KARDEA'S CURRY COCONUT AND LEMONGRASS CHICKPEA SOUP



Kardea's Curry Coconut and Lemongrass Chickpea Soup image

1 tablespoon olive oil
1 cup chopped leeks
1/2 cup chopped onions
1 cup sliced carrots (1/4 inch thick)
2 tablespoons curry powder
1 teaspoon brown sugar
1 teaspoon grated peeled fresh ginger
2 garlic cloves, minced
1/2 cup chopped lemongrass or 1/4 cup lemon juice
One 14-ounce can vegetable broth
3 cups cooked chickpeas (canned garbanzo beans will work)
One 13.5-ounce can full-fat coconut milk
1/2 teaspoon salt (or to taste)
1/4 teaspoon freshly ground black pepper (or to taste)
Steamed rice, for serving

Steps:

  • Heat the oil in a large nonstick skillet over medium heat. Add the leeks, onions, carrots; cover and cook 5 minutes or until tender. Add the curry powder, sugar, ginger, garlic and lemongrass; cook 1 minute, stirring constantly.
  • Place the onion mixture in a 5-quart electric slow cooker. Pour in the vegetable broth. Stir in the chickpeas and coconut milk. Add salt and pepper to taste. Cover and cook on low for 4 hours. Serve with rice.

I thought this up last night and it turned out pretty well. I'm not sure what the exact measurements are, so I guessed. This can be made into a vegan meal by substituting the chicken broth for veggie and the regular yogurt for soy. Feel free to adjust to your own tastes.

1/2 teaspoon cayenne pepper
1 tablespoon olive oil
1 tablespoon curry powder
2 medium onions, sliced
2 garlic cloves, minced
2 1/2 cups chicken broth
2 tablespoons tomato paste
1/4 cup chopped fresh cilantro
1/2 cup plain yogurt
2 (19 ounce) cans garbanzo beans

Steps:

  • Place onion, olive and garlic in a pan and cook until lightly browned, then add broth and tomato paste.
  • Add garbanzo beans, cilantro and curry and let simmer for 10 minutes.
  • Spoon garbanzo beans and onions into a blender and a ladle full of the broth/ tomato paste mixture as well. Blend until smooth.
  • Transfer mixture back to the pot and stir.
  • Add cayenne pepper and yogurt. Stir and serve.

6 white potatoes, cut bite size
1 green pepper, cut bite-size
1 bermuda onion, chopped
1 lb bacon, cut bite-size
2 cups ham, cut bite-size
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon sweet basil
2 teaspoons chili powder or 2 teaspoons red peppers
3 bay leaves
salt, to taste
pepper, to taste

Steps:

  • Put everything into a large pot and cook for 4 or 5 hours.
  • Water can be added as needed.

1 15 1/2-ounce can garbanzo beans (chickpeas), drained
2 tablespoons olive oil
1 cup coarsely chopped onion
2 1/2 teaspoons curry powder
1/2 pound small red-skinned potatoes, cut into 1/2-inch cubes
1 14 1/2-ounce can vegetable broth
1/2 cup canned unsweetened coconut milk
1 cup (packed) baby spinach leaves (about 1 1/2 ounces)

Steps:

  • Transfer 1/3 cup garbanzo beans to small plate. Using fork, mash beans to paste.
  • Heat oil in heavy medium saucepan over medium-high heat. Add onion and sauté until beginning to brown, about 6 minutes. Add curry powder; stir 10 seconds. Add potatoes and stir to coat. Add broth, coconut milk, whole garbanzo beans and mashed garbanzo beans. Bring soup to boil. Reduce heat to medium-low and simmer uncovered until potatoes are tender, about 18 minutes. Add spinach; stir until spinach wilts, about 2 minutes. Season with salt and pepper.

This recipe comes courtesy of my MIL, Linda. I have not made this recipe yet, but think I will make it over the Thanksgiving holiday. My DH requested that I get this recipe from her and swears it is outstanding! 11-25-07 UPDATE: Made this the night before Thanksgiving for a quick and easy meal and it was great! Had a couple of issues with the chorizo sausage I bought because it turned out to not be in a casing, but other then that it was great. Would definitely make this again.

1 (16 ounce) package dried garbanzo beans or 2 (16 ounce) cans garbanzo beans
1 finely chopped onion
1 chorizo sausage (spanish sausage)
1 1/2 quarts water
1/2 lb potato, cubed
1 ham hock
1 teaspoon salt
2 carrots, chopped

Steps:

  • Soak beans overnight with 1 tsp salt and sufficient water to cover.
  • Before cooking, drain salted water and recover with fresh water.
  • To cook beans, bring to a rapid boil. During cooking, never let the water stop boiling. (This is the secret which softens the beans.).
  • Cook beans and ham hock at least 4 hours. You have to stir often to prevent sticking on bottom.
  • About 1 hour before serving, add the onions, potatoes, carrots and slice chirizo to pot. When adding other ingredients, turn heat up to prevent boiling from stopping. This ensures tender beans.

2 tablespoons butter
1 medium onion, chopped
1 medium carrot, chopped
2 garlic cloves, chopped
1/2 teaspoon ground cumin
1/2 salt
1/4 teaspoon pepper
2 (15 ounce) cans garbanzo beans
1 (14 ounce) can chicken broth
1 tablespoon chopped of fresh mint
1/2 cup sour cream
1 tablespoon chopped cilantro

Steps:

  • In a large saucepan melt butter over medium heat. Add onion, carrot and garlic and cook, stirring, until onion is golden.
  • Add cumin, salt and pepper. Cook, stirring, 1 minute.
  • Add drained garbanzo beans and chicken broth. Simmer 10 minutes.
  • In a food processor or blender, puree soup with chopped mint until smooth.
  • Return soup to pan. Rinse processor bowl with 1/2 cup water and add to soup.
  • Reheat soup slowly over low heat, 5-8 minutes.
  • Serve hot with a dollop of sour cream and a sprinkling of cilantro on each serving.
