1 tablespoon olive oil
1/2 small red onion, diced
Coarse salt and ground pepper

Steps:

  • Remove seeds and ribs from peppers; cut lengthwise into strips and halve crosswise.
  • Heat oil in a large nonstick skillet over medium heat. Add bell peppers and onion; season with salt and pepper. Cook, stirring occasionally, until peppers are just tender, about 10 minutes.

2 red bell peppers
1 yellow bell pepper
1 orange bell pepper
salt
2 tablespoons balsamic vinegar
2 tablespoons chopped fresh basil or 1 teaspoon dried basil
1 tablespoon chopped fresh parsley
1 garlic clove, minced

Steps:

  • Cut peppers in 1/4" strips.
  • Heat oil in large skillet over high heat until very hot.
  • Add peppers and saute until they begin to colour in some places.
  • Reduce heat and season with salt to taste.
  • Cover pan and cook 10 minutes, or until peppers are softened.
  • Increase heat and add balsamic vinegar.
  • Stir and toss peppers until vinegar is evapourated.
  • Remove from heat.
  • Stir in basil,parsley and garlic.

  • Thinly slice the peppers. Toss them in bowl with 1/2 tablespoon olive oil and the oregano, kosher salt and several grinds of black pepper.
  • In a large skillet, heat the remaining 1 tablespoon olive oil over medium high heat. 1 cup sliced celery
1 small onion, thinly sliced
1 garlic clove, minced

1/2 cup crushed seasoned salad croutons

Steps:

4 cloves garlic, grated or minced
1 pound fresh green beans, ends trimmed
Kosher salt and freshly cracked black pepper
1/2 cup chicken stock
Juice from 1/2 lemon

Steps:

  • Heat the oil and 1 tablespoon butter in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the green beans, then season with salt and pepper and stir to combine.
  • Add the stock, then bring to a simmer and cover the skillet. Cook until the green beans are bright green and just slightly tender, about 5 minutes. Uncover the skillet and cook until the liquid evaporates and the green beans are tender, 10 minutes more. Stir in the lemon juice and remaining tablespoon butter and season with additional salt and pepper.

Will do a dice, instead. Will post, after some experimentation. I agree with Lauralie, there is no reason to peel the tomatoes unless you really object to the skins.

10 green peppers, cored and seeded
olive oil (for the frying pan)
2 tomatoes
2 onions
2 garlic cloves
parsley
salt and pepper

Steps:

  • Wash the peppers well and then drain them.
  • Place olive oil in a frying pan and heat the oil.
  • Put some salt on the green peppers.
  • Place the green peppers in the olive oil.
  • Make sure you turn the green peppers over until they are brown on both sides.
  • Remove the green peppers from the frying pan.
  • Peel the tomato skin off of the tomatoes.
  • Grate the two tomatoes.
  • Take the two onions and chop into small pieces place in the olive oil until brown.
  • Add the grated tomatoes to the onions.
  • Take the two garlic cloves chop into small pieces, and then add to the frying pan.
  • Add some parsley.
  • Place on low and add salt and pepper.
  • Now pour the sauce over the green peppers.

1/4 cup olive oil
2 red bell peppers, cut into 1/4-inch strips
2 yellow bell peppers, cut into 1/4-inch strips
2 orange bell peppers, cut into 1/4-inch strips
3/4 cup golden raisins
1 tablespoon fennel seeds
2 tablespoons balsamic vinegar
8 cups arugula, plus additional for garnish

Steps:

  • Heat oil in very large heavy skillet over medium-high heat. Add all peppers; sauté until slightly softened, stirring occasionally, about 7 minutes. Add raisins and fennel seeds. Continue to cook until peppers are soft, about 5 minutes. Stir in vinegar. Season with salt and pepper. (Can be made 1 day ahead. Cover and chill.) Add 8 cups arugula to peppers and stir until arugula begins to wilt, about 1 minute. Transfer mixture to large platter; garnish with additional arugula and serve.
