- In a cocktail shaker filled with ice, add gin, simple syrup, and lemon juice. Shake well and pour into a rocks glass. Top with club soda and bitters, garnish with cucumber slice.

- To infuse, add prepared produce to a clean 1 liter jar. Cover with liquor and store in refrigerator, shaking daily for 4 days before straining.
CUCUMBER AND GINGER FIZZ
Steps:
- In a shaker, combine the cucumber slices, mint leaves and ginger. Muddle the ingredients until they begin to soften. Add enough ice to fill up half of the shaker. Add the cucumber juice and lime juice and shake until the ingredients are combined.
- Transfer immediately to a tall glass and top with the ginger beer. Serve.
GIN: SOUTHSIDE FIZZ
The fizz comes from the soda. The buzz comes from the gin. The cool comes from the muddled mint.

SOUTHSIDE
Many unconfirmed reports of this cocktail's creation exist. Some believe it came from Chicago's South Side during Prohibition; others think that it comes from the Southside Sportsmen's Club on Long Island. Manhattan's 21 Club also claims it as its own creation. There, they serve it long in a Collins glass over ice with a mint spring for garnish.

Steps:
- Combine all the ingredients in a cocktail shaker filled with ice and shake vigorously for 15-20 seconds, or until frosted on the outside. Double strain into a coupe. Garnish with a mint leaf.
- Variations
- For an East Side, muddle a few cucumber slices with the mint and garnish with a fresh cucumber slice.
- Substitute vodka or tequila for the gin.
- Serve in a highball glass over fresh ice and top with club soda.
- Add 1-2 dashes of absinthe to make the French Pearl cocktail.
