375g lean beef mince
2 large red onions, peeled and finely sliced
4 garlic cloves, peeled and finely chopped or crushed
1 x 2.5cm piece fresh root ginger, peeled and finely chopped
1 small red chilli, deseeded and finely chopped, optional
2 tablespoons Balti curry paste, or similar
200g butternut squash, peeled, deseeded and diced
1 small cauliflower, cut into small florets (about 300g/10½oz)
1 x 400g can cherry or chopped tomatoes
300ml good, hot vegetable stock
200g green beans, topped and tailed
2 tablespoons fat free Greek yogurt
Small bunch freshly chopped coriander, to garnish

Steps:

  • Heat a large non-stick frying pan and dry fry the beef, onions and garlic for 4-5 minutes or until brown breaking up any lumps with the back of a wooden spoon.Add the ginger, chilli and curry paste. Cook for 2-3 minutes.Add the squash, cauliflower, chopped tomatoes and stock. Bring to the boil, reduce the heat, cover and simmer for a further 15 minutes. Add the beans and cook for a further 5 minutes.Remove the pan from the heat, cool a little and spoon over a little Greek yogurt.Garnish with the coriander and serve with naan bread.

On one hand there is beef barley soup, and on the other there's mushroom barley soup, but why choose between the two when you can have both in one soup? Heck, why not add a bunch of other vegetables-carrots, celery, tomatoes, and chard or spinach-to the mix for even more color, flavor, and nutrition? And how about a handful of fresh dill for an earthy herbal essence? It's that kind of thinking that led me right to this wonderful, filling, meal-in-a-bowl with tender beef in every bite balanced with a bounty of whole-grain, plant-powered goodness.

12 ounces lean beef stew meat, cut into 1/2-inch pieces
1 teaspoon salt, divided
1/2 teaspoon freshly ground pepper, divided
2 tablespoons olive oil, divided
1 large onion, diced
8 ounces cremini mushrooms, coarsely chopped
2 medium-size carrots, diced
2 celery stalks, diced
1/2 small bunch green Swiss chard, stems and leaves separated and chopped, or 3 cups lightly packed chopped spinach
2 garlic cloves, minced
4 cups low-sodium beef broth
One 14-ounce can no-salt-added diced tomatoes
1/2 cup pearled barley
1/3 cup coarsely chopped fresh dill

Steps:

  • Season the meat with 1/4 teaspoon each of the salt and pepper. Heat 1 tablespoon of the olive oil in a large soup pot over medium-high heat. Add the meat to the pot and cook, stirring occasionally, until well browned, about 5 minutes. Transfer the meat to a plate.
  • Add the remaining tablespoon of olive oil to the pot, then add the onion and mushrooms and cook, stirring occasionally, until softened, about 4 minutes. Add the carrots, celery, chopped chard stems, if using (if you are using spinach, do not add it here), garlic, the remaining 3/4 teaspoon salt and 1/4 teaspoon pepper and cook, stirring often, for 2 minutes more.
  • Add the broth, 2 cups of water, the diced tomatoes with their juices, and the barley and return the meat with any accumulated juices to the pot. Bring to a boil, then lower the heat to low, cover, and simmer until the barley is cooked and the meat is tender, about 1 hour. Add the chard leaves or spinach and the dill and cook for 2 minutes more, then serve.
  • The soup will keep in an airtight container in the refrigerator for up to 4 days, or in the freezer for 3 months.

Curry doesn't tend to be the healthiest meal option, but this winter veg balti is high in fibre and vitamins, while low in fat

1 tbsp vegetable oil
1large onion , thickly sliced
1large garlic clove , crushed
1 eating apple , peeled, cored and chopped into chunks
3 tbsp balti curry paste (we used Patak's)
1medium butternut squash , peeled and cut into chunks
2large carrots , thickly sliced
200g turnip , cut into chunks
1medium cauliflower , weighing about 500g/1lb 2oz, broken into florets
400g can chopped tomato
425ml hot vegetable stock
4 tbsp chopped coriander , plus extra to serve
150g pot low-fat natural yogurt

Steps:

  • Heat the oil in a large pan, then add the onion, garlic and apple and cook gently, stirring occasionally, until the onion softens, about 5-8 minutes. Stir in the curry paste.
  • Tip the fresh vegetables into the pan and add the tomatoes and stock. Stir in 3 tbsp of the coriander. Bring to the boil, turn the heat to low, put the lid on and cook for half an hour.
  • Remove the lid and cook for another 20 minutes until the vegetables are soft and the liquid has reduced a little. There should be some liquid remaining, but not too much. Season with salt and pepper.
  • Mix 1 tbsp of coriander into the yogurt to make a raita. Ladle the curry into bowls, drizzle over some raita and sprinkle with extra coriander. Serve with the remaining raita and warm mini naan breads.

1 lb lean beef, thinly sliced (Slightly frozen beef is easier to slice)
1/4-1/3 cup light soy sauce
1/4 cup sherry wine or 1/4 cup cooking wine
1 cup green onion, sliced
1 cup celery, sliced diagonally
1 tablespoon grated fresh ginger
1/2 cup carrot, cut into matchsticks
1 cup broccoli, sliced
1 tablespoon sesame oil
12 large mushrooms, sliced
1/4 cup vegetable oil
2 garlic cloves, minced
1 tablespoon cornstarch
1 1/2 cups water
water chestnut

Steps:

  • Toss beef in bowl with soy sauce and sherry.
  • Cover and marinate for 30 minutes.
  • Heat oil in wok, or wide frying pan.
  • Add garlic and ginger and saute over high heat.
  • Add drained beef (reserve marinade).
  • Stir fry until meat is brown.
  • Add scallions, celery, carrots, broccoli and mushrooms.
  • Cover and steam about 5 minutes.
  • Mix water, cornstarch, sesame oil and marinate in small bowl; pour into pan.
  • Heat to boiling.
  • Cook until thickened.
  • Serve over rice.

A delightful and easy mild curry adapted from "Indian...Made Simple", published by Parragon's Love Food division, no editor named. Balti recipes are usually associated with Birmingham, England, but the spice mixtures fit Indian cuisine. The Balti creators hail from the north Pakistan province Baltistan in Kashmir. Note that China, Pakistan and India all lay claim to that territory. Lamb is more typical of Indian cuisine than beef. We used venison tenderloin and our meat came out well done; next time we will cut the meat in bigger chunks as we prefer it medium rare. Note that a Vitamix can puree the sauce while it is still hot. Garlic and ginger paste is available in Indian groceries, or you can use Recipe #422497. It's a great timesaver for a great taste combination. I recommend a large wok instead of a large skillet when you cook the beef (I had red bell peppers flying everywhere).

1 bay leaf

2 tablespoons ghee or 2 tablespoons vegetable oil
1 large onion, chopped

2 large red bell peppers, seeded and chopped
21 ounces boneless beef roast or 21 ounces lamb, such as sirloin, thinly sliced

Steps:

  • BALTI SAUCE:.
  • Melt the ghee in a wok or large skillet over medium-high heat.
  • Add the onions and garlic and ginger paste and stir-fry for about 5 minutes, until the onions are golden brown.
  • Stir in the tomatoes, then add the paprika, turmeric, cumin, coriander, red chili powder (cayenne), cardamom, bay leaf, and salt and pepper to taste.
  • Bring to a boil, stirring, then reduce the heat and simmer for 20 minutes, stirring occasionally.
  • Let the sauce cool slightly, then remove the bay leaf and pour the mixture into a food processor or blender and process to a smooth sauce.
  • BEEF:.
  • Wipe out the wok and return it to medium-high heat. Add the ghee and melt.
  • Add the onion and garlic and stir-fry for 5-8 minutes, until golden brown.
  • Add the bell peppers and continue stir-frying for 2 minutes.
  • Stir in the beef and continue stirring for 2 minutes, until it starts to turn brown.
  • Add the balti sauce and bring to a boil. Reduce the heat and simmer for 5 minutes, or until the sauce slightly reduces again and the bell peppers are tender.
  • Adjust the seasoning, if necessary.
  • Garnish with cilantro sprigs and serve with Indian bread.
