CREAMY SAUSAGE POTATO SOUP



Creamy Sausage Potato Soup image

A spicy yet soothing soup that taste ultimately delicious. I made this up myself- I add a little here, a little there and walla it's amazing! It may seem like a lot of ingredients but it's quick and easy!

1 lb sausage
2 cups shredded swiss cheese
2 cups little chunks Velveeta cheese
4 medium potatoes
2 cups chopped fresh baby carrots
8 ounces cream of celery soup
3 cups water
2 cups milk
1 cup heavy whipping cream
2 tablespoons flour
1/2 cup chopped yellow onion
1 tablespoon instant minced garlic
2 tablespoons chicken bouillon
1 tablespoon crushed mint leaf
1 tablespoon parsley
1 tablespoon pepper

Steps:

  • In a large pan add the can of cream of celery with the 4 cans of water and chicken bouillon stir in the peeled and diced potatoes along with the chopped carrots. Heat on medium.
  • Brown the sausage in a separate pan, once done drain grease but save then add sausage to the pan with potatos.
  • Saute the onion and garlic in the sausage grease until almost tender then add to the pan. Add the pepper, parsley, and mint.
  • Cover and bring to boil until vegies are tender.
  • In a separte pan stir the flour, milk, and whipping cream together over medium heat. Continue stirring for about 5 minutes.
  • Add the cream to the large pan and turn burner to medium.
  • Cook 3 minutes.
  • Stir in both cheeses until melted and then SERVE.

This rich & creamy soup is the perfect cure for a cold winter night. Don't be scared off by the long list of ingredients, it's mostly dried herbs and seasonings you already have in your spice drawer.

1 lb spicy ground pork sausage (like Jimmy Dean hot sausage)
1 tablespoon vegetable oil
1 tablespoon butter
1 yellow onion, chopped
2 carrots, diced
3 stalks celery, diced
1 garlic clove, minced
6 large yukon gold potatoes, diced
1 teaspoon dried parsley
1/8 teaspoon dried basil
1/8 teaspoon dried marjoram
1/8 teaspoon dried thyme
1/8 teaspoon dried rosemary
1/8 teaspoon dried sage
1/8 teaspoon dried oregano
1/8 teaspoon cayenne pepper
1/4 teaspoon black pepper
4 cups chicken stock
1 cup whole milk
8 ounces Velveeta cheese, diced (about 2 cups)
1 teaspoon cornstarch, dissolved in 1 tablespoon water
1/2 cup sour cream

Steps:

  • In a large stockpot, brown sausage and break up into pieces. Remove sausage from pot, drain fat & set aside.
  • In the same pot, melt the butter and oil together. Add the onion, celery, carrots & garlic and saute until onions are translucent but not browned.
  • Stir in the potatoes, dried herbs, chicken stock and sausage. Bring to a simmer and cook until potatoes are tender.
  • Turn heat to low and add Velveeta & milk, stirring constantly until the cheese is melted.
  • Bring soup to a boil and then add cornstarch/water mixture. Remove from heat & stir in sour cream.
  • Serve hot & enjoy!

One of the best soups you will ever have! To save time cook the sausage, onion and garlic hours ahead or even a day ahead and refrigerate. If serving more than 4 people, I suggest to double the complete recipe.

9 cups potatoes, diced (or use as many potatoes as desired)
6 ounces Velveeta cheese
1/2 cup sour cream
1 1/4 cups cheddar cheese, shredded
1 small onion, chopped
1 tablespoon fresh minced garlic (or to taste)
1/3 cup butter
2 tablespoons oil
2 lbs mild sausage, cut into about 2-inch pieces (can use more than 2 pounds if desired)
1/3 cup flour
3 1/2 cups half-and-half cream or 3 1/2 cups full-fat milk
salt and pepper
1/2-1 teaspoon dried basil
1 teaspoon dried parsley (or to taste)
1/2 teaspoon garlic powder (optional)
2 tablespoons grated parmesan cheese, parmesan cheese for sprinkling (optional)

Steps:

  • Dice/cube the potatoes into any size desired, and cook them in salted water, when cooked, drain the water and set the cooked potatoes aside.
  • Prepare the cheese mixture: over medium heat in a large heavy-bottomed saucepan, melt the 1/3 cup butter with 2 tablespoons oil.
  • Stir/whisk in 1/3 cup flour, and mix for 1 minute.
  • Slowly add in 1 cup half and half or milk, whisking until well blended.
  • Add in the sour cream, Velveeta cheese and grated cheddar cheese.
  • Now slowly add in the remaining 2-1/2 cups half and half or milk (if using); cook and stir for about 30 seconds; set aside.
  • In a hot skillet, brown the sausage pieces, then add in the chopped onion and garlic (saute for 2 minutes).
  • Add in the sausage/onion mixture along with the salt, pepper, basil, parsley, 2 tablespoons Parmesan cheese and garlic powder (if using) into the cheese/milk mixture, and continue cooking until all of the cheese is completely melted.
  • Add in the cooked cubed potatoes to the cheese mixture; gently mix to combine.
  • Cook over low heat until desired temperature is reached.
  • Ladle into serving bowls.
  • Sprinkle with grated Parmesan cheese.

1 medium onion, finely diced
1/4 cup flour
1 1/2 cups chicken broth
2 1/2 cups milk
4 ounces Polish sausage, halved and sliced
1 1/2 cups cooked diced potatoes
1 cup sauerkraut
1/2 teaspoon dried parsley
1 cup shredded cheddar cheese
black pepper

Steps:

  • In a large saucepan, melt butter over medium heat. Add onions and saute for about five minutes, until tender. Add flour, stirring until completely combined. Cook for one minute, then add the chicken broth and milk.
  • Turn heat to medium high, then cook stirring often until broth begins to thicken. Reduce heat to medium then add sausage, diced potatoes, sauerkraut and parsley. Simmer for five minutes, then add shredded cheddar. Stir to combine and remove from heat. Serve sprinkled black pepper.
