Steps:
- Remove seeds and ribs from peppers; cut lengthwise into strips and halve crosswise.
- Heat oil in a large nonstick skillet over medium heat. Add bell peppers and onion; season with salt and pepper. Cook, stirring occasionally, until peppers are just tender, about 10 minutes.

SAUTEED CORN AND GREEN PEPPERS

- In a non-stick skillet, heat the oil over moderately high heat until it is hot but not smoking Add corn and pepper dice and saute, stirring, until tender but still crunchy, about 3 minutes. Stir in red pepper flakes and cook 15 more seconds. Season with salt and pepper.
SWEET BELL PEPPERS SAUTE
This side dish is delicious with almost anything but it goes especially well with barbequed meats. If you like a little heat to your sautes, throw in a hot pepper as well.This is also good using just green peppers.

- Cut peppers in 1/4" strips.
- Heat oil in large skillet over high heat until very hot.
- Add peppers and saute until they begin to colour in some places.
- Reduce heat and season with salt to taste.
- Cover pan and cook 10 minutes, or until peppers are softened.
- Increase heat and add balsamic vinegar.
- Stir and toss peppers until vinegar is evapourated.
- Remove from heat.
- Stir in basil,parsley and garlic.

- Thinly slice the peppers. Toss them in bowl with 1/2 tablespoon olive oil and the oregano, kosher salt and several grinds of black pepper.
- In a large skillet, heat the remaining 1 tablespoon olive oil over medium high heat. Cook the peppers until tender and lightly charred, about 10 to 12 minutes for crisp tender or about 15 minutes for tender, stirring occasionally. Add additional salt to taste (we usually add a few more pinches).

- In a large skillet, saute the peppers, celery, onion and garlic in oil until tender. Stir in the tomato sauce, basil, salt and pepper. Simmer, uncovered, for 8-10 minutes or until vegetables are tender and mixture is thickened. Sprinkle with croutons.

SAUTEED GREEN BEANS WITH GARLIC AND PEPPER

- Heat the oil and 1 tablespoon butter in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the green beans, then season with salt and pepper and stir to combine.
- Add the stock, then bring to a simmer and cover the skillet. Cook until the green beans are bright green and just slightly tender, about 5 minutes. Adopted! No comments from original poster. QDM: I will make this recipe and try to make the instructions a little clearer on amounts and procedures. Am not, however, grating the tomatos. Will do a dice, instead. Will post, after some experimentation. I agree with Lauralie, there is no reason to peel the tomatoes unless you really object to the skins.

- Wash the peppers well and then drain them.
- Place olive oil in a frying pan and heat the oil.
- Put some salt on the green peppers.
- Place the green peppers in the olive oil.
- Make sure you turn the green peppers over until they are brown on both sides.
- Remove the green peppers from the frying pan.
- Peel the tomato skin off of the tomatoes.
- Grate the two tomatoes.
- Take the two onions and chop into small pieces place in the olive oil until brown.
- Add the grated tomatoes to the onions.
- Take the two garlic cloves chop into small pieces, and then add to the frying pan.
- Add some parsley.
- Place on low and add salt and pepper.
- Now pour the sauce over the green peppers.

- Heat oil in very large heavy skillet over medium-high heat. Add all peppers; sauté until slightly softened, stirring occasionally, about 7 minutes. Add raisins and fennel seeds. Continue to cook until peppers are soft, about 5 minutes. Stir in vinegar. Season with salt and pepper. (Can be made 1 day ahead. Cover and chill.) Add 8 cups arugula to peppers and stir until arugula begins to wilt, about 1 minute. Transfer mixture to large platter; garnish with additional arugula and serve.
