CRUNCHY EGG SALAD PINWHEELS

Steps:
- Combine all ingredients except tortillas.
- Spread egg salad evenly onto tortillas; roll up tightly. Wrap individually in plastic wrap.
- Refrigerate 30 min.
- Unwrap roll-ups; cut each into 6 pieces to serve.

EGG SALAD PINWHEELS

- Make egg salad: Place eggs in a large saucepan, and add enough cold water to cover by 3 inches. Bring water to a boil over high heat. Cook 1 minute, and remove from heat; cover, and let stand 10 minutes. Remove eggs from pan, and rinse under cold water to stop cooking.
- Peel eggs, and finely chop. Place in a large bowl, and add 1 cup mayonnaise; stir to combine. Season with salt and pepper; stir again to combine. Cover with plastic wrap, and refrigerate until needed.
- Make pinwheels: Using a serrated knife, remove crust from all sides of bread loaves. Cut each loaf lengthwise into long 1/2-inch-thick slices. Spread a dab of remaining 1/2 cup mayonnaise on one side of each slice, and top with a thin layer of egg salad. Roll each slice into a log, starting at one of the short ends; wrap well in plastic wrap, and refrigerate overnight. Just before serving, thinly slice crosswise into pinwheels with a serrated knife.
CHEDDAR AND BACON PINWHEELS

- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside.
- In a small bowl, stir together the cream cheese and scallions. Season with salt and pepper.
- Unfold the pastry sheets on a lightly floured work surface. Lightly roll each piece of pastry into a 10-inch square. Spread the cream cheese mixture over the entire surface of each piece of pastry, leaving a slight border around the edges. Sprinkle the Cheddar and bacon in an even layer over the top of the cream cheese mixture. Tightly roll each pastry sheet into a log (jelly roll style), then pinch the seam closed and place seam-side down on the work surface.
- Using a sharp knife, cut both logs crosswise into 12 pinwheels each, approximately 1 inch thick. Transfer 12 pinwheels to each prepared baking sheet, spiral-side up. In a small bowl, whisk the egg and 1 tablespoon water until combined to make an egg wash. Brush the tops and sides of the pinwheels with the egg wash.
- Bake the pinwheels until puffed and golden, 25 to 30 minutes. Serve warm.

- Put the hard boiled eggs in a small mixing bowl, and using the back of a fork smash the eggs into small pieces.
- Add the rest of the ingredients except the tortillas and use the fork to combine well until smooth. Make sure to taste it for salt and pepper.
- Spread some of the egg salad mixture onto the entire surface of one tortilla, roll up *tightly* and then cut into 1 inch sections. Continue with the rest of the egg salad onto the other tortillas - I usually get about 3 or 4 out of this amount of egg salad.
- **Gluten Free tortilla rolling tip! Yes I will be the first to admit gluten free tortillas can be...dry! My solution to getting the perfect roll on a GF tortilla is to get it a bit wet and then warm them up to steam them - they get soft and pliable and then you can put your egg salad on and roll them right up. Just do one at a time and you'll be fine!
