- Combine flour, garlic powder, salt, and black pepper in a shallow dish.
- Roll and coat chicken cubes in flour mixture.

- Preheat the oven to 450 degrees F. Make the sweet-and-sour sauce: Whisk the ketchup, marmalade, soy sauce, vinegar, ginger and cayenne in a small bowl. - Open canned pineapple and reserve 1/2 cup juice.
- In a medium non-metallic bowl, combine brown sugar, ketchup, vinegar, reserved pineapple juice, soy sauce, salt and 2 teaspoons of the cornstarch. Whisk until dissolved and set aside.
- In resealable plastic bag, combine flour and remaining cornstarch.
- Add chicken to flour mixture; seal bag and shake to coat.
- Transfer chicken to cutting board and lightly spray both sides with cooking spray.
- In large skillet over medium-high temperature, heat 1 teaspoon canola oil; swirl to coat the bottom of skillet.
- Cook chicken on one side for 4 minutes or until golden on the bottom.
- Turn chicken and pour in remaining oil, spreading as much as possible.
- Cook another 4 minutes until golden and chicken is no longer pink in the center.
- Transfer to a plate and cover to keep warm.
- To the same skillet, add carrots, onion and red bell pepper. Cook on medium high heat, stirring occasionally, for 2 or 3 minutes or until tender-crisp.
- Make a well in center of vegetables.
- Pour pineapple juice mixture into the well; cook 1 or 2 minutes stirring the juice mixture occasionally until thickened.
- Add pineapple chunks; stir vegetables and pineapple chunks into the sauce.
- Add chicken and cook 2 or 3 minutes more, stirring occasionally, until heated through.

- In a saucepan, combine 1 1/2 cups water, sugar, vinegar, reserved pineapple juice, and orange food coloring. Heat to boiling. Turn off heat. Combine 1/4 cup cornstarch and 1/4 cup water; slowly stir into saucepan. Continue stirring until mixture thickens.
- Combine flour, 2 tablespoons oil, 2 tablespoons cornstarch, salt, white pepper, and egg. Add 1 1/2 cups water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces, and stir until chicken is well coated.

- Drain the pineapple reserving 3/4 cup of the juice.
- In a small bowl, whisk together the reserved pineapple juice, ketchup, 1 tablespoon cornstarch, vinegar, water and sugar; set aside.
- In a medium bowl, whisk together the egg and 1 tablespoon cornstarch until smooth.
- Add in the chicken pieces; stir to coat the chicken with egg mixture.
- Pour the cracker crumbs into a shallow dish.
- Roll chicken pieces in the crumbs to coat evenly.
- Heat the oil in a wok or large skllet (adding more oil in if needed during cooking).
- Set to medium heat.

- Return the chicken, veggies and pineapple chunks to the wok.

- For the sauce, put the red pepper, chunks of chilli and pineapple juice in a pan and bring to the boil. Cover and cook for 10 mins, then purée in a food processor. Return to the pan with the pineapple chunks, chilli halves, star anise, tamarind, sugar and vinegar. Gently simmer for 20-30 mins until reduced and sticky. Keep warm, or reheat to serve.
- Fill a large pan 1cm deep with oil and heat until shimmering. Whisk the soda water and 100ml cold water into the self-raising flour with a little salt. Tip the cornflour onto a plate, line a tray with kitchen paper and turn on the oven to low.
- Stir the batter well. Dust the chicken with cornflour, then dip into the batter. One at a time, lower into the hot oil (about 5-6 every batch). Turn up the heat to keep the chicken frying, if needed, and cook for 5-6 mins, turning once. When cooked, drain on the tray, and keep warm in the oven. Repeat with the remaining chicken. Stack onto a plate with the warm sauce on the side, and scatter with shredded spring onions.
