Grilled and Stuffed Portobello Mushrooms with Gorgonzola image

Provided by Giada De Laurentiis

Categories     appetizer

Time 42m

Yield 6 servings

Number Of Ingredients 11

2 tablespoons olive oil, plus 1/4 cup
12 ounces turkey sausage, casings removed
2 cloves garlic, minced
1/2 cup mascarpone cheese, at room temperature
2 tablespoons fresh thyme
2 tablespoons fresh oregano
3/4 cup plain breadcrumbs
1 cup (4 ounces) Gorgonzola, crumbled
1/2 teaspoon kosher salt, plus extra for seasoning
1/2 teaspoon freshly ground black pepper, plus extra for seasoning
6 large portobello mushrooms, stems removed

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • In a large skillet, heat 2 tablespoons of oil over medium-high heat. Add the turkey sausage and cook, stirring frequently, until cooked through, about 5 minutes. Add the garlic and cook for 1 minute. Remove the pan from the heat. Stir in the mascarpone cheese. Add the thyme, oregano, bread crumbs, 1/2 of the Gorgonzola, 1/2 teaspoon salt and 1/2 teaspoon pepper. Stir until all ingredients are combined.
  • Brush the mushrooms on both sides with the remaining oil and season with salt and pepper. Grill the mushrooms, stem side down, for 3 minutes. Turn the mushrooms over and grill for 2 minutes until tender. Fill each mushroom with the sausage mixture and top with the remaining Gorgonzola. Return the mushrooms to the grill and cook until the stuffing is warmed through and the cheese starts to melt, about 5 to 7 minutes.
  • Cook's Note: The assembled mushrooms can also be placed on a baking sheet and cooked under a preheated broiler until warmed through.

GRILLED PORTOBELLO MUSHROOMS

Grilled portobello mushrooms image

Grilled portobello mushroom caps are a terrific vegetable-forward entree for your cookout. Serve them as a main course, or pop them into a bun as a sandwich.

Provided by Cadry Nelson

Categories     Main Course

Time 45m

Number Of Ingredients 9

4 portobello mushrooms
2 Tablespoons olive oil (Plus more if needed)
2 teaspoons red wine vinegar
1 clove garlic (minced)
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
Generous pinch salt
Dash pepper

Steps:

  • Clean portobello mushrooms with a damp cloth. Remove stems using your fingers or a knife. If you'd like, use a spoon to remove the dark brown gills from underneath the mushroom. They don't affect the flavor at all, but they do release dark brown liquid while they cook.
  • In a mixing bowl, combine olive oil, red wine vinegar, minced garlic, dried parsley, dried basil, dried oregano, a generous pinch of salt, and a dash of pepper. (For the garlic, I like to use a Microplane zester, so that it's almost paste-like & easy to combine with the other ingredients.)
  • Add the mushroom caps to the mixing bowl. Use your hands to make sure that each cap gets covered front & back with the marinade. If your mushroom caps are especially large, you can add more oil if needed to make sure it's all evenly dispersed.
  • Put the bowl with mushrooms in the refrigerator, and let them soak in the marinade for 30 minutes to an hour. (If your refrigerator isn't large enough to hold a mixing bowl, the mushrooms can go into a freezer bag instead to marinate.)
  • Bring a grill, fire pit with grate, or grill pan to a medium high heat. (For a gas grill, I aim for about 500 degrees.)
  • Put the marinated mushroom caps on the grill, grate, or grill pan. Cook for about 4 minutes on each side & then flip. (Don't flip until the mushrooms have nice grill marks.) Remove from heat & serve.

GRILLED PORTOBELLO MUSHROOMS WITH GARLIC, CHEESE AND PINE NUTS

Grilled Portobello Mushrooms With Garlic, Cheese and Pine Nuts image

This delicious recipe comes from Steven Raichlen, "Master Griller" and author of numerous bestselling cookbooks. This one is from his 'How To Grill Barbecue Bible'. (Prep. time does not reflect refrigeration time).

Provided by shelbyrose

Categories     Vegetable

Time 26m

Yield 4 serving(s)

Number Of Ingredients 11

4 large portabella mushrooms (8-10 ounces each)
2 large garlic cloves, cut into slivers
1 ounce parmigiano-reggiano cheese or 1 ounce other firm cheese, cut into slivers
1 sprig fresh rosemary, leaves stripped off the stem or 2 teaspoons dried rosemary
2 tablespoons pine nuts
1/2 cup balsamic vinegar
1/2 teaspoon coarse salt
1/2 teaspoon black pepper
1 1/3 cups extra virgin olive oil
12 fresh basil leaves, thinly slivered
2 tablespoons balsamic vinegar

Steps:

  • Trim the stems off the mushrooms.
  • Using a moist paper towel, wipe the caps clean.
  • Using a sharp object, such as the tip of a metal skewer, poke a series of holes in the gill side of the mushroom caps.
  • Insert garlic slivers in some holes, cheese slivers in others, rosemary leaves in others, and pine nuts in the remaining holes.
  • Combine 1/2 cup vinegar and the salt and pepper in a mixing bowl and whisk until the salt is dissolved.
  • Whisk in the oil and the basil.
  • Pour some of the mixture in the bottom of a nonreactive baking dish and arrange the portobellos in it, gill side up.
  • Swish the mushrooms to coat the bottom with marinade.
  • Spoon the remaining marinade over the mushrooms, cover and refrigerate for as little as 30 minutes or as long as 3 hours.
  • Preheat grill to high.
  • When ready to cook, remove the mushroom caps from marinade.
  • Strain the marinade if the basil looks wilted.
  • Whisk the remaining 2 tablespoons of vinegar into the marinade.
  • Arrange the mushrooms on the grill grate, gill side down.
  • Grill for 3 minutes.
  • Turn over and spoon the reserved marinade onto the caps.
  • Continue grilling until browned and tender,(reducing heat if necessary) 4 to 6 minutes, rotating the caps 45 degrees after 2 minutes to create a crosshatch of grill marks.
  • Remove from grill and serve immediately.

Yield 6 servings

Number Of Ingredients 9

6 tablespoons extra-virgin olive oil
3 tablespoons balsamic vinegar
1 large garlic clove, pressed
6 large portobello mushrooms, stemmed, gills scraped out
1 cup whole-milk ricotta cheese
1/2 cup plus 6 tablespoons finely grated Parmesan cheese
3 tablespoons chopped fresh basil, divided
6 1/3-inch-thick heirloom tomato slices (from 2 very large tomatoes)
7 to 8 ounces Fontina cheese, thinly sliced

Steps:

  • Prepare barbecue (medium-high heat). Whisk extra-virgin olive oil, balsamic vinegar, and pressed garlic clove in small bowl. Season dressing to taste with salt and pepper. Arrange portobello mushrooms on rimmed baking sheet, gill side up. Sprinkle with salt and pepper. Spoon generous tablespoon dressing into each mushroom; swirl to coat. Stir ricotta cheese, 1/2 cup Parmesan cheese, and 2 tablespoons chopped fresh basil in small bowl to blend. Season to taste with salt and pepper. Arrange tomato slices on plate; sprinkle with salt and pepper.
  • Place mushrooms on grill, gill side down. Grill until edges begin to soften, 3 to 5 minutes, depending on thickness of mushrooms. Transfer mushrooms to same baking sheet, gill side up. Nestle 1 tomato slice into each mushroom. Divide ricotta cheese mixture atop sliced tomatoes, spreading to cover, about 3 tablespoons per mushroom. Top with Fontina cheese slices, dividing equally. Sprinkle 1 tablespoon Parmesan cheese over each. Carefully return mushrooms to grill. Cover barbecue and cook until mushrooms are soft and cheese is melted, about 5 minutes. Sprinkle remaining chopped fresh basil over. Place mushrooms on plates. Drizzle remaining dressing around mushrooms and serve.

GRILLED PORTOBELLO, BLUE CHEESE AND CARAMELIZED ONION HOAGIE

Grilled Portobello, Blue Cheese and Caramelized Onion Hoagie image

Provided by Katie Lee Biegel

Categories     main-dish

Time 1h35m

Yield 4 servings

Number Of Ingredients 17

1/4 cup extra-virgin olive oil
1 tablespoon Worcestershire sauce
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder
Juice of 1/2 lemon
4 portobello mushrooms, sliced 1/4 inch thick
2 tablespoons olive oil
2 yellow onions, halved and thinly sliced
Kosher salt and freshly ground black pepper
Blue Cheese Spread:
4 ounces blue cheese, crumbled
1/3 cup mayonnaise
4 hoagie rolls (I like Martin's), split
1 cup arugula
Balsamic vinegar, for drizzling
Kosher salt

Steps:

  • For the mushrooms: In a large bowl or a ziptop bag, whisk the olive oil, Worcestershire sauce, salt, pepper, garlic powder and lemon juice. Add the mushrooms and toss to combine. Marinate for 30 minutes to 1 hour.
  • For the onions: While the mushrooms marinate, make the onions. In a large skillet over medium high, heat the olive oil. Add the onions and saute until beginning to get tender, about 5 minutes. Season with salt and pepper. Reduce the heat to low. Cook, stirring occasionally, until the onions become a deep brown caramelized color, about 20 minutes. If they start to look dry or stick to the pan, add a tablespoon or 2 of water.
  • For the blue cheese spread: In a small bowl, mix the blue cheese and mayonnaise.
  • Heat a grill pan over medium-high heat.
  • Remove the mushrooms from the marinade and transfer to the grill pan. Cook until slightly wilted, browned and showing grill marks, 2 to 3 minutes per side.
  • For the sandwiches: Put the hoagie rolls on the grill pan until lightly toasted. Spread one side of each roll with the blue cheese spread. Top with some mushrooms, caramelized onions and arugula. Drizzle lightly with balsamic vinegar and a sprinkle of salt.

  • Cut the stems off the mushrooms and wash gently. Place the mushroom(s) and the other ingredients, except the cheese, in a sealed container or large zip-top bag, and gently flip over several times to coat the mushrooms.
  • Refrigerate, flipping every once in awhile. These are best if you can marinate them for at least a few hours (better yet, overnight), but an hour or two will do.
  • On the grill, place the mushrooms gills-down first, and cook without moving for about 5 minutes. They become very fragile as they cook, so it's best to move them as little as possible.
  • Gently flip them over and crumble the blue cheese onto the gills. Cook for a few more minutes as the cheese melts on top.

Turn onto a floured surface; knead until smooth and elastic, about 3-5 minutes. Do not let rise. Divide into about 6 pieces; shape each into a ball. Place 3 in. apart on greased baking sheets. Cover and let rest for 10 minutes. Brush each one with the melted butter, and sprinkle sesame on top. Bake at 425°F (220°C) for 8-12 minutes or until golden brown. Remove from pans and transfer to wire racks to cool.
  • For the mushrooms: combine teriyaki sauce and balsamic vinegar in a medium sized shallow dish. Place mushroom caps, gill-side up, and let marinade for minimum 15 minutes.
  • For the caramelized onions: heat olive oil in a large skillet over medium heat, throw the onions and cook them until translucent. Pour the balsamic vinegar, sprinkle over the sugar, and cook uncovered for about 20 minutes, stirring occasionally. The onions are ready when they are soft, slightly sticky, and smell caramelizing.
  • For the bean-tomato sauce*: heat up the already cooked kidney beans with the tomato sauce in a small saucepan.

  • Heat a large skillet over medium heat and add the olive oil. Add the mushroom caps and toss so they are coated in the oil, the stir in the garlic. Cook the mushrooms for about 3 to 4 minutes on each side, until they are tender and juicy. Add the balsamic vinegar into the skillet and toss the mushrooms. Reduce the heat to low, sprinkle salt and pepper on the caps, and then fill the inside of the cap with 1 ounce or so of blue cheese. Cover the skillet just until the cheese melts.
  • To serve the burger, place a piece of butter lettuce on the bottom of the english muffin. Top with the mushroom, then extra blue cheese. Add the onions and the grilled corn. Serve immediately.
  • Heat about 2 inches of oil in a medium saucepan over medium-low heat. You want the heat to be about 350 degrees F, but after a few minutes of heating, I’ll test it out by throwing a shallot slice in. While the oil is heating, stir together the flour, salt, paprika, garlic powder and pepper. Dredge the shallot slices through the flour. Once coated, add them in batches to the oil. Fry until just golden and crispy, then remove with tongs or a slotted spoon and place on a paper towel to drain excess grease. Repeat with remaining batches.
