What's better than cheese? Fried cheese balls! Only three ingredients in this easy, cheesy appetizer that's crunchy on the outside while melted and gooey on the inside.

2 cups shredded gouda cheese, (8 ounces)
1 egg, or 2 egg whites
2 tablespoons cornstarch, or all-purpose flour
1/2 cup cracker crumbs, for dredging (optional)
vegetable oil, for frying
your favorite sauce, for dipping

Steps:

  • With an electric mixer or by hand, mix the cheese, egg and cornstarch (or flour) in a large bowl until a soft dough forms. Scoop 2 teaspoons of dough and roll into a ball. If desired, roll balls in cracker crumbs for an extra crispy coating. Refrigerate cheese balls until thoroughly chilled, about 30 minutes. In a medium frying pan, heat oil over high heat (350°F for deep frying). Fry cheese balls until golden brown, turning once, about 30-60 seconds per side. Drain on paper towels. Serve hot with your favorite sauce for dipping.

1 pound elbow macaroni
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups milk, warmed, plus 2 tablespoons for egg wash
1 pound grated Cheddar
1 pound grated smoked Gouda
Salt and freshly ground black pepper
2 large eggs
3 cups seasoned bread crumbs
Vegetable oil, for frying
Marinara or Alfredo sauce, to serve

Steps:

  • Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking. Drain again and set aside.
  • In a saucepan, melt the butter over medium heat. Sprinkle the flour into the butter and stir it with a whisk. Cook for 2 minutes. Whisk the warmed milk into the flour mixture, working out any lumps. Cook until the sauce thickens, about 2 minutes. Remove from the heat, add the cheeses, and stir until melted and smooth; season with salt and pepper. Fold the cheese sauce into macaroni. Pour the mac and cheese into a shallow pan and refrigerate until cold, at least 2 hours.
  • Shape the cold mac and cheese into meatball-sized balls and place them onto a waxed paper-lined tray. Freeze the balls overnight.
  • Beat the eggs and 2 tablespoons milk together to form an egg wash and pour it into a shallow bowl. Put the bread crumbs into another shallow bowl. Remove the mac and cheese balls from the freezer. Dip the frozen balls into the egg wash then into the bread crumbs. Put the balls back into the freezer until you are ready to fry.
  • Heat the oil in a deep-fat fryer to 350 degrees F. Fry the mac and cheese balls until they are golden brown and center is hot, about 5 minutes. Serve hot with your favorite marinara or Alfredo sauce or combination or both for dipping.

1/4 cup sugar
1 teaspoon vanilla extract
1/2 cup graham cracker crumbs
1 pound fresh or frozen strawberries, cleaned and quartered if fresh
1/4 cup sugar
2 tablespoons lemon juice
Vegetable oil, for deep-frying
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon kosher salt
1 cup whole milk

Steps:

  • For the cheesecake mixture: Line a baking sheet with wax paper. Beat the cream cheese until smooth in a stand mixer fitted with the paddle attachment. Add the sugar, vanilla and graham cracker crumbs and beat until well combined. Scoop 1-tablespoon balls of the cheesecake mixture onto the prepared baking sheet. Freeze for about 30 minutes.
  • For the strawberry sauce: Meanwhile, combine the strawberries, sugar and lemon juice in a medium saucepan over medium-high heat. Cook, stirring often, until the sugar is dissolved and the berries begin to break down and to give off their juices, 5 to 7 minutes. Transfer to a blender or food processor and puree until smooth. Strain through a fine-mesh sieve to remove the seeds. Set aside.
  • For the batter: Heat 2 inches of vegetable oil in a deep, heavy-bottomed pot over medium heat until the oil registers 350 degrees F on a deep-frying thermometer. Line a baking sheet with paper towels and set aside.
  • In a medium bowl, whisk together the flour, sugar, baking powder and salt. Add the milk and whisk until smooth.
  • When the oil is ready, remove the cheesecake balls from the freezer. Working in batches, add the cheesecake balls to the batter a few at a time, turning to coat. Remove from the batter, allowing excess to drip off, and then carefully add to the oil. Fry, turning occasionally, until golden brown, 2 to 3 minutes per batch (allow the oil to return to temperature between batches). Remove from the oil with a slotted spoon and drain on the paper towels.
  • Serve warm, with strawberry sauce.

300 g diced chicken breasts
3 slices middle rashers bacon (Diced)
salt and pepper (to season)
1/2 teaspoon dried parsley
1/2 cup shredded parmesan cheese
1 tablespoon mayonnaise
3 teaspoons plain flour
3/4 cup breadcrumbs

Steps:

  • Dice chicken and bacon ,mix together in a medium bowl and season with salt and pepper.
  • Add Parsley ,Cheese ,Mayonaise and flour and mix well.
  • Press mixture into approx 1 inch round balls.
  • Roll the balls in bread crumbs until balls become firm enough to deep fry.
  • Put in fridge for an hour or two then deep fry 180c until golden brown (Approx 10min).

1 (12-ounce) package frozen macaroni and cheese, thawed
1 egg
1 tablespoon water
1 cup Italian bread crumbs
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 1/2 cups vegetable oil

Steps:

  • Using a small ice cream scoop or a teaspoon, shape macaroni and cheese into 1-inch balls and place on a wax paper-lined baking sheet. Freeze 2 hours, or until firm.
  • In a shallow dish, beat egg and water. In another shallow dish, combine bread crumbs, garlic powder, and pepper.
  • In a deep saucepan over medium heat, heat oil until hot.
  • Dip frozen balls into egg wash then roll in bread crumbs. In small batches, fry balls 3 to 5 minutes, or until golden brown and center is hot. Drain on a paper towel-lined plate and serve immediately.

2 large russet potatoes (peeled and cubed)
1 tbsp cream or milk
salt (to taste)
40 cubes mozzarella cheese (1/2" cubes)
1 cup flour
1-2 large eggs (lightly beaten)
1.5 cups panko
High heat oil for deep frying (such as grapeseed)

Steps:

  • Add the potatoes to a large pot and cover with cold water. Add a generous pinch of salt to the pot. Bring to a boil and cook potatoes on medium high, uncovered, until the potatoes are fork tender, about 20 minutes. Drain well and mash. Stir in the cream and salt to taste. Set aside to cool.
  • When the potatoes are cool (you can make them the day before then take them out of the fridge to come to room temperature for 1-3 hours) use a ice cream scoop or measuring scoop to scoop out 2 tablespoons of potato. Shape into a ball and then flatten slightly and place a cube of cheese in the middle. Bring the mashed potato up around the cube of cheese, enclosing it. Roll gently into a ball shape. Repeat as needed.
  • Set up a breading station with three shallow dishes. One with flour, one with lightly beaten egg, and one with panko. Working gently, with one ball at a time, dip the ball into flour, shaking off excess, then coat in egg wash. Roll in panko to coat completely. Set aside on a plate or tray and continue to coat all of the balls in panko.
  • In a deep sided, heavy bottomed pot, heat up 2 inches of oil over medium heat until it reaches 375°F. Gently place the potato cheese balls in the hot oil, being careful not to overcrowd, turning occasionally and maintaining oil temperature of 350°F, until the breading is golden brown and crisp, 2-3 minutes. Use a slotted spoon to transfer to paper towels to drain. Let cool slightly and enjoy hot while the cheese is still stretchy.

1 (7.25 ounce) package macaroni and cheese mix
2 tablespoons butter
¼ cup milk
1 cup shredded Cheddar cheese
¾ cup pimento cheese spread
1 cup shredded Italian cheese blend
2 cups Italian seasoned bread crumbs
½ teaspoon paprika
½ teaspoon chili powder
½ teaspoon ground black pepper
½ teaspoon white sugar
¼ teaspoon salt
1 pinch cayenne pepper, or to taste
4 eggs
3 tablespoons milk
4 cups peanut oil for frying, or as needed

Steps:

  • Fill a pot with lightly salted water and bring to a rolling boil over high heat. Stir in the macaroni, and return to a boil. Cook, uncovered, stirring occasionally, until the macaroni is cooked through but still firm to the bite, about 7 minutes. Drain. Stir in the 2 tablespoons butter, the 1/4 cup milk, and the cheese packet from the package.
  • While the macaroni is still hot, stir in the Cheddar cheese, pimento cheese spread, and Italian cheese blend, and continue to stir until melted. Place the macaroni and cheese mixture in a container and refrigerate until firm, about 4 hours.
  • Line a baking sheet with parchment paper. Remove the macaroni mixture from the refrigerator, and, using a cookie scoop, scoop into balls. Place mac balls on the prepared baking sheet and freeze for at least 2 hours.
