EXTRA CRISPY FRENCH TOAST
You know how regular French Toast is made, and sometimes using too much syrup or egg batter may make the bread soggy - even when it's thoroughly cooked! This recipe makes the toast crispy, well, extra crispy that is :-D

Steps:
- Mix together the flour, sugar, vanilla, salt and cinnamon.
- Mix in the eggs and milk to the flour, sugar, vanilla, salt and cinnamon mixture.
- Heat a deep, large skillet, fill up with Canola Oil just enough to cover the Texas toast thick bread.
- If the oil smokes, your pan is too hot; turn down the heat.
- With tongs, dip the slice of bread into the batter for 30 to 45 seconds or more, depending on how crispy you want it!
- Let the oil drip off, as much as possible.
- To serve, put on plate, dust with powdered sugar. Serve with butter and hot syrup.

CRUNCHY FRENCH TOAST
Steps:
- In a wide bowl, whisk together the almond milk, sugar, cinnamon, salt and eggs. Put the crushed cornflakes in another shallow dish. Dunk the sliced bread in the egg mixture and soak about 45 seconds, turning once. Let the excess egg mixture drip off, then press the bread into the cornflakes. Turn and press on the second side, then set aside on a plate.
- Set a large nonstick or cast-iron pan over medium heat. Set a rack over a baking sheet and preheat the oven to 250 degrees F. Melt 1 tablespoon butter and add 2 pieces of the crusted bread. Cook gently until golden brown, then cook and brown on the second side, about 3 minutes per side. (Reduce the heat if the bread begins to to brown too quickly.) Remove the bread, set on the prepared baking sheet and transfer to the oven to keep warm. Add fresh butter to the pan and repeat with the remaining bread. Transfer to the oven for 2 minutes, then serve with maple syrup.

- Lightly coat a 2-quart baking dish with cooking spray. set aside. In a medium bowl beat evaporated milk, eggs, 3 tablespoons sugar, vanilla, and nutmeg.
- Arrange sliced bread in a single layer in prepared baking dish. Pour egg mixture evenly over the slices of bread. Cover and chill for 30 minutes, turning bread slices once with wide spatula.
- Combine crushed shredded wheat biscuit and melted butter; sprinkle over the bread slices. Bake in the oven at 375 degrees oven about 30 minutes or until golden brown.
- Meanwhile, combine the remaining 3 tbsp of sugar with the cinnamon. Remove from oven and garnish with the cinnamon/sugar mixture and fresh strawberries or any other fresh fruit you like or have on hand.

CRUNCHY FRENCH TOAST

- In a pie pan, whisk together the eggs, half-and-half, half the sugar, and half the cinnamon. Set aside.In a separate pie pan, stir together the panko breadcrumbs with the rest of the sugar and cinnamon. Use a fork to stir in 2 tablespoons of the butter so that the crumbs are slightly moist. Set aside. In a large nonstick skillet, heat the rest of the melted butter over medium-low heat. One by one, dunk the bread in the egg mixture (turning to coat), then lay them in the dish with the panko crumbs, turning them over and pressing them gently so that they stick and totally cover the surface.Place them into the skillet with the butter and let them cook on the first side for 5 to 6 minutes, watching closely to make sure the crumbs don't burn. (If they start to darken too fast, turn the heat slightly lower and watch.) Turn them over and let them cook for 3 minutes on the other side.Transfer the pieces to individual plates and serve with butter and syrup. Delicious!
CRUNCHY VANILLA-ALMOND FRENCH TOAST WITH FANCY FRUIT TOPPING, SWEET-N-SMOKY BACON

- Preheat oven to 350 degrees F.
- Arrange bacon on slotted broiler pan. Sprinkle with brown sugar and place in oven to bake until crisp, 20 to 22 minutes.
- Preheat a large nonstick skillet over medium heat.
- In a shallow dish, beat together with a wire whisk: eggs, half-and-half, vanilla, salt, nutmeg, cinnamon. In a second shallow dish combine flakes and nuts. Add 2 tablespoons butter to warm skillet. Place a cookie sheet lined with foil (for easy clean-up) near the stove. Coat 4 to 6 slices of bread in egg, depending on the size of your skillet, then coat bread in cornflakes and nuts. Cook slices 2 minutes on each side and transfer toast to cookie sheet. Repeat with remaining slices and transfer toast to oven. Bake 10 minutes, with already cooking bacon.
- While bacon and toast are in oven, combine fruit, sugar and liqueur in a serving bowl and reserve.
- Remove toast and bacon from oven. Warm syrup in a small pitcher in microwave 15 seconds on high. Serve toast and bacon on plates with optional garnish of mint and edible flowers.
- Pass syrup and topping at the table.
CAP'N CRUNCH FRENCH TOAST
Based on a recipe from Guy Fieri's book, Diners, Drive-ins and Dives: an All-American Road Trip...With Recipes! This celebrates the Blue Moon Café in Baltimore, Maryland. This is absolutely wonderful. My friend Eric, who loaned me this cookbook, slices the berries the night before and coats them with maple sugar and marinates them in the 'fridge overnight -- this makes them quite succulent by morning!

- In large bowl, mix together cream, eggs, sugar, and vanilla. Whisk until well combined.
- Crush cereal by placing in plastic storage bag and rolling over it with a rolling pin. Once it resembles cracker meal, transfer to a shallow dish.
- Moisten a couple pieces of bread in cream mixture until soft but not completely soaked. Allow excess liquid to drip off bread, then press into the cereal crumbs to coat evenly. Set on a sheet pan and repeat with remaining slices.
- Heat a large skillet or griddle over medium heat. Adding butter as needed, cook bread on both sides until it caramelizes, about 6 to 8 minutes total.
- TOPPING:.
- In large bowl using a hand mixer beat the cream, confectioners' sugar, and vanilla until soft peaks form.
- Dollop on top of the French toast and serve with the berries.

- Preheat oven to 325°; butter a baking sheet.
- In a shallow pie plate or shallow bowl, whisk the eggs, milk, vanilla, and salt together.
- Dunk the bread slices into the egg mixture and soak them for a few minutes on each side, turning as needed to coat evenly but not fully saturated.
- Place the cornflakes on a plate; press each slice of bread lightly into the cornflakes, coating both sides.

- Grease a 15x10x1-inch baking pan.
- In shallow bowl, combine eggs, half and half, sugar, vanilla and salt; mix well.
