¼ cup soy sauce
¼ cup cider vinegar
2 tablespoons honey
2 tablespoons canola oil
10 large mushrooms, cut in half
2 green onions, minced
3 skinless, boneless chicken breast halves - cut into chunks
½ pound sliced thick cut bacon, cut in half
1 (8 ounce) can pineapple chunks, drained
skewers

Steps:

  • In a large bowl, mix the soy sauce, cider vinegar, honey, canola oil, and green onions. Place the mushrooms and chicken into the mixture, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.
  • Preheat grill for high heat.
  • Remove the mushrooms and chicken from the marinade and shake off excess. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low and simmer for 10 minutes; set aside.
  • Wrap the chicken chunks with bacon, and thread onto skewers so that the bacon is secured. Alternate with mushroom halves and pineapple chunks.
  • Lightly oil the grill grate. Arrange skewers on the prepared grill. Cook 15 to 20 minutes, brushing occasionally with remaining soy sauce mixture, until bacon is crisp and chicken juices run clear.

This really is the best BBQ Chicken Skewers recipe! There are a few easy extra steps that really add a depth of flavor that you can't get from just BBQ sauce. One word...BACON.

2 pounds boneless (skinless chicken thighs or breasts)
2 teaspoons kosher salt
1 1/2 tablespoons sweet paprika
2 teaspoons smoked paprika
4 teaspoons sugar
2-3 slices raw bacon (cut into 1/2-inch pieces)
1 cup of your favorite BBQ sauce

Steps:

  • Trim chicken of excess fat, then cut the chicken into 1-inch cubes. In a large bowl, toss the chicken with the salt. Then cover with plastic wrap and refrigerate for at least 30 minutes and up to 1 hour.
  • Turn all grill burners to high, close lid, and heat for about 15 minutes. Leave primary burner on, but turn off other burners.
  • Meanwhile, pat the chicken pieces dry with paper towels. In a small bowl, combine both paprika and sugar. Place the raw bacon in a food processor or blender and pulse for about 30-45 seconds, until a smooth paste forms, scraping down the sides of the bowl twice throughout. Add the bacon paste and spice mixture to the chicken. Mix with hands or spatula until the ingredients are blended and chicken is coated. Thread the chicken onto the skewers, rolling or folding as needed to maintain 1-inch cubes.
  • Grill the chicken over the primary burner with lid closed, turning one-quarter of a turn every 2 minutes or so, until browned and slightly charred (about 8 minutes total for chicken breast and 10 minutes for thighs). Brush the top of skewers with BBQ sauce; flip and cook until sauce is browned in spots, about 1 minute. Brush second side with sauce; flip and cook for another minute or so, until cooked through.
  • Remove skewers from grill, tent with foil, and let rest for 5 minutes. Serve, passing remaining BBQ sauce separately, if desired.

  • Preheat oven to 375 degreesInsert skewers through each chicken tender vertically, and wrap with a piece of bacon. 12 -16 button mushrooms (or whatever muchroom you prefer)
1 large green pepper, diced into large squares
12 -16 cherry tomatoes
1 large onion, cut into unseparted chunks
2 lbs boneless skinless chicken breasts or 2 New York strip steaks, if you want to mix and match
6 -8 slices bacon, cut in half width wise
6 -8 wooden skewers
salt
pepper
seasoning, your preference

Steps:

  • You want to start out by soaking you wooden skewers in water for at least 25 minutes so they do not burn.
  • Chop up all your veggies into the desired size.
  • chop your chicken into chunks.
  • You dont want them too big otherwise your bacon and veggies might burn waiting for it to cook.
  • Cut your bacon in half.
  • Start poking a piece of veggie onto the skewer.
  • When you want to put a piece of chicken on, grab one pice of the bacon that was cut in half and wrap it around the chunk of chicken so the ends are at the same area.
  • Poke the skewer where the ends of the bacon meets.
  • Just start alternating all the veggies and chicken, and if you are using it steak, alternate the steak and chicken.
  • Put them on the grill on a low setting so as to not burn the bacon, and season with spices you prefer.
  • Cook until the juices run clear in the chicken.

3 skinless boneless chicken breasts (cut into 1-2 inch chunks)
1/ 4 cup soy sauce
1/ 4 cup cider vinegar
2 tablespoons honey
2 tablespoons olive oil
1 package fresh mushrooms (8 ounces-cut in half-I used baby portabellas-really good)
1 bell pepper (seeded and cut into 1 to 2-inch squares)
2 cloves of garlic (crushed and minced)
2 green onions (chopped)
1 medium red onion Cut into (separated and cut into 2-inch squares)
1 pound thick bacon (cut in half)
1 can pineapple chunks (drain and set liquid aside)
6 Skewers soaked in cold water at least 1 hour-longer is better

Steps:

  • Cube the chicken, and prepare the green onions, garlic, and mushrooms according to the ingredients list.
  • In a large bowl combine the olive oil, soy sauce, vinegar, honey, garlic, and the pineapple juice. Gently mix in the chicken, mushrooms and green onions. Marinate, refrigerated for at least 1 hour.
  • Remove the chicken and mushrooms from marinating by pouring it into a small saucepan. Bring the mixture to a boil, reduce the heat, and simmer uncovered for about 15 minutes. Set aside.
  • Prepare and preheat the grill to medium-high heat-lightly oil grates with cooking oil

3 Tbsp ranch seasoning
16 oz bacon

Steps:

  • Cut chicken breasts into 1-2 inch pieces.
  • In a small mixing bowl combine olive oil, pepper and ranch seasoning. Mix until combined
  • Place chicken in Ziploc bag and pour ranch dressing mixture over the chicken. Seal and turn to coat. Refrigerate at least 3 hours or overnight
  • Place bacon on a microwave plate lined with paper towels so it's not laying on top of the other pieces. Microwave the bacon on a plate for about 1.5 minutes. You will have to do multiple batches. Cut bacon strips into 2 inch square pieces.
  • Thread a piece of chicken, then bacon repeating until the skewer is filled.
  • Place on grill preheated to 350 degrees. Grill 6-8 minutes on each side then flip. Remove when chicken has reached 160 degrees. Do not overcook chicken, this will result in dry, chewy chicken.
