CREAMY AVOCADO DRESSING
Recipe video above. This is a dressing that uses avocado to make it creamy, rather than mayonnaise or loads of oil. It doesn't taste very avocado-ey because avocados are dense so it needs to be thinned out to make it pourable as a dressing. Rather, think of the avocado as the better-for-you means to get a creamy dressing fix!Excellent use for avocados that are a bit overripe or with brown spotty bits. Use as dressing for all your favourite salads. Particularly good salads that call for Ranch, Caesar or other mayo-rich dressings.Makes 1 1/4 cups - enough for a side salad for 6 to 8 (depending on how much you use!)

Steps:
- Place all ingredients into a Nutribullet or small food processor and blitz until smooth. (Inc Extra Flavouring Options)
- Use water to thin to just pourable consistency (so it's not super gloopy and thick).
- Taste and add the following to taste: salt, pepper, lemon, oil. Use as salad dressing!
- Keeps 3 days in the fridge without going brown. See Note 3 for how to keep even longer!

CREAMY AVOCADO WASABI DRESSING
This is a nice, tangy dressing, and also makes a good topping for crab cakes! Prep time includes refrigeration.

Steps:
- Puree all ingredients together well, adding sake or other dry white wine to the desired consistency, then chill for at least 1 hour.
- Serve as dressing.
- Also good with crab cakes!
- Note: make sure to use a fully ripe avocado for this recipe! It needs to be ripe and rich - Californian (Haas or Gwen) avocados have a buttery and richer flavor than avocados from Florida or other areas. Otherwise your dressing will come out tasting a little flat.

CREAMY AVOCADO SALAD DRESSING
Healthy avocados make this vinagrette based dressing creamy! Wonderful on green salads, or as a dip for crudite. Change up the flavor by using a different vinegar, or lime juice instead of lemon. Try it tossed with cooked quinoa or bulgur for an easy grain salad. Serving is 2 tablespoons.

- Scoop the avocado flesh into the bowl of a food processor. Add the garlic clove and lemon juice and process until coarse.
- Add the vinegar and process until the mixture begins to look smooth. Gradually add the olive oil and mix until totally smooth. The texture can be thinned by adding a few tablespoons of water, if desired.
- Season the dressing to taste with salt and pepper, and transfer it to a storage container. The dressing will keep for up to three days in a sealed container in the refrigerator.

- Place all ingredients except the olive oil in a blender (I personally use a stand up stick model in a bowl). As you begin to blend, slowly pour in olive oil to desired consistency. If you like it tangy, you may wish to add more vinegar if you like it thinner you may want to use more olive oil. Add salt to taste.
- If you want it spicy, add a serrano or jalapeno pepper(s). Anyone that knows me or my recipes knows that I adore garlic, spice and vinegar so my taste may be stronger than yours for these items, adjust accordingly.
- This is an excellent dressing for any salad but is exceptionally good on a grilled chicken southwestern salad. Also good in place of cocktail sauce for a change to shrimp cocktails.
