We found fresh sugar snap peas at our town's farmers market. They make a cheerful salad with a tangy dressing. -Courtney Stultz, Weir, Kansas

2 tablespoons olive oil
2 tablespoons white wine vinegar
2 teaspoons honey
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon dried thyme
1/2 cup chopped onion
1/2 teaspoon poppy seeds
1 pound fresh sugar snap peas, trimmed and halved (about 4 cups)

Steps:

  • Place the first 7 ingredients in a blender; cover and process until blended. Transfer to a large bowl; stir in poppy seeds., Add peas to dressing and toss to coat. Refrigerate, covered, 30 minutes before serving.

A simple Japanese dressing turns crunchy snow peas into a refreshing salad. Great with grilled salmon or chicken. Created by Heather Trim for Food and Drink.

1 lb snow peas
1/4 cup very thinly sliced carrot (Matchstick size)
2 tablespoons soy sauce
2 tablespoons lemon juice
1 tablespoon dark sesame oil
2 1/2 teaspoons granulated sugar
1/2 teaspoon wasabi powder
salt
2 teaspoons sesame seeds, preferably toasted

Steps:

  • Snip ends and remove string from snow peas. Fill a large bowl full of ice water.
  • Bring a large saucepan of salted water to a boil, and add snow peas and carrots.
  • Cook just until snow peas turn bright green, about 15 seconds, drain and plunge into cold water. Drain well and pat dry.
  • Cut snow peas diagonally into ½-inch (1-cm) wide pieces. Place in a bowl along with carrots.
  • To prepare dressing, whisk soy with lemon juice, sesame oil, sugar and wasabi powder, making sure sugar and wasabi powder are dissolved.
  • Stir with snow peas and carrots. Taste and add salt if needed. Sprinkle with sesame seeds.

1 (8 ounce) package cream cheese
1 can crushed pineapple
2 jars maraschino cherries, drained
1 1/2 cups chopped nuts
1 package miniature marshmallow
1/2 pint Cool Whip

Steps:

  • Soften cream cheese and drain pineapple.
  • Combine cream cheese, pineapple, cherries, nuts and marshmallows; mix well.
  • Add Cool Whip; mix well then chill.

1 tablespoon canola oil
2 medium yellow onions, roughly chopped
1 tablespoon minced garlic
3 cups chicken stock or low-sodium, canned
3 cups shucked English peas
1 cup spinach leaves
4 tablespoons butter, cold and in pieces
Salt and black pepper to taste
1 lime, juiced
1/2 lemon, juiced
1 tablespoon truffle oil
1/4 cup extra virgin olive oil
1 cup blanched, stringed snow peas, sliced lengthwise 1/8-inch
Salt and black pepper taste

Steps:

  • In a hot saucepan, coat with oil and brown onions and garlic, about 5 minutes. Season. Add chicken stock and bring to a boil. The stock should taste salty, like pasta blanching water. Add the peas and cook until soft, about 5 to 8 minutes. Do not over-cook for they will darken. Check peas often. During the last minute, add the spinach. Immediately blend using a hand blender and when pureed, add the butter and blend well. Check for seasoning.
  • TRUFFLED SNOW PEA SALAD: In a bowl, whisk together juices and oils. Season with salt and pepper and check for seasoning. Toss well with snow peas.
  • PLATING Pre-heat the soup plates and ladle in the soup. Top with the salad and drizzle a little bit of truffle oil.

Blanch sugar snap, snow peas and fresh peas in salted boiling water until tender crisp, about 2 to 3 minutes. Transfer to ice bath to stop cooking process. Drain well.
