CREAM OF RICE: HOMEMADE VEGAN GLUTEN FREE CEREAL



Cream of Rice: Homemade Vegan Gluten Free Cereal image

Number Of Ingredients 4

½ cup white rice
1 tbsp. vegan butter (optional)
2 cups soymilk (or any other plant-based milk, or just water)
Pinch of salt

Steps:

  • Place the rice in a blender or spice grinder, and blend until the texture of a course cornmeal- make sure not to blend too much, or you'll end up with rice flour.
  • Melt the vegan butter in a medium saucepan, and add the ground rice. Stir to coat the rice in the butter, and then add about ½ cup of the soymilk. Stirring well to avoid clumping, continue heating the mixture on a medium heat, adding the milk about ½ cup at a time and letting it absorb. You may want a little less or more milk depending on your desired consistency, so take it slowly.
  • Cook for a total of around 15 minutes, stirring frequently. Once you taste it and it's soft and creamy, and any larger bits of rice have lost their bite, remove from the stove and serve warm. Top with your favorite toppings, such as vegan butter, brown sugar, maple syrup, cinnamon, dried fruits, nuts, fresh fruits, or even chocolate chips.

Easy and healthy breakfast recipe. In Asia it's expensive to buy imported cerals from the states and my family has become used to finding other types of "cereal" to eat! This is a great way to make cereal out of leftover rice for us! I'm surprised we found this in a cookbook and hadn't figured it out on our own yet. This is from the Brackett's 7 Secrets Cookbook to lose weight, lower cholesterol, and reverse diabetes. Preparation time doesn't include cooking the rice.

1 cup coconut milk or 1 cup soymilk
1 banana
1 cup pineapple juice
1/2 teaspoon coconut extract
4 cups cooked rice
crushed pineapple, and
raisins, to your liking

Steps:

  • Blend together the cocnut or soy milk, banana, juice, and coconut extract.
  • Place rice in a casserole dish that is sprayed with a nonstick spray or you can use a little oil. Fold in the crushed pineapple and raisins. Stir in the blended milk and juice.
  • Bake a 350 degrees F about 20 minutes until hot enough to serve, or about 8 minutes in the microwave.
