Smoked Salmon and Cream Cheese Cucumber Bites! Perfect for Easter or Mother's Day!

Steps:
- Peel cucumbers and slice them into 1" circles. Arrange on a platter as desired. Place in the refrigerator while preparing the cream cheese.
- Place cream cheese, dill, horseradish, and cream in a large bowl. Beat until well combined (a handheld mixer really helps here.)
- Spread 1 teaspoon of cream cheese on top each cucumber slice (more or less to taste), then top each slice with a bite sized piece of smoked salmon. Insert a toothpick down the center to keep in place.
- Serve at once, or keep in the refrigerator until needed.

Steps:
- Cut the cucumber on the diagonal into slices about 0.5-1cm thick. Twist the strips of salmon around the cucumber slices, then arrange on a serving plate.

SALMON CUCUMBER BITES WITH AVOCADO PEA SMASH
Healthy Smoked Salmon and Cucumber Bites with Avocado Pea Smash. An easy and tasty appetizer.

- First make the avocado and pea smash. If you are using frozen peas then place in a bowl of hot water for 20 minutes to defrost, drain off any excess water.
- Add the lemon juice, olive oil, crushed garlic, salt and pepper, mash with a fork until the peas are crushed fairy well. Add the avocado and further mash with a fork until the mixture is the consistency you desire. I like mine a little bit lumpy. Taste and add more salt and pepper if desired.
- Cut the cucumber into rounds. Place a spoonful of the avocado and pea smash onto each cucumber round.
- Chop the smoked salmon or pull apart into small pieces. Place a small amount on top of the pea and avocado smash.
- Top each bite with fresh chives and a tiny squeeze of lemon and freshly ground black pepper as desired.
- Keep in the fridge until ready to serve.

- Cut 18 rounds from cucumber (about 1/4 inch thick) and save any leftover for another use. Top each round with a thin slice of salmon cut to fit. Drizzle a little lemon juice over the salmon, then season with salt and pepper.
- Place avocado, sour cream, 1 teaspoon pf lemon juice, salt, pepper, and cayenne pepper in a food processor and process until smooth and blended.

- Make pumpernickel crust:
- Preheat oven to 350°F.
- Finely grind bread in a food processor, then pulse with butter and salt until combined. Press crumbs onto bottom of a 9-inch square metal baking pan and bake in middle of oven until top is crisp, 12 to 15 minutes. Cool crust completely in pan on a rack.
- Make filling:
- Bring a 4-quart heavy saucepan three-fourths full of salted water to a simmer, then poach fresh salmon until just cooked through, about 10 minutes. Transfer with a slotted spoon to a plate to cool. Scrape off and discard all brown flesh and finely chop remaining poached salmon, transferring to a large bowl.
- Remove any brown flesh from smoked salmon. Finely chop smoked salmon and stir into poached salmon along with butter, shallot, and lemon juice.
- Beat cream in another bowl with an electric mixer until it holds soft peaks, then fold into salmon. Spoon salmon filling over pumpernickel crust, smoothing top.
- Toss cucumber with dill, then scatter evenly over salmon filling, pressing slightly to help adhere. Chill, covered with plastic wrap, until firm, at least 8 hours.
- Cut into 36 squares and serve cold or at room temperature.

- Lay out the toast slices and divide the smoked salmon equally among the pieces. Place the cucumber slices on top of the smoked salmon, sprinkle with the lemon juice and serve.
