2 tablespoons coconut oil
4 leeks, white parts only, sliced thin and washed to remove dirt
2 medium carrots, chopped
2 stalks celery, chopped
8 ounces shiitake mushrooms, chopped
4 cloves garlic, diced
4 sprigs fresh thyme, chopped, or 2 teaspoons dried thyme
2 bay leaves
1 tablespoon Creole seasoning blend (should be spicy)
5 cups mushroom broth
One 12-ounce bottle dark beer
One 14-ounce can diced tomatoes with juices
2 cups dried pinto beans, soaked overnight and drained
2 to 4 tablespoons red miso paste (depending on saltiness)
Coarsely ground black pepper
Sour cream, for garnish
Sliced green onions, for garnish

Steps:

  • Heat the coconut oil in a Dutch oven set over medium heat. Add the leeks, carrots and celery, and saute until soft, about 5 minutes. Add the mushrooms, garlic, thyme, bay leaves and creole seasoning; stir, and saute 2 more minutes.
  • Add the mushroom broth, beer, tomatoes and pinto beans. Bring to a simmer, then cover with a tight-fitting lid and cook until the beans are tender, about 1 hour.
  • Uncover the pot and cook until the liquid is reduced by one-third, about 15 minutes. Season with 2 tablespoons of the miso paste and some pepper. Taste and add more miso as needed.

This is a great Creole dish, and this is a good recipe. I usually have a bowl or two when we go to Louisiana. Very filling, and pocketbook friendly. Make sure you have a Louisiana hot sauce on the table so each one can "heat" it up. NOTE: There is a difference between Kidney Beans and Red Beans. The smaller red beans are similar to black beans, in that they never get truly soft. I recommend using Kidney Beans in this recipe.

1 (1 lb) package red kidney beans
1 green bell pepper
1 medium onion
4 celery ribs
2 teaspoons salt
2 tablespoons pepper
2 tablespoons creole seasoning

2 cups water
1 cup rice
1 tablespoon margarine

Steps:

  • Soak kidney beans overnight.
  • Pour out water and add 3 quarts fresh water.
  • Chop onion, bell pepper, celery and garlic.
  • Add to beans.
  • Add salt, pepper and Creole seasoning.
  • Cover and cook on low heat 4 hours.
  • Cut smoked sausage in 1 1/2-inch rounds.
  • Add to beans and cook 45 minutes.
  • Stir beans occasionally while cooking.
  • Rice: Bring 2 cups water and 1 tablespoon margarine to boil.
  • Add 1 cup rice; cover and simmer on low until water steams away.
  • Serve Red Beans over hot, steaming rice.

2 to 4 tablespoons brown sugar

Steps:

  • In a large skillet, saute onion in oil until tender. Remove from the heat; stir in ketchup, brown sugar, mustard, liquid smoke if desired, salt and pepper. Stir in rice and beans. , Transfer to a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 30-35 minutes or until heated through.

2 tablespoons vegetable oil
1 ham hock, skinned and scored
1 cup chopped yellow onion
1/2 cup chopped celery
1/2 cup chopped bell pepper
2 bay leaves
3 sprigs fresh thyme
1 tablespoon minced garlic
1 pound dried white navy, cannellini, or great Northern beans, rinsed and sorted over, soaked overnight and drained* (See Cook's Note)
8 to 10 cups chicken stock or water
Salt
Cayenne pepper, to taste
1 pound andouille or other smoked pork sausage, cut into 2-inch lengths
Cooked white rice, for serving
Louisiana red hot sauce, for serving

Steps:

  • Heat the oil in a large heavy saucepan over medium high heat. Add the ham hock, onions, celery, and bell pepper and cook, stirring, until the vegetables are soft, 4 to 5 minutes. Add the bay leaves, thyme, and garlic, and cook, stirring, for 2 minutes. Add the beans and chicken stock and bring to a boil. Reduce the heat so that the beans just simmer and cook, uncovered and stirring occasionally, until the skin on the beans is tender and the beans begin to soften, about 2 hours. Season, to taste, with salt and pepper. Add the sausage and continue to cook, stirring occasionally, until the beans are soft and creamy, about 1 hour longer*. (If desired, the ham hock can be removed at this point and either discarded or, when cool enough to handle, the meat can be removed from the bone and returned to the beans and the bone and skin discarded.) Remove the bay leaves and thyme sprigs and serve the beans and sausage over hot white rice.
  • Pass the hot sauce at the table for guests to use at their own discretion.

1 pound dry red kidney beans
3 quarts water
1 green bell pepper, chopped
1 onion, chopped
4 stalks celery, chopped

2 tablespoons ground black pepper
2 tablespoons Creole seasoning

1 (16 ounce) package smoked sausage, cut into 1 1/2-inch pieces
2 cups water
1 tablespoon margarine
1 cup uncooked white rice

Steps:

  • Pick over kidney beans, place into a large bowl, and pour in enough water to cover by several inches. Soak kidney beans overnight.
  • Drain kidney beans, transfer to a large soup pot, and cover with 3 quarts fresh water.
  • Stir in green bell pepper, onion, celery, salt, black pepper, Creole seasoning, and garlic.
  • Cover the pot, place over medium heat, and bring to a boil.
  • Reduce heat to low and simmer until beans are tender, about 4 hours.
  • Mix smoked sausage into the beans; cook an additional 45 minutes, stirring occasionally.
  • About 30 minutes before serving time, place 2 cups water and margarine into a saucepan and bring to a boil.
  • Stir in rice, return to a boil, and reduce heat to medium-low. Cover the pan and simmer until rice is tender and liquid has been absorbed, 20 to 25 minutes. Remove from heat and allow to stand covered for 5 minutes.
  • Serve red beans over cooked rice.

1 lb dried pinto beans
1 lb Conecuh Smoked Sausage (or your favorite brand)
2 tablespoons paprika
3 teaspoons onion powder
3 teaspoons garlic powder
3 teaspoons dired oregano
3 teaspoons dried basil
1.5 teaspoons ground thyme
1.5 teaspoons celery salt
1 teaspoon ground black pepper
1 teaspoon ground white pepper
1/2 teaspoon ground cayenne pepper
** The listed amounts of peppers will give you a medium spiciness. We use about twice as much of the three peppers because we like it spicy. Dial it back if you want it mild.

Steps:

  • Soak beans overnight (or at least several hours). Once they are soaked, rinse and put in a big pot of cold water. Cover the beans with about a half gallon of water. You want the beans covered plus about 1 inch. Cut the Conecuh sausage into half inch pieces, and add it to the beans. Turn on medium heat and let simmer for about an hour. Be sure to add more water as it evaporates so that you don't scorch the beans. Once spices are added, cook about 30 more minutes.

3 tablespoon tomato paste
1 teaspoon ground coriander seeds
1 teaspoon salt
.5 teaspoon garlic powder
.25 teaspoon pepper
3.5 cups water
2 cups long-grain white rice, rinsed using a mesh strainer (set aside)
1 red bell pepper, stemmed, seeded and diced
.25 cup finely chopped red onion
1 jalapeño, stemmed, seeded and finely diced
2 tablespoon finely chopped cilantro
1 can (15-ounce) pinto beans, drained and rinsed

Steps:

  • To a pot, add Chicken Base, tomato paste, coriander, salt, garlic powder and pepper; whisk to combine.
  • Gradually whisk in water, add rice and stir to combine. Place pot over medium-high heat and bring to a boil, stirring occasionally.
  • Reduce heat to medium-low, cover. Continue to cook until liquid has been absorbed, stirring occasionally, about 12-15 minutes. Remove from heat and let stand covered for a few minutes.
  • Place rice in a large bowl and add bell pepper, onion, jalapeno and cilantro; stir to combine.
  • Gently stir in beans and serve.

We were tired of Charro and chili beans, so I came up with a plan. This is the result which turned out to be a great dish.

1 lb pinto beans
1 to 2 lb andouille sausage
3 to 4 Tbsp homemade creole seasoning (link in comments) or you can use zatairan's
1 medium white onion
1 medium green bell pepper
4+ qt water
1 can(s) hunts tomato sauce (10-14 ounces)
2 c steamed rice

Steps:

  • 1. Place beans in colander, run cold tap water over while sorting to remove any stones or other foreign debris. Do not skimp on rinsing to avoid contamination from grower. Place beans in large heavy dutch oven or stew pot and cover with water to completely cover up to 2" above beans. NOTE: BEANS WILL ABSORB A LOT OF LIQUID WHILE COOKING.
  • 2. Place pot on high heat and bring to a rolling boil When water is boiling, add creole seasoning and tomato sauce, stirring well to blend into liquid. Turn heat to low so beans just simmer. Cook for 3 hours, checking often and adding more water if needed
  • 3. AFTER 3 HOURS: Put 1 tablespoon oil in heavy skillet and heat to medium high. Cut sausages into 1" thick "silver dollar" pieces and place in skillet Peel and cut onion into thin wedges; separate pieces and add to skillet Remove stem, seeds and veins on bell pepper, cut into thin wedges and add to skillet Cook until sausage is beginning to brown and veggies are softening.
  • 4. Add sausages and vegetables to beans and stir to blend well. Cook for another hour until beans and veggies are soft. Again, add water if needed to keep liquid up to 2" above beans. Beans will thicken the liquid while cooking.
  • 5. Can be served as a main or side dish. I made cornbread and steamed rice to serve with our meal today.
