This is a recipe I came up with when I was on the South Beach Diet. It is a very healthy recipe and my husband asks for it almost all the time.

1 (16 ounce) package frozen broccoli, thawed
1 tablespoon olive oil
½ teaspoon crushed red pepper flakes
salt, to taste

Steps:

  • Rinse and pat dry the broccoli.
  • Heat the olive oil in a large skillet over medium heat, add the crushed red pepper and heat 1 minute. Cook and stir the broccoli in the skillet until it begins to get crispy, 5 to 7 minutes. Season with salt to serve.

3 tablespoons extra-virgin olive oil
3 cloves garlic, roughly chopped
Pinch red pepper flakes
1 bunch broccoli, trimmed and cut into bite-size pieces
1/2 cup low-sodium chicken broth
1/2 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Heat the olive oil, garlic, and pepper flakes in a large skillet of medium heat until fragrant and garlic begins to brown, about 30 seconds. Stir in broccoli and cook until the broccoli is bright green, about 3 minutes. Add the chicken broth and season with salt and pepper and cook until just tender, about 3 to 5 minutes. Serve.

2 tablespoons wok or vegetable oil
1 teaspoon hot crushed red pepper flakes
4 cloves garlic, chopped
Coarse salt

Steps:

  • Simmer broccoli covered in 1 inch of water for 5 to 7 minutes, until tender. Drain broccoli and return skillet to heat. Heat skillet over high heat. Add oil, crushed pepper and garlic. Turn broccoli in hot spicy oil and season with salt. Transfer to a serving dish.

1 head broccoli (1 1/4 pounds), stem trimmed and peeled
2 tablespoons olive oil
2 well-rinsed anchovies (or 2 teaspoons anchovy paste)
1/8 to 1/4 teaspoon red-pepper flakes
Coarse salt and ground pepper

Steps:

  • Starting with flower end of broccoli, cut crosswise into 1/2-inch pieces.
  • Heat oil in a large skillet over medium-low heat. Add anchovies and red-pepper flakes. Cook, mashing anchovies with a wooden spoon, about 1 minute.
  • Raise heat to medium. Add broccoli; season with salt and ground pepper. Cook, stirring often, until broccoli is crisp-tender, about 2 minutes. Add 1/2 cup water. Simmer, covered, until broccoli is tender, 4 to 5 minutes more.

Both the chicken and broccoli get pan seared in this stir fry recipe. Serve with white or brown rice. NOTE: If you are like me and freeze your ginger, then grate it, you should use less for this recipe, about 1 teaspoon.

1/2 lb chicken, cubed
1 teaspoon baking soda
2 tablespoons soy sauce
1 tablespoon mirin
2 teaspoons oyster sauce
1 teaspoon Worcestershire sauce
1 teaspoon sugar
1 teaspoon sesame oil
1 cup chicken stock or 1 cup chicken broth
3 teaspoons cornstarch, divided
6 tablespoons canola oil
1 lb broccoli, cut into 1 1/2 inch florets
1/2 medium onion, cut into 1/2 inch strips
1 tablespoon garlic clove, minced
1 tablespoon fresh ginger, chopped
1/2 teaspoon kosher salt (optional)

Steps:

  • Dust chicken with the baking soda and let sit in the refrigerator for 30 minutes.
  • In a small bowl (or glass jar with lid) combine the soy sauce, mirin, oyster sauce, Worcestershire, sugar, and sesame oil; whisk (or shake jar) to combine.
  • In another small bowl (or jar) combine the chicken stock with 2 teaspoons of the cornstarch, set aside.
  • Heat a large skillet, or wok, over high heat and add 2 tablespoons of the canola oil until shimmering.
  • Add broccoli and stir fry until the florets start to brown, about 5 minutes; transfer to a bowl.
  • Heat 2 more tablespoons oil and cook onion, on medium high heat, until they begin to brown and soften, about 5 minutes; add to broccoli.
  • Heat the remaining 2 tablespoons of oil.
  • Meanwhile, toss the meat with the remaining 1 teaspoon of cornstarch.
  • Stir fry the garlic and ginger in the pan for 30 seconds; add in the chicken and stir fry until no longer pink, about 2 minutes.
  • Return the broccoli and onion to the pan, add the soy sauce mixture and stir fry until the chicken is cooked through and the sauce is hot.
  • Stir in the cornstarch mixture until the sauce thickens; taste for salt and add only if needed (I didn't).
