- In a large resealable plastic bag, combine the broth, oil, vinegar, soy sauce Worcestershire sauce, herbs and pepper; add the sausage, peppers, onion and mushrooms. Seal bag and turn to coat; refrigerate for at least 2 hours. , Drain marinade, reserving 1/2 cup. In a large nonstick skillet, cook sausage and vegetables in reserved marinade for 9-11 minutes or until sausage is heated through and vegetables are tender. Spoon sausage mixture over half of each tortilla; top with sour cream and tomato. Fold over.

- 1. Keep sausage warm until ready to serve. Cut into 4 pieces, and slice those in half length-wise to fit tortillas.
- 2. Heat oil in a medium skillet on medium low heat. Add bell pepper and onion slices.
- 3. Add spices and cook veggies until tender.
- 4. On a warmed flour tortilla add sausage slices, peppers and onions, cheese and any other toppings such as sliced avocado, tomato, and peppers. Drizzle ranch, bbq sauce, and mustard over fajita. Enjoy!
GRILLED STEAK FAIJTAS
These Grilled Steak Fajitas are the perfect departure from burgers and hot dogs for simmer grilling. Marinated in the morning, throw on the grill with a medley of bell peppers and onions, and serve in charred tortillas with all your favorite fixings.

- Add flank steak to a large plastic ziplock bag. Add lime juice, 1/4 cup olive oil, chili powder, cumin, garlic powder, and cayenne to the bag as well. Zip up. Massage marinade into meat. Refrigerate for at least 2 hours and up to 8.
- Preheat the grill to a high heat - about 450 degrees. Place a grill pan or sheet on one side of the grill. Once the steak has marinated, remove and sprinkle with 1 1/2 teaspoons of salt on both sides. Add the peppers and onions to a medium bowl. Toss with remaining 2 tablespoons olive oil. Season with remaining 1/2 teaspoon salt and a little bit of pepper.
- Add the pepper to the grill. Cook for 3-4 minutes and then add steak on the uncovered side of the grill. Use tongs to toss the peppers. Close the grill. Let the steak cook for about 4 minutes. Use tongs to flip the steak over. Toss the peppers again. If they are charred enough, remove from the grill.
- Cook the steak another 3-4 minutes or until it reaches your desired doneness. (For skirt steak you really want medium-rare to medium which is an internal temperature of 140-145 degrees. It will increase 5 degrees as it rests. Remove the steak and peppers from the grill. Let the steak rest for 10 minutes.
- Use a sharp knife to cut the steak against the grain into thin slices. Serve in warm tortillas with your favorite toppings.

- Prepare your grill for indirect cooking, creating a zone of direct high heat & a second zone of indirect heat. If using a gas grill, begin preheating at least 15 minutes before grilling. If using charcoal, light the charcoal at least 30 minutes prior to grilling. (To learn more about zone grilling, be sure to check out this post.)
- Once the grill is hot, place the sausage directly on the indirect heat side of the grill, arranging the sausage as close to the direct heat as possible without being directly over the flame. Close the lid & cook for 4-5 minutes. The heat from the direct heat side of the grill will circulate around the sausage, cooking them with really gentle indirect heat. After 4-5 minutes, flip the sausage, & cook over indirect heat for another 4-5 minutes, or until an instant-read thermometer inserted in the center of the sausage registers a temperature of 150 degrees F.
- Transfer the sausage to the direct heat. Grill 2-3 minutes per side, until charred as desired & the internal temperature reaches 160 degrees F. Transfer to a plate to rest & cool slightly before serving.

REVERSE SEARED STEAK FAJITAS
These easy steak fajitas are reverse seared before getting blasted with heat in a cast-iron pan along with some peppers and onions to make the best fajitas you've ever had.

- Preheat your pellet grill to 225°, following factory instructions.
- Season your steak with the salt, pepper, and chili lime seasoning. If you don't have that, you should use your favorite taco seasoning.
- Place the steak on the grill and let it cook for 30-45 minutes, or until the internal temp reaches about 120°.
- Remove from the grill and let rest for 10-15 minutes.
- In a large cast-iron skillet, preheat 1 tablespoon of oil over high heat. While the meat is resting, quickly saute your peppers and onions, and set aside.
- Slice your steak into strips across the grain. Add the other tablespoon of oil to the pan and let it get hot.
- Toss in your steak and quickly sear it for 1-2 minutes.
- Remove from the pan and serve with the peppers and onions and any garnishes and toppings you'd like.

I took someone else's recipe and made it into this. My husband loved it, couldn't get over how easy it was to prepare and cook.

- 1. Chop the potatoes, sausage. Slice the peppers, onions, and chicken. Place all of the ingredients in a large bowl, coat well with the olive oil.
- 2. Place the ingredients either in a greased 9 x 13 baking pan, or a large greased baking sheet. Sprinkle the fajita mix all over. Bake at 400 degrees for 30 to 35 minutes.
- 3. You can warm the tortillas in a non stick pan, for a minute on each side. I add sour cream and salsa to my fajitas. You can add or take away what you don't like. This recipe is very versatile.
