ANNETTE'S BASIC SUGAR COOKIES

My friend Annette G. (a great Indiana cook) is one of my favorite cooks and hostesses. She is always cooking up something delicious for her family and friends. She made Valentine's Day treats for her family recently and shared her recipe with me.

Number Of Ingredients 9

1/2 cup butter
1 cup white sugar
1 large egg
1 teaspoon vanilla
2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups powdered sugar
3 -4 tablespoons lemon juice (may use milk or water)

Steps:

  • In a medium mixing bowl, cream together the butter and sugar.
  • Beat in the egg and vanilla.
  • In a small bowl, sift together the flour, salt and baking powder.
  • Add the dry ingredients to the creamed mixture; mix well.
  • Divide dough in half.
  • Flatten halves into discs.
  • Wrap in plastic wrap and freeze 20 minutes or longer.
  • Remove from freezer and let stand 5 - 10 minutes.
  • Place one disk on a lightly floured surface, roll 1/8 inch thick.
  • Cut with your favorite cookie cutter shapes.
  • Place on a greased or parchment lined baking sheet.
  • Bake at 325F for 12-14 minutes.
  • Allow to cool for a few minutes on the cookie sheet and then remove to cookie racks.
  • In a small bowl, stir together the powdered sugar and lemon juice, adding only enough glaze to form a slow sticky stream when you dip into the glaze and let it flow back into the bowl.
  • Spread glaze over top of each cookie. Enjoy!

1/2 pound unsalted butter plus softened butter for greasing mold
1/2 cup all-purpose flour plus flour for preparing molds
3 1/4 ounces Mexican chocolate, chopped (see note)
4 3/4 ounces bittersweet chocolate, preferably Callebaut, chopped
2 1/2 teaspoons grated orange rind
4 large eggs
4 large egg yolks
1/2 cup sugar
Whipped cream

Steps:

  • Preheat oven to 400 degrees. Brush six mini-bundt molds with softened butter and dust them with flour.
  • Melt the remaining butter with both chocolates and the orange rind in a mixing bowl set over a pan of boiling water. Remove from heat and stir to combine them.
  • In a separate bowl, beat the eggs, egg yolks and sugar together until they form a ribbon. Sift the flour on top and fold it in. Fold into the chocolate in two portions.
  • Pour the batter into the prepared molds and bake for six minutes. Remove from the oven, allow to sit for five minutes, unmold and serve with whipped cream.

1-1/2 cups egg whites (about 10 large)
1 cup cake flour
2 cups sugar, divided
1/2 cup baking cocoa
1 teaspoon cream of tartar
1 teaspoon vanilla extract
1/4 teaspoon salt
GLAZE:
1/2 cup semisweet chocolate chips
3 tablespoons half-and-half cream

Steps:

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes., Preheat oven to 350°. Sift flour, 1 cup sugar and cocoa together twice., Add cream of tartar, vanilla and salt to egg whites; beat on medium speed until soft peaks form. Gradually add remaining sugar, 2 tablespoons at a time, beating on high after each addition until sugar is dissolved. Continue beating until stiff glossy peaks form. Gradually fold in flour mixture, about 1/2 cup at a time., Gently transfer to an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets. Bake on lowest oven rack until top springs back when lightly touched and cracks feel dry, 40-50 minutes. Immediately invert pan; cool completely in pan, about 1 hour., Run a knife around sides and center tube of pan. Remove cake to a serving plate. For glaze, in a microwave, melt chocolate chips with cream; stir until smooth. Drizzle over cake.

Bittersweet Chocolate-Almond Cake With Amaretti Cookie Crumbs image

Here's a cake that comes together with the push of a button - butter, sugar, eggs and cocoa as well as dark chocolate, almonds and amaretti cookies are blended in a food processor. Although it looks like a brownie, the cake tilts toward a nut torte. It's low and sleek, simple, sophisticated and packed with flavor. The original recipe appeared in my debut cookbook, "Sweet Times," in 1991, and when I made it for Julia Child that year, I got her thumbs up. Over time, I haven't fiddled much with the recipe's basics, but these days I finish the cake with a glaze and a sprinkling of crushed amaretti for style and crunch. I prefer amaretti di Saronno by Lazzaroni for the cake, but other amaretti work well too. And don't be distressed if the cake develops a mound during baking (it happens now and then). Press it down with a spatula - it doesn't diminish this cake's deliciousness.

1 stick (113 grams) unsalted butter, cut into chunks, at room temperature, plus more for greasing the pan
2 tablespoons unsweetened cocoa powder, plus more for dusting the pan
3/4 cup (75 grams) sliced or slivered almonds
6 double amaretti cookies (about 72 grams), such as Lazzaroni brand
1/3 cup (67 grams) sugar
1/4 teaspoon fine sea salt
3 large eggs, at room temperature
4 ounces (113 grams) bittersweet chocolate, melted (it can still be warm)
2 ounces (57 grams) bittersweet chocolate, finely chopped
1/4 cup (60 ml) heavy cream
1 tablespoon sugar
1 tablespoon water
2 double amaretti cookies (about 24 grams), crushed

Steps:

  • Center a rack in the oven, and preheat to 350. Butter an 8-inch cake pan, line the bottom with parchment paper, butter the paper and dust the interior with cocoa powder; tap out the excess.
  • To make the cake: Put the almonds, amaretti, sugar, cocoa and salt into a food processor, and process in short spurts, until the almonds and cookies are finely ground. Add the butter and eggs, and process, scraping the bowl occasionally, for about 2 minutes, until the mixture is homogeneous. Add the melted chocolate a little at a time, pulsing after each addition. Scrape the bowl, and then pour the batter into the pan. Standing back (to avoid being showered by cocoa powder), rap the pan against the counter a few times, to break the largest bubbles in the batter.
  • Bake the cake for 25 to 30 minutes, or until a tester comes out streaky; the top of the cake will look dry and perhaps cracked. If the top has erupted in a couple of places - it happens - use a spatula to press down the bumps as best as you can. Let the cake rest on a rack for 15 minutes.
  • Run a blunt knife between the cake and the sides of the pan. Invert the cake onto the rack, peel off the paper and turn right side up; cool to room temperature.
  • When you're ready to glaze the cake, place the rack over a baking sheet lined with parchment or foil - the drip-catcher.
  • To make the glaze: Put the chocolate in a heatproof measuring cup with a spout or in a bowl. Bring the cream, sugar and water to a boil in a saucepan (or do this in the microwave). Pour the cream over the chocolate, and stir gently until you have a smooth glaze.
  • Pour the glaze over the cake, and use an offset spatula or knife to spread it over the top. Sprinkle over the crushed amaretti. Refrigerate for at least 30 minutes to set the glaze (which will always be soft). Serve the cake slightly chilled or at room temperature (my preference).

This recipe is peachy! Pineapple is typically used with ham so using peach added a new - and great - flavor to the ham. The glaze is wonderfully sweet. This ham would be a great addition to your dinner table!

Number Of Ingredients 12

9 lb bone-in spiral cut ham, fully cooked
1 c peach preserves
1 c brown sugar
3/4 c Dijon mustard
1/2 c white cranberry/peach juice
1 pinch ground cloves
1 can(s) sliced peaches for garnish
ADDITIONAL GLAZE FOR SLOW COOKER
1/2 c peach preserves
1/2 c brown sugar
6 Tbsp Dijon mustard
1/4 c white cranberry/peach juice

Steps:

  • 1. Preheat oven to 350. Put about 1 cup of water in the bottom of a good sized broiler pan or a roasting pan set up with a rack. Put rack back on top and place ham meat side down.
  • 2. Mix remaining ingredients in a large glass measuring cup that you can pour out of.
  • 3. Start to pour 1/2 of glaze over ham, making sure you open the layers of spirals, getting between them but leaving plenty to pour on top to drip down the sides as well.
  • 4. Cover ham loosely with aluminum foil. Bake on center rack for 50-60 minutes (mine baked for 60). Remove foil. Pour the other 1/2 of glaze on ham and return to oven for an additional 20-30 minutes uncovered (mine took 30).
  • 5. While ham is cooking the last 20-30 minutes. Make up another 1/2 batch of glaze. Set aside.
  • 6. Remove ham from oven. Cut ham off bone and place in slow cooker. Pour juices from the bottom of pan over ham as well as the additional glaze you made. Turn slow cooker/crock pot to warm or low and allow the ham to soak up even more flavor as you finish preparing the rest of your dinner and getting everything on the table.
  • 7. Place ham on a serving platter and surround with drained sliced peaches for garnish. Enjoy!
