ASIAN MEATBALLS AND CARROT RICE
This recipe for Asian meatballs involves light and tender meatballs that are seasoned with asian flavors, tossed in a honey garlic sauce and served over a colorful carrot rice. It's a quick and easy weeknight meal that the whole family will love!

- Preheat broiler. In a medium saucepan, bring 1 1/2 cups salted water to a boil. Add rice and return to a boil. Cover, reduce to a simmer, and cook until rice is tender, about 15 minutes. Remove from heat and add the carrot on top. Let stand, covered, 8 minutes, then stir in carrot and fluff rice with a fork.
- In the meantime, in a medium bowl, combine panko breadcrumbs, turkey, cilantro, soy sauce, sriracha, egg, sugar, garlic, 1/4 teaspoon black pepper, 1 1/2 teaspoons salt and 2 tablespoons of water. Gently mix to combine and form into tablespoon sized meatballs.
- Place the meatballs in a single layer on a foil lined baking sheet that has been coated in cooking spray. Coat the tops of the meatballs with cooking spray. Broil the meatballs about 4-6 inches from the heat element for 10-15 minutes or until meatballs are cooked through.
- For the sauce: in a small bowl mix together the honey, soy sauce and garlic. Drizzle the sauce over the meatballs and toss to combine.
- Top the meatballs with chopped cilantro and sesame seeds if desired and serve with rice and lime wedges.

- Preheat oven to 400 degrees. Add turkey, breadcrumbs, garlic, green onions, egg, sesame oil and soy sauce. Mix with your hands until combined.
- Grease a baking sheet with oil. Portion out 12 meatballs. (Working with slightly wet hands helps)
- Place meatballs on the oiled baking sheet and cook for 15 minutes or until fully cooked, flipping halfway through.
- Take out of the oven and toss with the Asian sauce.
- Serve immediately and garnish with green onions and sesame seeds, if desired.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Combine turkey, cilantro, bread crumbs, egg, scallions, vegetable oil, sesame oil, and soy sauce in a large bowl. Gently mix with your hands until combined. Roll tablespoon-sized scoops between your palms to form meatballs. Arrange meatballs on the prepared baking sheet.
- Bake in the preheated oven until well browned, 20 to 25 minutes.
- Meanwhile, make the dipping sauce. Smash ginger with the heavy side of a knife and place in a small pot. Add brown sugar, soy sauce, rice vinegar. Stir over medium-low until sugar dissolves, about 3 minutes. Simmer, stirring frequently, until slightly thickened, about 3 minutes. Fish out ginger and divide sauce among small cups.
- Serve meatballs alongside sauce, with toothpicks for dipping.

Courtesy of Everday Food Magazine Nov 2010. These little meatballs were a great quick meal. My girls gobbled them up (no pun intended) they each ate 4! We served them with carrot rice as described in the magazine but I think it would be good with sesame ginger rice or cilantro lime rice too. Recipe says you can cook and freeze for up to 3 mos. Can also be made with ground pork (I used a mix of turkey and pork).

- In medium bowl combine breadcrumbs and 3 tablespoons water. Let stand for 5 minutes. add turkey, scallion whites, cilantro, fish sauce, hot sauce, sugar, garlic, and 1 1/2 teaspoons salt. Gently combine and from into 12 meatballs.
- In large nonstick skillet, heat 1 teaspoon oil over medium-high heat. In batches brown meatballs on all sides, 10 minutes total (add oil as needed). Transfer to baking sheet and bake until cooked through (10 minutes). Serve meatballs with rice, scallion greens, anf lime wedges.
