SWEET HEAT BAKED BEANS

Steps:
- Preheat the oven to 350 degrees F.
- Cook the bacon in a large ovenproof saucepan or Dutch oven until the fat is rendered and the bacon is crisp, about 7 minutes, then set aside to drain on a paper towel. Add the onion to the pan and cook until softened, 8 to 10 minutes.
- Add the beans, molasses, tomato sauce, brown sugar, mustard, garlic powder, 1/4 cup water and salt and pepper to taste and stir to combine well. Let the mixture simmer for a minute or so. Transfer the pan to the oven and bake, uncovered, until the beans are very tender and dark and the sauce is thick, 1 1 /2 to 2 hours.
- Transfer to a serving dish and top with Candied Jalapenos and bits of bacon.
- Preheat the oven to 325 degrees F and line 2 baking sheets with parchment paper.
- Thinly slice the jalapenos and place in a single layer on the prepared baking sheets.
- Combine the brown sugar, granulated garlic, mustard, cayenne pepper and salt in a small bowl. Brush the slices of jalapeno with the olive oil. Sprinkle the sugar and spice mixture over the top. Bake until the jalapenos are crispy, 20 to 25 minutes. Set aside to cool.

- Preheat oven to 300 degrees F.
- In a large, heavy-bottomed, ovenproof pot, on medium heat, cook the onions with the butter and bacon until tender. Turn the heat up to high and add the garlic, ginger, tomato, spices, and sugar. Stir until vegetables start to lightly caramelize. Add the vinegar, mustard and stock. Stir in the beans. Cover and place in the oven for 1 hour. Remove from oven. The beans should have absorbed a lot of the liquid, if the beans are soupy place on top of the stove and cook over medium heat until the desired consistency is reached. Season, to taste, with salt and pepper.

- Pour beans into oven-safe casserole dish.
- Mix together well.
- Add onions and peppers.
- Stir well.
- Add ketchup and barbecue sauce; stir well.
- Add brown sugar and mix well.
- Bake in 350°F oven for 30 minutes to 1 hour (uncovered).
- * NOTE: These can also be made in the microwave, in a pinch (microwave - covered - for 2 minutes, stir, and microwave for 1-2 additional minutes); however, the veggies are more tender, and the flavor better, if baked in the oven.

Tangy and sweet old-fashioned baked beans with a little jalapeno. They're easy to make and great at a BBQ, hamburger night, a picnic, etc. My husband's favorite semi-homemade recipe. - Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir bacon in a large skillet over medium-high heat to render some fat, 2 to 3 minutes. Stir onion into the rendered fat and cook until the bacon is crisp and the onion is tender, 7 to 10 minutes.
- Stir baked beans, ketchup, brown sugar, Worcestershire sauce, prepared mustard, minced jalapeno pepper, chili powder, and mustard powder together in a large bowl; add bacon mixture and stir. Pour the mixture into a 13x9-inch baking dish.

- Heat oven to 200C/fan 180C/gas 6. For the wedges, mix the flour, cayenne and herbs (if using), add some salt and pepper, then toss with the potatoes and oil until well coated. Tip into a roasting tin, then bake for about 35 mins until crisp and cooked through.
- Meanwhile, heat the oil in a non-stick pan, then gently fry the onion and bacon together for 5-10 mins until the onions are softened and just starting to turn golden. Stir in the sugar, tomatoes, stock and seasoning to taste, then simmer the sauce for 5 mins. Add the beans, then simmer for another 5 mins until the sauce has thickened. Serve with the wedges.

- Preheat oven to 350 degrees.
- Cook bacon in dutch oven until crisp. Drain all but 1 T. of fat.
- Add onions and cook until lightly browned.
- Add tomato paste, cook 2 minutes.
- Add remaining ingredients, and 4 cups of the water.
- Bring to a boil, cover and transfer to the oven. Bake for 3 hours.
- Stir in the remaining 1 C water and bake 1 more hour until tender but not falling apart.
- Stir in salt.
