DILL FLAKEY BREAD

Dill Flakey Bread image

Provided by Molly Yeh

Categories     side-dish

Time 2h

Yield 6 servings

Number Of Ingredients 8

1 1/2 cups all-purpose flour, plus more for dusting
3/4 cup pastry flour
2 teaspoons sugar
1 1/2 teaspoons salt
1 teaspoon baking powder
Oil, for greasing the bowl
3/4 cup (12 tablespoons) butter, very soft
1 cup chopped fresh dill

Steps:

  • In a large bowl, combine the flour, pastry flour, sugar, salt and baking powder. Create a well in the center and add 3/4 cup water. Mix until you have a shaggy dough.
  • Turn the dough out onto a floured surface and knead, adding additional flour as needed, until smooth, 5 to 7 minutes. Transfer the dough to an oiled bowl, cover with plastic wrap and rest for 30 minutes.
  • Turn the dough out onto a work surface and divide into 6 balls. Keep them covered with plastic wrap when you're not working with them. Using your hands, spread 1 tablespoon butter on a large work surface, top one of the balls of dough with another tablespoon of butter and pat out into a flat circle. Put the buttered dough ball on top of the spot of butter on the work surface. Using a flat hand, gently massage the dough in circular motions (as if you're washing a window) to flatten it out into a very large translucent circle. It's ok if it tears and is not perfect just try to get it as thin as possible!
  • Top with a sprinkling of the dill and then roll it out into a long, skinny log. Roll the log into a coil and transfer to a plate. Repeat with the remaining dough.
  • Roll out the coils into 7-inch-round circles by placing them between two pieces of wax paper and flattening with a rolling pin. The dough will probably want to stick to the wax paper, but it's ok if it tears while you're peeling it off. Alternatively, you can stick the rolled-out coils in the fridge for about 30 minutes, which will make them slightly easier to handle.
  • Heat a large skillet over medium heat and cook one at a time until golden brown, about 3 minutes per side. Serve hot!

DILLY ROLLS

Dilly Rolls image

I have had this recipe a long time. I found it in an old Taste of Home magazine years ago. One of my kids likes to add ham to his roll for a quick sandwich. These have a lot of dill. If you are not a dill fan - feel free to cut back. Cooking time includes rising times for the dough. Prep time is approximate.

THE ULTIMATE DINNER ROLLS RECIPE BY TASTY

The Ultimate Dinner Rolls Recipe by Tasty image

Sometimes, the best part of a home-cooked dinner is the simplest part. That's right, we're talking about rolls: buttery and flaky, they capture all things right about freshly-baked bread. Sure, bread baking can seem scary at first, but fear not: with our easy guide, you'll be making some of the best dinner rolls around. Pair 'em with any meal and you've got yourself a winner.

Provided by Pierce Abernathy

Categories     Appetizers

Yield 16 servings

Number Of Ingredients 10

1 cup whole milk
½ cup warm water
¼ cup unsalted butter, melted
¼ cup sugar
2 ¼ teaspoons active dry yeast, 1 packet
4 cups all-purpose flour, plus more for dusting
1 ½ teaspoons kosher salt
2 large eggs, room temperature
neutral oil, for greasing
sea salt, for sprinkling

Steps:

  • In a liquid measuring cup or small bowl, combine the warm milk, warm water, melted butter, and sugar.
  • Sprinkle the yeast evenly over the wet ingredients, stir to combine, and let stand for 5 minutes, until foamy
  • In a large bowl, combine the flour and salt, and stir to combine. Beat 1 egg, then add to the bloomed yeast mixture. Pour the wet ingredients into the flour and use a knife to stir until the mixture just comes together and forms a dough. Turn the dough out onto a lightly floured surface and knead for 5-10 minutes, or until the dough becomes smooth. Add more flour as needed to keep the dough from sticking. To test if it's done, tear off a small piece of dough and stretch into a thin layer. If the dough doesn't rip, it's ready. Or, press a finger into the dough to see if it bounces back.
  • Lightly grease a large glass bowl with oil. Add the dough, cover with plastic wrap, and let rest for 1 hour, or until doubled in size.
  • Punch down the dough, then turn out onto a floured surface. Knead for a few more minutes, just until the dough is smooth, about 2 minutes.
  • Divide the dough into 16 equal balls, roughly the size of tangerines.
  • Knead the balls, gathering the edges of the dough toward the center to make a taut, round ball with a smooth top.
  • Place the rolls on a parchment paper-lined baking sheet. Cover with plastic wrap and let rise for 30 minutes.
  • Preheat the oven to 375˚F (190˚C).
  • Beat the remaining egg in a small bowl. Uncover the rolls and brush with the egg wash. Lightly sprinkle the rolls with sea salt.
  • Bake for 25-30 minutes, or until the rolls have lightly browned and doubled in size.
  • Enjoy!

  • Gently heat milk until warm to the touch (an instant-read thermometer should register 120°–130°). Add sugar and yeast and whisk to combine. Add buttermilk; let sit until yeast starts to foam, 5–10 minutes.
  • Combine onion, fresh dill, dill seeds, salt, and 2½ cups flour in a large bowl. Stir in milk mixture and 2 Tbsp. butter, adding more flour as needed (dough will initially be fairly wet), until a sticky dough forms. Turn out onto a lightly floured surface and knead until dough is smooth and elastic, about 5 minutes.
  • Transfer dough to a lightly buttered bowl and cover with plastic wrap. Let rise in a warm, draft-free area until doubled in size, about 1 hour. Punch down dough and let rise until doubled again, about 1 hour. Punch down dough, and, using a pastry scraper, divide into 12 pieces.
  • Line a baking sheet with parchment paper and lightly butter top. Cupping your hand over and using your palm, roll each piece of dough on work surface into a ball and place on prepared baking sheet, spacing at least 2” apart (you need to leave enough room so that they’re not touching after they’ve risen). Brush tops with remaining 2 Tbsp. butter and cover loosely with plastic wrap; let rise until doubled in size, 20–30 minutes.
