½ cup sliced celery
⅓ cup finely diced onion
2 tablespoons margarine
1 (8 ounce) package cream cheese, diced
1 cup milk
1 ½ cups cubed potatoes
½ pound frozen cooked shrimp, thawed and drained
2 tablespoons dry white wine
½ teaspoon salt

Steps:

  • In a large stock pot saute celery and onions in margarine.
  • Add cream cheese and milk; and stir over low heat until cream cheese is completely melted.
  • Add potatoes, shrimp, dry white wine and salt. Heat thorough, stirring occasionally and then serve.

2 tablespoons unsalted butter
1 bunch scallions, thinly sliced (white and green parts separated)
1 bunch scallions, thinly sliced (white and green parts separated)
2 stalks celery, diced
1 green bell pepper, diced
2 tablespoons all-purpose flour
1 teaspoon Old Bay Seasoning
2 cups reduced-fat (2 percent) milk
1/2 cup long-grain white rice
1 1/4 cups corn kernels (from 2 ears corn)
1 pound medium shrimp, peeled and deveined
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
1 tablespoon dry sherry (optional)

Steps:

  • Heat the butter in a large pot over medium-high heat. Add the scallion whites, celery and bell pepper and cook, stirring occasionally, until the vegetables are crisp-tender, about 4 minutes. Add the flour and Old Bay Seasoning and cook, stirring, until the flour is lightly toasted, about 1 minute. Add the milk, 6 cups water and the rice. Bring to a rapid simmer, then reduce the heat to medium and cook until the rice is tender, about 15 minutes. Add the corn to the pot and cook 3 minutes. Stir in the shrimp and cook until they curl and turn opaque, about 3 more minutes. Season the chowder with salt and pepper and stir in the sherry. Ladle into bowls and top with the scallion greens.

1/2 cup chopped onion
2 tablespoons butter or 2 tablespoons margarine
1 1/2 cups water
1 lb medium raw shrimp, peeled,deveined,thawed if frozen,cut in bite sized pieces
3 cups frozen hash brown potatoes (the diced kind)
1 1/2 teaspoons salt, to taste
1/4 teaspoon pepper, to taste
4 cups milk
1/2 cup half-and-half or 1/2 cup light cream
4 ounces cheddar cheese, shredded
1/4 cup fresh parsley, chopped

Steps:

  • Saute onions in butter in a large skillet until tender, about 5 minutes or so.
  • Add water and bring to a boil.
  • Add shrimp and cook 3-5 minutes, or until no longer translucent in center(be careful not to overcook them).
  • Remove shrimp and place in a covered bowl.
  • Add potatoes to the same pan, and season with salt & pepper to taste.
  • Simmer for about 4-6 minutes, stirring as needed, until potatoes are tender.
  • Add milk and half and half and bring to just a boil, stirring occasionally.
  • Once it just comes to the boil, remove from heat and stir in the cheese until melted.
  • Add shrimp back to the pot along with parsley, reserving a small portion of the parsley for garnishing if desired.

1 (40 g) small rib celery
¼ (28 g) medium onion, peeled
1 (50 g) small carrot, halved
Pinch of marjoram
Pinch of ground nutmeg
1 tablespoon lemon juice
2 cups (480 ml) chicken broth
8 ounces (227 g) shrimp or crab, cleaned
1 cup (240 ml) milk

Steps:

  • 1. Place butter, celery, onion, carrot, marjoram, nutmeg, lemon juice, and chicken broth into the Vitamix container in the order listed and secure lid.
  • 2. Select Variable 1.
  • 3. Turn machine on and slowly increase speed to Variable 4.
  • 4. Blend for 10 seconds.
  • 5. Pour into a 4-quart pan and simmer for 10 minutes. Add shrimp. Cook for 5 minutes or until shrimp is no longer pink. Add milk and maintain temperature. Serve immediately.

1/4 teaspoon thyme

Steps:

  • Peel the shrimp and boil the shells in 1 gallon water with the scraps from chopping the onion and celery and 2 teaspoons salt.
  • Reduce the liquid to 1/4 or about 1 quart of stock and strain.
  • Blanch the shrimp in the stock.
  • Do not overcook.
  • Strain and reserve shrimp and stock for soup.
  • Saute the celery, carrots and onion.
  • Add black pepper, curry powder, chili powder, thyme and chopped garlic.
  • Add flour and mix well.
  • Gradually add 1 quart of hot shrimp and stock and simmer for about 15 minutes on low heat.
  • Add diced tomato, green pepper and potatoes to stock mixture and continue to simmer until potatoes are tender.
  • Add salt to taste and rock shrimp just before serving.
  • Serve topped with oyster crackers and fresh chopped parsley.

Steps:

  • Heat the oil in a large wide pot or medium Dutch oven over medium heat. Add the bacon and cook, stirring occasionally until crisp, about 5 minutes. Add the onion and cook, stirring, until soft, about 3 minutes. Add the tomato paste and stir until toasted, about 30 seconds. Steps:

  • Melt the butter in a Dutch oven or large pot over medium-high heat. Stir in the celery, scallions, potatoes and corn. Add the thyme, bay leaves, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, 3 minutes. Stir in the flour until incorporated, about 2 minutes. Stir in the milk, then cover and bring to a boil. Uncover, reduce the heat to medium low and gently simmer until the vegetables are tender, about 6 minutes. Remove from the heat. Discard the thyme sprigs and bay leaves.
  • Transfer one-third of the mixture to a blender and puree until smooth, then return to the pot. Return to a simmer over medium-high heat. Stir in the shrimp and cook until opaque, about 4 minutes. Season with salt. If the soup is too thick, stir in up to 1 cup water. Divide among bowls and sprinkle with paprika.

1 cup onion, chopped
1 cup celery, chopped

32 ounces chicken broth (fresh, or 2 16 oz. cans)
4 cups potatoes (peeled and finely chopped)

2 bay leaves

I got the inspiration for this creation while watching one of my least favorite chefs, Email Lagross (who, by the way, is one of only a handful of chefs in the world who has such rare spices as "papa reeka" and "cardamin" in his pantry) on TV. As I watched him standing back and throwing spices, from about 6 feet away, into (or "inside of", in Lagross-speak) the pot, I said to myself, "Self! This is a freakin' cooking show, not basketball tryouts!" Fortunately, since I am not schizo, "self" did not answer "me". Are you with me so far?

1/2 lb unsliced thick slab bacon or 1/2 lb pancetta, diced
1 cup chopped scallion
1 cup roughly chopped onion

Steps:

  • In a heavy stockpot, over medium-high heat, cook the bacon or pancetta until most of the fat is rendered, about 8 minutes.
  • Stir in the scallions, onion, celery and carrots.
  • Sauté for about 2 minutes until the veggies start to wilt.
  • If desired, season lightly with salt and pepper (be careful since the bouillon/stock and Old Bay seasoning are salty – you can adjust later).
  • Add the bay leaves, thyme, Tabasco and Old Bay.
  • Stir in the flour and cook for 2 minutes.
  • Add the potatoes and stir in the bouillon or stock.
  • Bring to a gentle boil and then reduce heat to simmer.
  • Simmer until the potatoes are just fork tender, about 10 to 12 minutes.
  • Add the heavy cream and bring just to a simmer – no hotter or the soup may stick to the bottom.
  • Add the shrimp and simmer for 2 to 4 minutes until the shrimp are just turning opaque.
  • Stir in the parsley, taste the soup and adjust seasonings if necessary.
  • Eat it.

2 tablespoons unsalted butter
1 small yellow onion, diced small
2 cups corn kernels (from 3 ears), cobs reserved
4 medium Yukon Gold potatoes, peeled and cut into 1/2-inch pieces (5 cups)
Salt and pepper
5 cups whole milk
1 pound medium shrimp, peeled and deveined
1/4 cup thinly sliced fresh basil leaves, plus more for serving
Crusty bread (optional)

Steps:

  • In a medium pot, melt butter over medium. Add onion and saute until translucent, about 6 minutes. Stir in corn kernels and potatoes; season with salt and pepper. Add milk, 1 cup water, and corncobs.
  • Increase heat to medium-high and bring to a boil, then reduce to a simmer and cook until potatoes are tender when pierced with a knife, about 8 minutes. Add shrimp and cook until opaque throughout, 3 to 5 minutes. Discard cobs and stir in basil.
  • Divide among bowls and top with more basil. Serve with bread if desired.

1/2 c each chopped onion, celery, carrot and sweet red pepper
1/4 c butter, cubed
1/4 c all-purpose flour
2 c 2% milk
1/2 lb frozen cooked small shrimp, thawed
1 can(s) (14-1/2 ounces) diced potatoes, drained
1 c vegetable broth
1 c frozen corn, thawed
2 tsp seafood seasoning
1/2 tsp dried thyme

Steps:

  • 1. In a large saucepan, saute the onion, celery, carrot and red pepper in butterfor 5 minutes or until tender. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
  • 2. Add the shrimp, potatoes, broth, corn, seafood seasoning and thyme. Reduce heat; cover and simmer for 10 minutes or until heated through.

1 tbsp vegetable oil
1 large onion, chopped
100g streaky bacon, chopped
1 tbsp plain flour
600ml fish stock, made from 1 fish stock cube
225g new potato, halved
pinch mace
pinch cayenne pepper
300ml milk
320g pack fish pie mix (salmon, haddock and smoked haddock)
4 tbsp single cream
250g pack cooked mixed shellfish
small bunch parsley, chopped
crusty bread, to serve

Steps:

  • Heat the oil in a large saucepan over a medium heat, then add the onion and bacon. Cook for 8-10 mins until the onion is soft and the bacon is cooked. Stir in the flour, then cook for a further 2 mins.
  • Pour in the fish stock and bring it up to a gentle simmer. Add the potatoes, cover, then simmer for 10-12 mins until the potatoes are cooked through.
  • Add the mace, cayenne pepper and some seasoning, then stir in the milk.
  • Tip the fish pie mix into the pan, gently simmer for 4 mins. Add the cream and shellfish, then simmer for 1 min more. Check the seasoning. Sprinkle with the parsley and serve with some crusty bread.

1 cup olive oil
2 pounds large shrimp - peeled and deveined
1 cup all-purpose flour
1 ½ cups dry white wine
1 tablespoon Worcestershire sauce
5 cloves garlic, minced
5 tablespoons fresh lemon juice
½ cup chicken broth
½ cup butter, diced
salt and pepper to taste
2 tablespoons chopped fresh parsley

Steps:

  • In a deep skillet, heat the olive oil over medium-high heat. Lightly coat the shrimp in flour. In batches, saute shrimp in oil until golden brown; each batch should take approximately 2 minutes. Drain on paper towels.
  • Discard oil and add the wine, Worcestershire sauce, garlic, lemon juice, and chicken broth to the skillet. Cook over high heat until liquid has reduced by half (approximately 5 minutes). Stir in butter and season with salt and pepper to taste. Lower head to medium, add shrimp cook for 1 minute (until shrimp are heated). Sprinkle with parsley before serving.
