½ cup maple syrup
⅓ cup coconut oil, melted
4 cups old-fashioned oats, or more to taste
1 cup chopped pecans
½ cup almond flour

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Mix maple syrup and coconut oil together in a bowl; add oats, pecans, and almond flour and mix until evenly coated. Spread onto a baking sheet.
  • Bake in the preheated oven until lightly browned, about 40 minutes.

1/2 cup maple syrup
1/4 cup vegetable oil
1 teaspoon ground cinnamon
3 cups rolled oats 1 cup chopped walnuts
1 cup sunflower seeds
1/4 cup firmly packed dark brown sugar Pinch kosher salt
2 egg whites
1 cup shredded sweetened coconut flakes
1 cup dried cranberries
1/2 cup candy coated chocolates (recommended: M and M s)

Steps:

  • Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper.
  • In a small pot over medium heat, whisk together the syrup, oil and cinnamon. Cook until it just bubbles. Remove from the heat and cool slightly.
  • In a large bowl, add the oats, walnuts, sunflower seeds, brown sugar and a pinch of salt. Pour in the syrup mixture and toss well. In a small bowl, whisk the egg whites to combine. Pour over the granola and toss well. Evenly spread the mixture onto a sheet tray. Bake until golden, turning several times, about 35 to 40 minutes.
  • Remove from the oven to a serving bowl and cool. When cool add the remaining ingredients and serve.

  • Preheat oven to 300°F (149°C). Line one large baking sheet with parchment paper or a silicone baking mat.
  • Toss the oats, almonds, cashews, and cinnamon in a large bowl. Set aside. In a medium heat-proof bowl, microwave the maple syrup, coconut oil, and almond butter together for about 30 seconds. Alternatively, you may melt these ingredients together in a small pan on the stovetop. Remove from the microwave and using a fork or rubber spatula, stir until everything is melted together and smooth. You may need to microwave it for 10 more seconds or so. Allow to cool down for about 5 minutes (you don’t want to cook the egg white!). Once slightly cooled, whisk in the egg white and vanilla. Pour over the oats and toss to coat. Make sure all of the oats are moistened.
  • Spread onto the prepared baking sheet (it usually always fits onto just one– if too crowded, use two baking sheets and bake at the same time on different racks) and bake for 45 minutes, stirring every 15 minutes. Remove from the oven and allow the granola to cool completely – the air will help the granola obtain a crunchy texture. Once cooled, toss in the dried cranberries/raisins and chocolate chips.
