutes. Switch the oven to broil, and cook until the top is golden brown, 1 to 3 minutes. Let rest for a few minutes, then serve hot with bread and/or crackers.

NEW ORLEANS BARBECUE SHRIMP DIP

New Orleans Barbecue Shrimp Dip image

Provided by Food Network Kitchen

Categories     appetizer

Time 5h

Yield 8 to 10 servings

Number Of Ingredients 17

8 tablespoons (1 stick) unsalted butter
1/4 cup chili sauce
1/4 cup fresh lemon juice
5 cloves garlic, smashed
2 tablespoons Worcestershire sauce
1 teaspoon cayenne
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon hot sauce
1 1/4 pounds peeled and deveined large shrimp, tails removed
4 ounces cream cheese, at room temperature
1/2 cup sour cream
3 scallions, white and green parts separated and thinly sliced
1/2 cup loosely packed fresh parsley leaves, chopped
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Crackers and crunchy rustic bread for serving

Steps:

  • Special equipment: 5-cup broiler-safe casserole dish
  • Melt 4 tablespoons of the butter in a large skillet over medium heat. Whisk in the chili sauce, lemon juice, garlic, Worcestershire, cayenne, oregano, paprika and hot sauce. Bring to a low simmer and cook, stirring frequently, until slightly reduced, about 5 minutes. Add the shrimp and cook until they are pink and just cooked through, flipping once, 4 to 5 minutes. Remove from the heat and let cool.
  • When cool, place the shimp mixture in a food processor and pulse until roughly chopped. (The shrimp mixture can be made up to a day in advance and refrigerated.)
  • Combine the cream cheese and sour cream in a large bowl and stir vigorously with a rubber spatula until smooth. Add the shrimp mixture, scallion whites, parsley, 1 1/4 teaspoons salt and a few grinds of pepper and stir to combine. Place in a 5-cup broiler-safe casserole dish and spread evenly.
  • Melt the remaining 4 tablespoons of butter and pour over the top of the shrimp dip, making sure to cover the entire surface with a thin layer of butter. Sprinkle with the scallion greens. Chill for at least 4 hours and up to overnight.
  • Just before serving, position an oven rack in the top third of the oven and preheat the broiler. Broil the dip until the butter layer just begins to melt. Serve with the crackers and crunchy bread.

Provided by Martha Stewart

Number Of Ingredients 8

1/2 pound peeled and deveined frozen shrimp (any size), thawed

Add shrimp; cover and cook, tossing once, until opaque throughout, 30 seconds to 4 minutes (depending on size of shrimp). Immediately transfer to a colander, and run under cold water to stop cooking. Pat shrimp dry with paper towels, then finely chop.
  • In a medium bowl, combine shrimp, sour cream, mayonnaise, scallions, parsley, and lemon zest and juice; season with salt and pepper. Mom's Shrimp Dip image

This dip is one of the easiest and best appetizers you'll ever make. It's thick and creamy, and full of clean shrimp flavor. It's a Christmas Eve tradition for my family!

Provided by Brenda | A Farmgirl's Dabbles

Categories     Appetizers

Time 15m

Number Of Ingredients 6

1 can (4 oz.) tiny shrimp, drained and rinsed
8 oz. cream cheese, softened
1/2 c. mayonnaise (Do not use Miracle Whip!)
1/3 c. finely chopped green onion, plus a bit more for sprinkling over the top
1/2 tsp. garlic salt
freshly ground black pepper

Steps:

  • Set aside a few of the nicer looking shrimp, then chop up the rest.
  • In a medium bowl, mix cream cheese and mayonnaise until well blended. A blender works best, to get the mixture nice and smooth. Then stir in the chopped shrimp, green onion, and garlic salt.
  • Transfer dip to a small serving bowl and top with reserved whole shrimp and additional green onion. Sprinkle a bit of freshly ground black pepper over the top. Serve with crackers and fresh veggies for dipping. For crackers, we mostly serve this dip with Ritz Original Crackers or Keebler Original Club Crackers.
