This cobbler is perfectly delicious especially when served warm with a scoop of vanilla ice cream. Try it with other fruit (blueberries, rhubarb, or cherries). You can't go wrong with this easy recipe.

cooking spray
2 ½ cups fresh cranberries
1 ¼ cups white sugar, divided
1 cup all-purpose flour
¾ cup butter, melted
2 eggs

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spray an 8-inch baking dish with cooking spray.
  • Spread cranberries in the prepared baking dish and sprinkle with 1/4 cup sugar.
  • Stir together remaining 1 cup sugar, flour, and melted butter in a bowl. Whisk eggs together in a separate bowl and stir into sugar-flour mixture until smooth. Pour over cranberries in the baking dish.
  • Bake in the preheated oven until berries are bubbling and topping is lightly browned, about 1 hour.

2 cups fresh or frozen cranberries, thawed
1 can (20 ounces) unsweetened pineapple tidbits, drained
3/4 cup sweetened shredded coconut
3/4 cup orange marmalade
1/2 cup packed light brown sugar
6 tablespoons butter, melted
TOPPING:
1 package yellow cake mix (regular size)
1 package (3.4 ounces) instant coconut cream pudding mix
4 large eggs, room temperature
3/4 cup pineapple-orange juice
1/2 cup butter, melted
1/4 cup packed light brown sugar
1 teaspoon vanilla extract
Whipped cream, optional
1/4 cup sweetened shredded coconut, toasted

Steps:

  • In a greased 6-qt. oval slow cooker, layer cranberries, pineapple and 3/4 cup coconut. In a bowl, mix marmalade, brown sugar and melted butter; spoon evenly over fruit., In a large bowl, combine first 7 topping ingredients; beat on low speed 1 minute. Beat on medium 2 minutes. Pour over filling., Cook, covered, on low until top springs back when lightly touched, about 4 hours. Turn off slow cooker. Remove insert; let stand 15 minutes before serving. If desired, serve with whipped cream. Sprinkle with toasted coconut.

6 tablespoons unsalted butter, melted, plus more for pan
1 1/4 cups cranberries, partially thawed if frozen
3/4 cup plus 2 tablespoons sugar, divided
1 cup all-purpose flour (spooned and leveled)
1 1/4 teaspoons baking powder
1/2 teaspoon fine salt
1/2 cup whole milk
1 large egg

Steps:

  • Preheat oven to 350 degrees. Butter a 10-inch cast-iron skillet. Stir together cranberries and 2 tablespoons sugar. In a large bowl, whisk together flour, baking powder, salt, and remaining 3/4 cup sugar. In a small bowl, whisk together milk and egg, then whisk in butter. Whisk milk mixture into flour mixture until combined.
  • Pour batter into skillet and scatter cranberries on top. Bake until center springs back when lightly touched, 25 to 30 minutes.

2 sticks (1 cup) melted butter, cooled slightly, plus additional for buttering the pan
1 3/4 cups all-purpose flour
1/2 cup fine polenta, such as Bob's Red Mill
1/2 cup powdered sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
One 10-ounce bag frozen cherries, thawed and drained
One 10-ounce bag frozen cranberries, thawed
2/3 cup light muscovado sugar or light brown sugar
2 tablespoons all-purpose flour
1 teaspoon orange zest (from 1/2 orange)
1/4 teaspoon kosher salt
Serving suggestion: whipped cream or vanilla ice cream

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Butter a 9-inch springform pan and line with parchment paper. Set aside.
  • Combine the flour, polenta, powdered sugar, cinnamon, baking powder and salt in a medium bowl and stir together with a rubber spatula. Pour in the butter and stir until combined. Add three-quarters of the dough to the bottom of the prepared pan and press evenly into the bottom and 1/2-inch up the sides of the pan. Reserve the remainder of the dough for the top. Bake the crust just to set, 12 to 15 minutes.
  • For the filling: Combine the cherries, cranberries, muscovado sugar, flour, orange zest and salt in a medium bowl, and stir to combine and coat evenly. Pour the filling into the crust and spread evenly, pressing gently to nestle into the crust. Drop dollops of the remaining dough randomly over the top of the cobbler. Bake until the filling is bubbly and crust and topping are golden brown, about 45 minutes. Allow to cool completely in the pan before releasing the sides and slicing into wedges. Serve with whipped cream or vanilla ice cream if desired.

3 cups fresh cranberries
1 1/2 cups sugar, divided
1/2 cup chopped walnuts or 1/2 cup pecans
2 eggs
3/4 cup all-purpose flour
1/2 cup butter, softened and cut into pieces

Steps:

  • Preheat oven to 325°F Coat a 9" deep-dish pie plate with nonstick cooking spray then spread cranberries over the bottom. Sprinkle with 3/4 cup sugar and the walnuts; stir with a spoon until evenly combined then flatten mixture with the spoon.
  • In a large bowl, beat eggs until fluffy. Gradually add remaining 3/4 cup sugar then gradually add in the flour, mixing well. Slowly beat in butter until thoroughly combined and smooth then spread batter over cranberries.
  • Bake 55 minutes, or until entire crust is brown. Serve hot or cold.

1/2 cup flour
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
4 cups tart cooking apples, peeled cored sliced 1/4 inch (Jonagold is good to use with this, 4 medium)
2 cups whole fresh cranberries or 2 cups whole frozen cranberries, thawed
2/3 cup flour
1/2 cup sugar
1/2 cup butter (leave out of frige for 15 minutes to soften, don't soften it too much)

Steps:

  • Heat oven to 400 degrees.
  • Peel, core, and slice 4 medium tart cooking apples into 1/4 inch slices.
  • In large bowl, combine all cobbler ingredients except apples and cranberries.
  • Add apples and cranberries; toss to coat with flour mixture.
  • Put in 2-quart casserole dish.
  • In medium bowl, stir together 2/3 cup flour and 1/2 cup sugar, cut in butter until crumbly.
  • Sprinkle over fruit mixture.
  • Bake for 40 to 45 minutes, or until golden brown.
  • Serve warm with ice cream.

My son got a book from his school's library titled "Cranberry Easter" and there was a recipe for cranberry cobler at the end of it. It sounded really good, and my son was excited that we could try to make it from the story! I am mostly putting it here for us so that when he needs to return the book again, we won't lose the recipe. Use Splenda for a sugar free version if you want to and the nuts can be optional too.

3/4 cup sugar
1/2 cup walnuts (optional if allergic) or 1/2 cup pecans (optional if allergic)

3/4 cup chilled butter, cut into small pieces with a knife

Steps:

  • In a medium bowl, combine the cranberries and sugar. Pour the cranberries into a buttered 10-inch pie plate. Add the nuts and stir to mix them well and smooth out evenly.
  • Make the crust. Beat the eggs in a bowl until light and fluffy. Continue to beat and gradually first the sugar and then the flour. Cut in the butter.
  • When the crust mixture is thoroughly combined, spread over the cranberry filling mixture. Bake at 325 degrees for about 45 minutes and the crust is golden brown.
