2/3 cup quinoa, rinsed
1 tablespoon canola oil
1 medium sweet potato, diced
1 medium onion, chopped
1 celery rib, chopped
1 cup frozen peas
2 garlic cloves, minced
1 teaspoon minced fresh gingerroot
3 teaspoons curry powder
1/4 teaspoon salt
2 cups shredded cooked chicken

Steps:

  • In a small saucepan, bring 1-1/3 cups broth to a boil. Add quinoa. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes., In a large skillet, heat oil over medium-high heat; saute sweet potato, onion and celery until potato is tender, 10-12 minutes. Add peas, garlic, ginger and seasonings; cook and stir 2 minutes. Stir in chicken and remaining broth; heat through. Stir in quinoa.

14 oz coconut milk
2 tablespoons red curry paste
2 tablespoons fish sauce
3 tablespoons brown sugar ((use more or less sugar, depending on your preference))
1 tablespoon lemon grass (or 1 lemon grass stalk)
1 lb chicken breast
1 tablespoon olive oil
1/2 cup mushrooms
1 red bell pepper
1/4 cup basil leaves (chopped (or use 1/2 teaspoon dry basil))
1 cup quinoa
2 cups water

Steps:

  • In a medium pan, heat olive oil. Add sliced mushrooms and sliced bell pepper. Cook on high heat for 10 minutes until vegetables soften.
  • In the mean time, cook chicken breast (or use the one already cooked). You can either boil it, or roast it in the oven. After it's cooked, cut the chicken breast in medium size pieces.
  • Bring coconut milk in a large pan to boil, reduce to simmer. Add 1 tablespoon of curry paste, fish sauce, brown sugar, lemon grass, and stir really well so that curry paste dissolves. Taste your stew and add 2nd tablespoon of curry paste, if desired. For a red curry paste, I usually use the one produced by Thai Kitchen (it's a popular brand sold in most stores). I like to use frozen lemon grass (chopped lemon grass), which you just add and it remains in the dish. If I were to use a lemon grass stalk - I would remove it at the end of cooking time. Simmer for 30 minutes for all tastes to blend. During the last 10 minutes of cooking, add cooked vegetables and sliced chicken breast into the soup, stir well.
  • In the mean time, bring 2 cups of water and 1 cup quinoa to boil, reduce to medium and cook quinoa for 10-15 minutes until all water is absorbed and quinoa is cooked al dente.
  • To serve, pour soup into each bowl, garnish with basil leaves. Serve quinoa in a separate bowl.

For the quinoa:
¾ cup quinoa
1 2/3 cup water
1 (15 ounce) can chickpeas, rinsed and drained
¾ cup frozen green peas, thawed
1 tablespoon sesame oil (or sub olive oil)
½ tablespoon freshly grated ginger
1 teaspoon curry powder, plus more if you want a really big curry punch!
¼ teaspoon ground turmeric
¼ teaspoon garlic powder
½ teaspoon salt
Freshly ground black pepper
For the mix-ins:
1 red bell pepper, diced
½ cup shredded carrots (from 1 large carrot)
½ cup dried cherries (or dried cranberries)
¼ cup finely diced red onion
1/3 cup finely diced cilantro
1/3 cup finely diced flat leaf parsley
For the maple cayenne toasted cashews:
3/4 cup raw cashews
½ tablespoon pure maple syrup
¼ teaspoon cayenne pepper
1/2 teaspoon sea salt

Steps:

  • Add in quinoa and water to a medium pot and bring mixture to a boil, then cover, reduce heat to low and cook for exactly 15 minutes. After 15 minutes, remove from heat and fluff quinoa with a fork, then replace lid and allow quinoa to steam for 5-10 more minutes. While quinoa is cooking you can chop all your veggies.
  • Once quinoa is done cooking, stir in chickpeas, peas, sesame oil, ginger, curry powder, turmeric, garlic powder, salt and black pepper.
  • Next stir in red bell pepper, shredded carrots, dried cherries, red onion, cilantro and parsley.
  • Finally make your maple cayenne toasted cashews: place cashews in a skillet over medium heat. Toast cashews for 4-6 minutes, stirring frequently until they turn slightly golden brown and fragrant, then turn off heat and immediately add in maple syrup, cayenne pepper and sea salt. Stir for 30 more seconds to coat cashews, then transfer to a plate or piece of parchment paper to cool for a few minutes. Cashews may stick together so try to spread them in an even layer when they are cooling.
  • Top quinoa with cashews and serve! Serves 4 for a main meal or 6 as a side. I suggest waiting to add cashews until you are ready to serve so they stay nice and crunchy.

1 tablespoon olive oil
1/3 cup olive oil
1/2 cup onion, chopped
1 teaspoon curry powder
2 tablespoons lemon juice

1/2 cup carrot, finely chopped
1/2 red pepper, chopped
1/4 cup dried apricot, chopped

Steps:

  • Toast the Quinoa in a frying pan for about 5 minutes or until it begins to pop.
  • Bring 2 cups water to a boil in a saucepan and add toasted quinoa.
  • Cover and simmer over a medium heat for about 15 - 20 minutes or until water is absorbed. Put quinoa in a large bowl and let cool.
  • Heat 1 tbsp oil in a frying pan and add onion, fry onion over a medium heat until the onion begins to soften, add curry powder and cook for another 2 minutes. Remove from heat and set aside.
  • Whisk together in a bowl the remaining oil, lemon juice, mustard, salt and pepper and pour over quinoa. Stir in reserved onion mixture, carrot, red pepper, apricots, cashews, green onion, and parsley.
  • Serve.

250g chicken mince
1 garlic clove , finely chopped
1 tsp turmeric
pinch of cumin
pinch of cinnamon
handful dill , finely chopped
2 spring onions , finely chopped
50g quinoa
4 cauliflower florets
25g sweet potato , chopped
1 tbsp olive oil
1 tbsp medium curry powder
1 tsp pistachios , chopped
1 tsp sultanas
½ lime , juiced

Steps:

  • For the meatballs, mix together all the ingredients in a bowl with some seasoning. Form into six balls and chill in the fridge for 20 mins.
  • Heat oven to 200C/180C fan/ gas 6. Wash the quinoa and put it in a saucepan with 100ml water. Bring to the boil, then turn down to a gentle simmer and cook for 10-15 mins or until doubled in size and tender. Drain and set aside to cool.
  • Put the cauliflower and sweet potato in a roasting tin and toss in the oil and curry powder. Put the meatballs in a separate tin. Cook both in the oven for 15 mins or until cooked through.
  • Mix the quinoa with the cauliflower, sweet potato, pistachios and sultanas, squeeze over the lime juice, then serve with the meatballs.

1 cup rinsed quinoa
2 cups water or 1 cup water and 1 cup vegetable broth
15 oz. can chickpeas, drained and rinsed (1.5 cups, 255 g)
1/4 cup dried cranberries (35 g)
1 green bell pepper, seeds removed and diced
1 medium carrot, peeled and finely grated
1/2 cup thinly sliced green onion (40 g)
1/4 cup tahini (60 g)
2 tbsp lemon juice (30 mL)
2 tsp madras curry powder
2 tbsp maple syrup (30 mL)
salt and pepper, to taste

Steps:

  • Bring the water (and broth, if using) to a boil in a medium saucepan. While you're waiting, rinse the quinoa well under cold water.
  • Add the quinoa to the boiling water, cover and reduce the heat to medium low. Simmer lightly for 15 minutes then remove from the heat. Let it sit for 5 minutes then remove the lid and fluff with a fork.
  • While the quinoa is cooking, add the rest of the ingredients to a mixing bowl or serving bowl. Mix well to combine.
  • Once the quinoa is ready, add that to the bowl with the rest of the ingredients and mix well. Season with salt and pepper, if needed. Enjoy!

3 whole (6 split) chicken breasts, bone-in, skin-on
Olive oil
Kosher salt and freshly ground black pepper
1 1/2 cups good mayonnaise (recommended: Hellman's)
1/3 cup dry white wine
1/4 cup chutney (recommended: Major Grey's)
3 tablespoons curry powder
1 cup medium-diced celery (2 large stalks)
1/4 cup chopped scallions, white and green parts (2 scallions)
1/4 cup raisins
1 cup whole roasted, salted cashews

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken into large bite-size pieces.
  • For the dressing, combine the mayonnaise, wine, chutney, curry powder, and 1 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth.
  • Combine the chicken with enough dressing to moisten well. Add the celery, scallions, and raisins, and mix well. Refrigerate for a few hours to allow the flavors to blend. Add the cashews and serve at room temperature.
